This Instant Pot Barley and Vegetable Risotto is super easy to make thanks to the Instant Pot. But don&#x27;t let it&#x27;s simplicity fool you!

Instant Pot Barley and Vegetable Risotto

Tbsp Olive Oil

Yellow Onion (chopped)

Pearl Barley (uncooked)

Garlic Cloves (minced)

Vegetable Broth

oz White Mushrooms (sliced)

Large Red Bell Pepper (diced)

Salt

Baby Spinach (Packed)

Parmesan Cheese (grated)

tsp Ground Black Pepper

Press sauté, heat oil in instant pot. Add onion, cook and stir 3 minutes or until softened. Add barley and garlic.  Cook and stir 1 minute. Stir in broth, mushrooms, bell pepper and salt, mix well.

Secure lid and move pressure release valve to sealing position. Press Manual, cook at high pressure 18 minutes.

When cooking is complete, use natural release for 10 minutes, then release remaining pressure.

Stir in spinach, let stand 2 to 3 minutes or until spinach is wilted. Gently stir in cheese and black pepper.

This 20 minute instant pot barley is a delicious healthy grain dish to use for meal prep, to serve as a side dish or use in buddha bowls. It can be added to soup or used in barley salad.

Stir together barley, water, oil and salt in the insert of an instant pot.

Cover and set vent to sealed. Pressure cook on high for 20 minutes.

Carefully turn vent to quick release (or natural release if desired.) Remove lid and fluff with a fork. If there is excess moisture in the bottom of the instant pot insert, drain the cooked barley through a fine-mesh sieve.
