This Instant Pot broccoli is so fast, it's got a zero minute cook time! It comes out perfectly steamed in the pressure cooker.

Best Instant Pot Broccoli 

(2 large heads) broccoli

water

red onions, thinly sliced (or substitute green onion)

olive oil

salt

feta cheese (optional)

Chop the broccoli into florets. Add it to the Instant Pot with the water. Lock the lid of the Instant Pot. Place the pressure release handle (vent) in the “Sealing” position.

Cook on high pressure for 0 minutes

Press the Pressure Cook button, making sure the “High Pressure” setting is selected, and set the time of 0 minutes. Note that it takes about 5 minutes for the pot to “preheat” and come up to pressure. (Avoid touching the metal part of the lid.)

Meanwhile, very thinly slice the onion. Place it in a bowl of water while you’re making the rest of the recipe, then drain. (This helps to reduce onion breath and remove some of the spicy bite. If you use green onion, skip this step!)

Quick release

Once the timer beeps, vent the remaining steam from the Instant Pot by moving the pressure release handle to “Venting”, covering your hand with a towel or hot pad. Never put your hands or face near the vent when releasing steam. Open the pressure cooker lid.

Carefully remove the broccoli to a bowl. Toss with the olive oil, kosher salt, feta cheese (optional), and drained red onions.

Pressure Cooker Broccoli with Garlic

Chinese rice wine ((Optional))

Pressure Cook Broccoli: Pour in ½ cup of cold running tap water. Place a steamer rack into the pressure cooker. Place the broccoli florets onto the steamer rack. Lock the pressure cooker lid and pressure cook at Low Pressure for 0 minutes. Turn off the heat and do a quick release. Open the lid carefully.

Cool Broccoli: To stop the broccoli from cooking, quickly place the broccoli in an ice bath or place them under cold running tap water. Drain the water, set aside the broccoli to air dry.

*Optional Stir-fry Step: If you have a wok and don’t mind washing it, we recommend doing the Sauté Stir-fry the Garlic &amp; Broccoli Step with a wok on the stovetop over HIGH heat. The flavor will increase by threefold (estimated :P).

Prepare Pressure Cooker: Remove the hot water and towel dry the inner pot. Heat up your pressure cooker (Instant Pot: press Sauté button and click the adjust button to go to Sauté More function). Make sure your pot is as hot as it can be when you place the garlic into the pot (Instant Pot users: wait until the indicator says HOT).

Sauté Garlic &amp; Broccoli: Add 1 tablespoon of peanut oil into the pot. Ensure to coat the oil over the whole bottom of the pot. Add in the minced garlic, sauté the garlic for roughly 25 - 30 seconds. Do not let the garlic burn. Pour in the air dried broccoli and (optional) 1 tablespoon of rice wine and stir for 30 seconds. Season with fine sea salt to taste (We added ~ 1/6 teaspoon of salt). Stir it around for another 30 seconds. Done!
