Hot Chocolate Cookies are a chewy, chocolate cookie that is flavored with Hot Chocolate powder! The extra semi sweet chocolate chips and mini marshmallows create the whole hot cocoa experience right in the palm of your hand! These cookies are the perfect addition to your Christmas Cookie list!

Hot Chocolate Cookies

butter

sugar

brown sugar

Preheat the oven to 350°.

Cream together the butter, both sugars, eggs and vanilla.

In a separate bowl, sift together the flour, hot chocolate mix, salt and baking soda.

Mix the dry ingredients with the creamed mixture. Mix well.

Fold the chocolate chips and mini marshmallows into the cookie dough.

Scoop onto a greased cookie sheet.

Bake at 350° for 9-11 minutes or until the tops are no longer glossy.

Cool on the pan. Store in an airtight container for up to 3 days.

Hot cocoa but in cookie form make for the perfect holiday treat and chocolate fix. The chocolate cookie with gooey marshmallow in the middle is the ultimate indulgement.

butter (browned)

chocolate packet

cornstarch

tbsp baking soda

10 oz bag of marshmallows

flaky sea salt (optional)

Preheat your oven to 350°F and line you’re baking sheet with parchment paper.

In a sauce pan over medium high heat, add your butter and let melt. Once it&#39;s melted keep it on the heat and let it cook for 5-10 minutes until it foams up and then turns brown. Let cool.

In a large bowl, add your butter and sugars, and whisk until combined. Add your eggs and vanillas and whisk again until fluffy and nearly foamy.

Next, add your cocoa powder, flour, corn starch, baking soda, salt, and hot chocolate packet, and fold until just combined. Add your chocolate chips.

Scoop out your cookie dough into 1 inch balls, flatten it out and add one marshmallow. Wrap your dough around the marshmallow. (It’s ok if a little bit of the marshmallow is peaking out.) Continue with the rest of your dough and marshmallows.

Place your cookie dough ball on your baking sheet a few inches apart and bake in the oven at 350°F for 8 to 10 minutes. Don’t overbake as your marshmallows could burn easily.

Remove from oven, top with flaky sea salt, let set, share, and enjoy!!

Preheat the oven to 350 degrees F.

In a large bowl, combine all ingredients.

Roll dough into ~1 inch balls. Gently press down with a small glass or the palm of your hand to flatten slightly.

Bake for 12-14 minutes.

Cool on pan for 3-4 minutes. Remove to wire rack to cool completely.

In a medium sized bowl, melt the butter and chocolate stirring every 15 seconds. Once melted, set aside.

In another medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In a large mixing bowl, beat the sugar, eggs, and vanilla on low speed with an electric mixer until well combined. Add the cooled chocolate and blend until just combined.

While mixing, add the flour mixture slowly, a cup at a time. Scrape the edges of the bowl as you go. Cover and refrigerate for 1 hour. The dough should be firm.

Preheat the oven to 325° and line two large baking sheets with parchment paper.

Grab a tablespoon-size of dough and roll into a ball, or using a cookie dough scooper, scoop a tablespoon worth. Flatten the dough ball out slightly with the bottom of a glass and place onto the baking sheet about 2 inches apart.

Bake the cookies for 9-11 minutes.

While the cookies are baking, cut the marshmallows in half crosswise. (Kitchen scissors are great for this.) Remove the cookies from the oven and place one half of the marshmallows, sticky side down, in the middle of the cookies.

Return the cookies to the oven and bake for another 2 minutes. Remove cookies and allow the cookies to cool for a few minutes and then transfer to a wire cooling rack.

Combine confectioners sugar, cocoa powder, butter, water, and vanilla in a medium-sized mixing bowl and combine with a whisk.

Place the cooling rack with cookies on a baking sheet to catch any excess icing. Spoon a small amount of icing onto the top of each marshmallow and use the back of the spoon to spread it over the cookie. Top each cookie with sprinkles as you go - before the icing hardens.

Let them sit and the icing harden for around 30 minutes before serving.

Preheat oven to 375˚F.

In a large bowl, cream together the butter and sugars. Then, mix in the eggs and vanilla extract.

Add in the flour, hot cocoa mix, cocoa powder, salt, baking soda, and baking powder. Mix until fully incorporated.

Stir in the chocolate chips and marshmallow bits.

Scoop with a medium cookie scoop (about 2 tablespoons)2 inches apart onto an ungreased baking sheet. Use extra marshmallow bits and chocolate chips to garnish the top (optional, but makes them pretty!)

