Creamy, cheesy Crack Chicken Lasagna! Your family will come running for this easy casserole with ranch seasoning, bacon and rotisserie chicken.

Why We Love This Chicken Lasagna:
This recipe has quickly become a classic in our house because:
It’s extra cheesy. A triple cheese threat! Cream cheese, mozzarella cheese and sharp cheddar cheese.
It uses rotisserie chicken. I’ve become quite accustomed to picking up a rotisserie chicken when I smell their amazing aroma in the grocery store. They are perfect for easy casseroles and quick dinners.
The sauce base is evaporated milk. This means it won’t use up all of your breakfast cereal milk for dinner the night before. Evaporated milk is great to keep on hand for casseroles.
And you’ll love this too: Make the lasagna up in the morning and heat it through when you’re ready to serve.

Beef Taco Hotdish

½ medium onion, diced

small bell pepper, diced

zucchini,

garlic,

Tbsp. homemade taco seasoning (or store-bought)

tomatoes

tomato paste

beef broth

corn

black beans, drained and rinsed

rice

½ cups (6 ounces) shredded cheddar or Monterey jack cheese, divided

Salsa,

Grease (or spray) and a 9×13-inch baking dish and set aside.

Place a large skillet or Dutch oven over medium-high heat. When the pan is hot, add the ground beef, onion, and bell pepper. Cook until beef is just barely pink and onions and peppers have softened. About 8 minutes.

Add zucchini, garlic, and taco seasoning. Stir and cook an additional 3-4 minutes or until zucchini is just tender.

Remove from heat and drain excess fat from beef mixture if there is quite a bit. Transfer the meat and veggie mixture to the greased baking dish.

Add the diced tomatoes, tomato paste, beef broth, drained beans, corn, rice, and ½ cup shredded cheese to the baking dish and stir to combine.

Cover the baking dish with foil and bake for 50-65 minutes or until the rice is tender. Be sure to test the recipe for tenderness and add additional time if needed. Remove the foil and sprinkle remaining cheese over the top and continue to bake for 5-10 minutes or until the cheese is bubbly.

Allow the hot dish to stand for 5 minutes before serving with toppings of choice.

This was delicious and super easy to make. I will definitely make this again!

Delicious. We will make it again, the zucchini adds alot of good texture. It did take all of 60 mins for the rice to fully cook .

Any night of the week can become ‘Taco Tuesday’ when you’re serving up this delicious (and budget-friendly) Healthy Taco Hot Dish! All the best taco flavors combined into one cozy hot dish.

Healthy Taco Hot Dish

Hatch Chile Tater Tot Hotdish

peas, drained

corn, drained

French Style Green Beans, drained

Veg-All, drained

Roasted Hatch Chiles, chopped

Cream of Mushroom Soup

Soy Sauce

tater tots

shredded cheese

Kickin’ Creole Tater Tot Casserole

chuck

Preheat the oven to 375°F and lightly spray a 9x13-inch baking dish with nonstick cooking spray. Brown meat and onion together in a large skillet over medium-high heat. Drain off fat.

Return meat to the skillet over low heat and add ketchup, Worcestershire, Tony Chachere’s Original Creole Seasoning, mushroom soup, and drained tomatoes and chilies. Stir to combine and allow to heat through. Spread evenly into the prepared dish. Top with pepper jack cheese.

Cover top of mixture with tater tots. Sprinkle a little more Tony Chachere’s Original Creole Seasoning over the top of the tots.

Bake uncovered for 30 minutes or until tater tots are browned and heated through. (If the tots aren't cripsy to your liking, a few minutes under the broiler should crisp them right up.)

The absolute best Tater Tot Hotdish!! Made completely from scratch without canned soup! Full of flavor and loaded with seasoned ground beef, vegetables, lots of homemade cream sauce, crispy tater tots, and cheddar cheese! Cozy and easy dinner that's loved by all!

From-Scratch Tater Tot Hotdish

black pepper

soy sauce

worcestershire sauce

dry onion soup and dip mix

green beans

cheddar cheese (shredded (8 ounce block))

chicken broth

milk ((whole

all-purpose flour

Worcestershire

onion powder

Preheat oven to 375°F.

To a skillet over medium-high heat, add the ground beef and onion and season with salt and pepper. Cook for about 8-10 minutes until the beef is no longer pink. Mix in the Worcestershire, soy sauce, and dry onion soup mix. Evenly spread the beef into a 9x13 inch baking dish

Add the frozen green beans and corn over the beef in an even layer.

Using the same skillet or small saucepan, bring chicken broth to a light boil over medium-high heat. In a bowl, whisk together the milk, flour salt, pepper, garlic powder, onion powder, Worcestershire, and soy sauce until combined. While whisking, slowly pour the mixture into the boiling chicken broth until combined and thickened, about 1-2 minutes.

Pour the sauce over the vegetables in baking dish, and lighlty mix together the beef, vegetables and sauce. You want to mostly keep the layers, but help some of the sauce reach the meat layer.

Spread frozen tater tots over the top of the sauce.

Cover with tinfoil and bake for about 45 minutes, until bubbling around the edges. Remove the tinfoil and sprinkle the cheese over the top. Bake an additional 10-15 minutes uncovered until the cheese is melted and tater tots are crispy.

This turned out great. I added 1/2 hot sausage to spice it up. It came out salty so I would skip adding salt next time. Adding cheese on top of the tater tots took away the crispness so will just mix it in the vegetables an not layer it.

I’m very sorry but this dish is so bland. I followed the recipe exactly and it just has no flavor.

Unless you have fresh vegetables year round, frozen is the best alternative. Flash freezing them fresh doesn't do much of anything to the nutritional value, and if you think it does, you have been lied to.

Just shut up and go to a fancier food blog if you need something like that. Maybe start your own if you have so many ideas? Seriously.

This is a great recipe. I had left over mushroom gravy from our vegetarian Thanksgiving dinner. The recipe I use for the gravy is similar but also calls for some dry white wine in it as well- This is a great addition to the cream soup base if you are making homemade. I chop the mushrooms finely so the non mushroom eaters don't even know they are there. For the hot dish, I add diced fresh carrots and onion, the only frozen item I used was the peas. I am not a real fan of peas, but this is a must in this recipe. I did not add the beans or the meat, but did add the corn. You could use a meat alternative if you eat vegetarian but I really don't think it is necessary. The only other addition was some chopped fresh parsley. Truly a wonderful hotdish. My husband who refuses to eat mushrooms said this was the best tater tot hot dish he has ever had. I have to agree. You have an amazing recipe. Thank you for sharing.
