Berry Meringue Ice Cream Pie

250 g (½lb) oat cookies (crushed)

tbsp butter

salt

vanilla ice cream (softened)

berry sauce

berries (chopped)

meringue (roughly chopped)

Mix the crushed oat cookies, butter and salt together.

Press into the bottom of a springform cake pan. Place into the freezer and allow to set for 10 minutes. 

Place the softened ice cream into a large mixing bowl. Add the berry sauce, chopped berries and meringue.

Fold together, taking care not to mix the sauce in completely to allow a marbled look. 

Press a piece of parchment paper onto the surface of the pie.

Place the pie in the freezer and allow to freeze for at least 2 hours but up to 2 months. 

When ready to serve, remove the pie from the freezer. Top with whipped cream, meringues and berries. Slice and serve. 

Chocolate Chip Cookie Dough Ice Cream Pie is an easy to make, no bake dessert recipe that is so tasty! This ice cream pie is made with an Oreo crust, no churn vanilla ice cream filled with edible cookie dough and mini chocolate chips! 

Chocolate Chip Cookie Dough Ice Cream Pie

tbsp (84 grams) butter, room temperature

(75 grams) packed dark brown sugar

tbsp (26 grams) sugar

tsp vanilla extract

(130 grams) all purpose flour, toasted

tsp salt

tsp milk

(56 grams) mini chocolate chips

tbsp (56 grams) butter, melted (salted or unsalted is fine)

oz cream cheese, room temperature

(52 grams) sugar

(56 grams) packed dark brown sugar

tbsp milk

heavy whipping cream, cold

(58 grams) powdered sugar

cup (85 grams) mini chocolate chips, divided

(180 milliliters) heavy whipping cream, cold

(29 grams) powdered sugar

tbsp (14 grams) natural unsweetened cocoa powder

Add the butter, brown sugar and sugar to a large mixer bowl and beat together until light and fluffy.

2. Add the vanilla extract and mix until well combined.

3. Add the flour and salt and mix until well combined.

4. Add the milk to help the cookie dough come together, then stir in the mini chocolate chips. Add additional milk, if needed to help everything come together.

5. Make balls of cookie dough that are about the size of chickpeas. Set them in the freezer to freeze.
MAKE THE PIE CRUST:
6. Add the Oreos to a food processor or blender and grind into fine crumbs. You do not need to remove the filling from the Oreos.

7. Add the Oreo crumbs to a bowl and combined with the melted butter.

8. Pour the mixture into a 9 or 10 inch pie pan (I like to grease mine to ensure no sticking) and press into an even layer on the bottom and up the sides.

9. Put the crust in the freezer while you make the filling.
MAKE THE PIE FILLING:
10. In a large mixer bowl, beat the cream cheese, sugar and brown sugar until well combined and smooth.
11. Add the milk and vanilla extract and mix until well combined and smooth. Set mixture aside.
12. In another large mixer bowl, add the heavy whipping cream and powdered sugar. Whip on high speed until stiff peaks form.
13. Add about half of the whipped cream to the cream cheese mixture and gently fold to combine.
14. Add the rest of the whipped cream to the cream cheese mixture and gently fold to combine.
15. Stir in a 1/4 cup of  the mini chocolate chips and about half of the frozen cookie dough balls.
16. Pour the filling into the pie crust and spread evenly. Freeze the pie until firm, 4-5 hours or overnight.
17. To finish off the pie, make the whipped cream topping. Add everything to a large mixer bowl and whip on high speed until stiff peaks form.
18. Pipe swirls around the edge of the pie and finish it off with the remaining cookie dough balls and the final 1/4 cup of mini chocolate chips.
19. You can serve the pie right out of the freezer, or let it sit and soften for about 15 minutes before serving.

Turtle Ice Cream Pie

Oreo cookie crumbs

pecan pieces (toasted)

13.4 oz can dulce de leche

15 oz jar hot fudge ice cream topping

heavy cream (divided)

caramel swirl or salted caramel ice cream

oz frozen whipped topping (thawed)

Heat oven to 350°F.   Lightly spray the bottom of a 9-inch springform pan with cooking spray.

In a small bowl, mix cookie crumbs and butter. Press crumbs firmly onto bottom and 1/2-3/4 inch up sides of pan. Bake 8-10 minutes or just until set. Cool completely.

Spread pecans in a single layer on a baking sheet. While crust bakes, toast for 6-8 minutes or until fragrant. Set aside to cool.

In a microwave safe bowl, warm dulce de leche with 1/4 cup heavy cream, just until pourable.  Likewise, in a separate bowl, melt together hot fudge sauce with 1/4 cup cream in 20 second increments stopping to stir each time. Repeat until smooth. Both should be just warm enough to pour, not hot.

Assemble: Scoop 1/2 ice cream into cooled crust; spread evenly. Drizzle ice cream with 1/3 dulce de leche 1/3 cup hot fudge. Sprinkle with 1/3 cup pecans. Freeze 15 minutes or until ice cream is almost firm.

Repeat layers starting  with remaining caramel ice cream, 1/3 warmed dulce de leche, 1/3 hot fudge and 1/3 cup pecans. Return to the freezer. Reserve 1/3 caramel, 1/3 hot fudge and 1/3 pecans for serving. (Alternatively, you may opt to use 1/2 of each on 2 layers.)

Cover with plastic wrap and freeze for at least 8 hours or overnight.

Allow to sit on counter for 5-10 minutes,then remove outer ring. Slice into desired size pieces and serve drizzled with warm reserved dulce de leche, hot fudge and pecans.
