Easy Sev Puri Chaat - Indian Potluck Appetizer

Puri (wheat crackers)

Bhel Sev ((thin gram noodles))

Bhel Chutney ((date and tamarind chutney))

Green Chutney

Chaat Masala

Salt

Potatoes ((boiled and mashed))

Onion ((chopped))

Cilantro ((for garnishing))

Pressure cook red potatoes in instant pot for 8 minutes on high pressure mode with pressure valve in sealing position.

Once done let the pressure release naturally for 10 minutes and then do a quick release.

Arrange the wheat crispies (puri) in a tray

On each crispy, put a teaspoonful of mashed potatoes, chopped onions, green and tamarind/date chutney. Sprinkle some salt and chaat masala.

Put some thin gram noodles (sev) and garnish with chopped cilantro and optionally with a few drops of lime juice

60 Phyllo cups ((4 pack, Athens brand))

Water

Potatoes ((medium size))

Mung beans ((rinsed))

Black chickpeas ((soaked for 6-8 hours))

Sweet Chutney ((date and tamarind chutney, to taste))

Green Chutney ((to taste))

tsp Chaat Masala

tbsp Pomegranate seeds ((for garnishing))

tbsp Cilantro ((chopped, for garnishing))

Place the mung beans and black chickpeas (discard the water used for soaking) in the instant pot liner.

Pour 2 cups of water into the liner.

Place a trivet inside the liner and put the potatoes on it.

Close and lock the lid.

Pressure cook on high-pressure mode for 12 minutes with the pressure release knob in the sealing position.

Discard the water and allow the beans and black chickpeas to cool down.

Peel and cube the potatoes into a small sizes.

In a mixing bowl, add the mung beans, black chickpeas, potatoes, and all the ingredients from the &quot;for the stuffing&quot; list.

Making the chaat filling

Bake the phyllo cups for 3-4 minutes at 350°F as per directions on the package.

Allow them to cool down a little.

In each phyllo cup, put a tablespoon of the filling.

Put some thin gram noodles (sev) and garnish with chopped cilantro and optionally with some pomegranate seeds.

Turn the Instant Pot on &quot;Saute&quot; mode and add the oil.

Once the oil is hot, add the tempering ingredients - mustard seeds, cumin seeds, curry leaves, green chilies, and peanuts and give a good mix.

Add the ginger garlic paste and onions, and saute for about a minute until cooked.

Add the tomatoes and all the spices and cook for a few minutes.

Add the soaked dried peas and give it a mix.

Add salt and water to cover the dried peas and deglaze the bottom of the pot with a spatula.

Select &quot;Cancel&quot; to come out of Saute mode.

Cook on &quot;High Pressure&quot; mode for 15 minutes followed by natural pressure release.

Making ragda in Instant pot

If using frozen samosa, cook them as per directions.

Take one samosa and break into two pieces.

Top it with generous amount of ragda (white peas curry), green chutney, sweet tamarind chutney, thin sev.

Sprinkle some chaat masala and optionally garnish with some cilantro leaves.