Bake for 9-11 minutes or until edges are crisp and center is set.Optional for bakery style: Immediately after you take them out of the oven, turn a glass upside down and roll around the edges to make the cookie perfectly round with defined edges.

Let cool 2 minutes, then transfer them to a wire cooling rack to finish cooling.

Low calorie hot chocolate cookies

g applesauce

g 0 calorie brown sugar

olive oil

g plain or all-purpose flour

g cocoa powder

½ tsp baking soda

g (3 large) marshmallows

Pre-heat oven to 180ºC (350ºF). Line a baking sheet with parchment paper and set aside.

In a medium bowl, whisk together the applesauce, 0 calorie brown sugar, olive oil and vanilla extract until smooth and well combined.

Add in the flour, cocoa powder and baking soda and fold in ensuring everything is well incorporated.

Divide the dough equally between 3 cookies, flatten each dough ball in between your palms, place one marshmallow in the centre and roll the dough into a ball.

Top with the chocolate chips and place the cookies on the prepared baking sheet. Bake for 8-10 minutes.

Allow them to cool on the sheet for a few minutes before transferring to a cooling rack to cool completely. Enjoy!

(4½ oz/128 g) bittersweet chocolate (, chopped)

(5 oz/142 g) all-purpose flour

(3 oz/85 g) butter (, softened)

(6 oz/170 g) dark brown sugar

In a heat-proof bowl, add the chopped chocolate and melt gently in the microwave or over a pot of simmering water (bain marie). Set aside to cool.

In a large bowl, sieve together the flour, cocoa powder, baking soda and salt. Set aside.

Using a stand mixer fitted with a whisk attachment (or using a handheld electric mixer) cream the butter and brown sugar on medium-high speed until light and fluffy, about 3 minutes.

Whisk in your cooled melted chocolate. Add the egg and vanilla into the butter and sugar mixture and mix on medium speed until well combined.

With the mixer on low, add in your dry ingredients and chocolate chips and mix until incorporated. Cover and chill your dough in the fridge for at least 30 minutes to firm up.

To Make the Hot Chocolate Cookie Dough

Preheat your oven to 350°F (180°C). Line 2 baking sheets and set aside.

Scoop using a rounded 1 tablespoon measure and place on your prepared trays leaving at least 2 inches (5 cm) of space between each cookie.

Bake your cookies for 8 - 9 minutes one tray at a time. Take care not to over bake as you want these cookies to be almost brownie-like.

Once baked, pop a marshmallow on top of each cookie and put them back in the oven on broil for 1-2 minutes for a lovely toasted effect. Allow to cool completely before enjoying.

These cookies are best enjoyed fresh. Store any leftovers in an airtight container at room temperature for up to 2 days.

Recipe does not replicate as written. Cookies spread more than demonstrated, and mallows burned long before melting flat. Changes need to be made to make the recipe more successful for the home baker.

Hot Chocolate & Toasted Marshmallow Cookies

INGREDIENTS (Yields 30)
3/4 cup (125g/4 1/2 oz) Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips 
1 cup (125g/4 1/2oz) plain flour/ a.p flour
1 tablespoon (25g/1oz) Ghirardelli Unsweetened Cocoa Powder
1⁄2 teaspoon baking soda
1⁄4 teaspoon salt
6 tablespoon (85g /3oz) butter, softened
1 cup (175g/6oz) soft brown sugar
2 small eggs
1 teaspoon vanilla extract (optional) 
2 1/4 (350g) cups dark chocolate chips
16 Marshmallows

INSTRUCTIONS
1. Melt the chocolate gently in the microwave or over a pot of simmering water (bain marie). Set aside to cool.
2. Sift all of your dry ingredients together in a bowl and stir together.
3. Beat the butter and sugar together until thick and creamy.
4. Beat in your eggs one by one.
5. Add in your cooled melted chocolate and vanilla extract. Continue beating until your ingredients are well mixed.
6. To this mix, fold in your dry ingredients and the chocolate chips and mix until combined.
7. Scoop your cookie with a 1 tablespoon scoop (if the mix is soft you can pop it in the fridge to stiffen up and this will make it easier to scoop).
8. Bake at 350°F/180°C for 8 - 9 minutes. Take care not to over bake as you want these cookies to be almost brownie-like.
9. Once baked, pop a marshmallow on top and put it back in the oven on broil for 1-2 minutes for a lovely toasted effect.
