This colourful and delightful fruit-infused gin is easy to make and wonderful for shaking up (or stirring up?) your cocktail game.  Black or white currants can easily be used instead of red.

Red Currant Gin

3.5 oz red currants ((~1/2 cup, slightly mounded))

Combine gin and red currants in a mason jar or other tightly sealing container.

Use a spoon to gently mash the currants a little to help them release some juice, then set aside to infuse for 1 month, shaking every few days.

When the gin is ready to use, strain out the solids.  You may want to gently press against the leftover currants in order to extract all of the liquid.  Pour the finished gin through a strainer. I like to use a coarse strainer, followed by a very fine strainer in order to get a clearer final product.Store the gin in a mason jar or sealed bottle and use as you would any other gin.

Apple Cinnamon Infused Gin (Apple Pie Gin)

Cheesecloth coffee filter

Place the apple slices in a clean, 1 quart mason jar. Add the cinnamon stick. Pour in 1 ½ cups of a neutral-tasting gin. (I recommend Beefeater.)

Tightly cover the jar and set it aside in a cool place out of the sunlight.

After 2 days, remove and discard the cinnamon stick. Let the apples infuse for an additional 3-5 days.

When your infusion is ready, place a fine mesh sieve over a bowl, line the sieve with cheesecloth or a coffee filter, and pour the mixture through. Discard the apples.

Enjoy the gin!

This homemade gin is infused with fresh foraged juniper berries, white fir, and lots of winter herbs and spices. It&#039;s refreshing and aromatic, and a perfect winter foraging recipe. 

Homemade Infused Gin

Tbsp juniper berries (fresh

ml vodka (or other neutral spirit)

coriander seeds

tsp dried orange peel (or fresh orange zest)

white fir

allspice berry

sage leaf (fresh

California bay leaf

Put the juniper berries in a quart jar and pour the vodka in the jar. Cap the jar tightly and let it infuse for 12 hours or overnight.

After the 12 hour pre-soak, add the rest of the herbs and spices to the vodka.

Cap the jar again and let it sit to infuse for 36 more hours.

Strain the infused gin into another jar with a fine mesh sieve.

Store in a bottle or jar in a cool and dark place for up to one year.

I've been reading that some juniper varieties are toxic; Savin Juniper, to be specific.  is it safe to use any juniper berry for infusing vodka?

Otherwise I've enjoyed this very much!   no one has died from what i harvested from my Common juniper. :)
