Made with fresh cucumbers, tomatoes, onions, herbs and spices, kachumber is the perfect salad or relish to serve with your Indian meal. Here I also share some amazing variations of this flavor packed recipe.

Kachumber (Indian Cucumber Salad)

red onion (medium or 2 shallots, peeled)

roma tomatoes (large)

English cucumber (organic

green chili (or

cilantro

lemon juice (fresh)

salt (adjust per taste)

black pepper

cayenne pepper (or red chili powder)

cumin

Avocado

Pomegranate Arils

Bell Pepper

Red Radish

Mint

Tamarind Paste (see note for this variation)

Rinse

Scrub and rinse all the vegetables and pat dry. Rinse herbs and spin in a salad spinner.

Prep

Choose the style of cut for vegetables — large dice, small dice, julienne, shred or using a spiralizer. (Read blog post above for more information.) Maintain the same size and style for all vegetables.

Cut all the onions, tomatoes and cucumber. Then transfer to a mixing bowl.

Combine

Add the green chilies, cilantro, lemon juice, salt, black pepper, cayenne pepper and cumin.

Serve

Toss well and adjust seasoning as per taste. Drain any juices released. Serve immediately.

This Indian Cucumber Salad, or Koshimbir, is a refreshing combination of cucumbers and peanuts with a few spices, making this the perfect summer salad!

Indian Cucumber &amp; Peanut Salad Kakadi chi Koshimbir

cucumbers (peeled)

Cilantro (chopped)

Spanish peanuts (chopped)

Kosher Salt

Sugar Or Other Sweetener Equivalent (Optional)

Black Mustard Seeds (or sub cumin seeds)

Turmeric

Lemon (juiced)

Chop up the cucumbers, cilantro, and peanuts into a very fine dice. I use my trusty Kuhn Rikon pull chop which I love and it works on all of these equally well.

Place into a bowl and season with salt and sugar.

In the smallest little heat proof bowl you have, heat the oil until it is hot and shimmering.

Place the mustard and/or cumin seeds and allow them to sputter like popcorn about 30 seconds.

Add in the turmeric and stir quickly.

Pour this hot, flavored oil over the cucumbers and mix well.

Squeeze lemon juice and mix once again and serve.

The easiest cucumber salad you can make under 15 mins. Delicious, fast and healthy! Goes well with any meal.

Indian Cucumber Salad

(250 grams) cucumber

coconut

salt

sugar ((optional

coriander leaves/ cilantro

lemon juice ((optional))

ghee (or oil)

cumin seeds

mustard seeds

curry leaves

green chili ((chopped/ slit sub with red chili flakes))

asafoetida (/ hing (optional))

Rinse and pat dry the cucumbers. If you want you may peel them. Chop finely and add to a bowl.

Pour ghee to a small pan/tadka pan and heat on a medium flame. Add the cumin and mustard seeds (optional). When they begin to sizzle and pop, add green chili and curry leaves, followed by hing.

Turn off, cool down slightly. If you want you may remove the chilies &amp; curry leaves with a spoon. Pour the tadka all over the chopped cucumbers &amp; mix well.

Do this when you are ready to serve – Stir in salt, sugar, lemon juice and coriander leaves.

Sprinkle crushed peanuts and serve Indian Cucumber Salad as a side.
