Everything made in the Instant Pot! Delicious herb bread stuffing is rolled into tender seasoned chicken breasts. When it is done cooking you make the most delicious gravy in the Instant Pot. This is a great Thanksgiving style dinner that you can have any time of the year!

Chicken &amp; Stuffing with Gravy

yellow onion, diced

celery, chopped (about 2 stalks)

tbsp oil

store-bought herb bread stuffing mix (I like Peppridge Farms)

tsp each: ground sage and poultry seasoning

tsp salt

pepper

chicken stock

chicken breasts OR 2 large chicken breast cut in half lengthwise

seasoning: olive oil, salt, pepper, ground sage, poultry seasoning

Toothpicks

yellow onion, quartered

rosemary

tbsp flour

tbsp butter

salt & pepper

On the saute mode, add the oil to the pot and saute the celery and onions for about 5 minutes. Add the dressing bread mixture to the pot with the ground sage, poultry seasoning, salt, pepper and chicken broth. Stir the mixture just until the bread is moistened.

Turn the Instant Pot off.

Stuffing/Dressing

If you have large chicken breasts, split them in half lengthwise (horizontally), giving you 4 thinner chicken breast. Or you can buy 4 smaller/thinner sized chicken breasts.

Pound the chicken thin, about 1/4 inch thick. Don't worry if the chicken splits or has a hole, you can secure that later with toothpicks.

Season both sides of each chicken breast with olive oil, then sprinkle with salt, pepper, ground sage, and poultry seasoning.

Lay about 1/2 cup of stuffing in the widest part of the pounded chicken breast. Tightly roll the chicken over the stuffing (making sure the stuffing stays IN the chicken roll) and secure the seam with a toothpick or two.

If there is additional dressing left in the pot, scrape it out and either place it on the serving platter. It is okay if there are still browned bits on the bottom of the Instant Pot.

Pour 3 cups of chicken broth into the emptied Instant Pot. Add a fresh rosemary sprig, and half an onion that has been quartered.

Place the metal rack in the pot and add all the chicken rolls on the rack, seam side up. Close the pot and lock the pressure vent to seal.

Set the pot to "Meat/Stew" mode for 8 minutes.

At the end of 8 minutes do a quick release of pressure.

Pull the rack out of the pot and place the chicken rolls on the serving platter over the extra dressing.

Strain the solids from the broth (SAVING THE BROTH, DO NOT ACCIDENTALLY POUR DOWN THE DRAIN), set the broth aside and discard the solids.

On "normal" saute mode add the flour and butter to the pot, whisk together for 1 minute.&nbsp;Slowly add the broth back to the pot, a little at a time, while whisking. Let the gravy simmer for a few minutes until it is thickened. Taste for salt and pepper seasoning.

Pour the gravy over the chicken rolls or serve on the side.

Thanksgiving means Southern soul food, made by our grandmamas, mamas, and favorite aunties. A meal we’ve waited all year to eat!One Southern dish that you shouldn’t miss this Thanksgiving is Black folks chicken and dressing. 

Black Folks Chicken And Dressing

sugar (granulated (*can be omitted if you don't prefer cornbread sweet))

butter (unsalted)

oz cream cheese (whipped cream cheese)

oz heavy whipping cream

onion

celery (diced)

thyme (fresh

rosemary (fresh

sage (ground)

parsley (finely chopped)

chicken stock (or chicken broth)

salt

black pepper

egg (large)

oz chicken (skinless cooked chicken thighs,

Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter).

Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.

While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.

Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.

Pour the cornbread mixture into the skillet.

Bake at 350 degrees F. In the conventional oven for 20-25 minutes. Instant Pot Omni Plus oven for 15-18 minutes.

When the baking time has finished, allow the cornbread to cool for approx 10 minutes.

Cut the bread lengthwise and then across into 1-inch bread cubes and set aside.

Instructions for the cornbread recipe

Grease an 8″ or similar-sized baking dish and set it aside.

Remove the lid from the Instant Pot and turn on the sauté setting for 8 minutes.

With the lid off, melt ½ a cup of butter.

Add the chopped onion, celery, thyme, rosemary, and sage.

Stir to coat the vegetables in the herbs and melted butter and then sauté until they soften and slightly brown.

Add the shredded chicken, chicken stock, salt, and pepper to the inner pot’s simmer, and stir to combine.

Remove the chicken and herb mixture from heat and set aside.

Allow the mixture to cool to the touch so that it can be mixed with the egg. (You don’t want the egg to cook from the residual heat and scramble!)

While the herbs are cooling off, beat the egg with the parsley in a medium-sized bowl.

Gently fold in the cornbread cubes to coat with the egg.

Pour the cooled chicken and herb mixture into the egg mixture.

Transfer the mixture to the pre-greased baking dish.

Cut the 2 tablespoons of butter into small pats and place them all around on top of the dressing.

Cover the baking dish with foil and bake at 350 degrees F. 35 minutes in the conventional oven. In the Instant Pot Omni Plus oven for 30 minutes.

Uncover and bake until golden, 10-15 more minutes (conventional oven), 10 minutes (Instant Pot Omni Plus oven).

Serve this baked chicken and dressing recipe warm, and enjoy!

Optional – serve with gravy on top.

A Black folks’ sweet potato pie recipe is a delightful Thanksgiving and Christmas dessert packed with flavorful seasonings and spices in the tradition of Black folks’ soul food cooking. 

Black Folks Sweet Potato Pie Recipe

potatoes

oz evaporated milk (1 can)

brown sugar

eggs

butter (unsalted butter, melted (or vegan butter))

vanilla extract

ginger (minced)

nutmeg

cinnamon

cloves

Grease a 9-inch pie pan and set it aside.

See my recipe HERE for homemade almond flour pie crust, or you can use a store-bought pie crust, dough, or pie shell that may or may not come with its own pie pan.

Pro tip: Use an Instant Pot pressure cooker to soften and peel the sweet potatoes quickly and almost effortlessly!

Open the Instant Pot lid and fill the stainless-steel inner pot with water to the ½ mark.

Add the scrubbed sweet potatoes to the pot of water.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 12 minutes to loosen the potato skin.

When the cooking time is finished, allow a natural pressure release for at least 12 minutes.

To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.

Pour the water and sweet potatoes into a colander in the sink to drain the hot water from the potatoes.

Once the sweet potatoes are cool to the touch, peel and discard the skin.

Gather 3 cups of sweet potato flesh.

Add to either the Instant Pot Ace blender or an electric mixer the sweet potato flesh, evaporated milk, brown sugar, egg, melted butter, vanilla extract, ginger, nutmeg, cinnamon, ground cloves, and salt.

Pulse or mix until the ingredients are combined and smooth.

Pour the sweet potato mixture into the pie crust.

Bake the sweet potato pie at 350 degrees F: in a conventional oven for 28-30 minutes, in the Instant Pot Omni Plus oven for 24-26 minutes, or until the pie is puffed and firm in the center.

Allow the sweet potato pie to cool for at least 30 minutes.

Garnish with whipped cream and cinnamon sprinkled on top.
