Easy BBQ Jackfruit that is easy to make and a delicious meatless meal!

Easy BBQ Jackfruit

Drain and rinse the jackfruit and then lightly pat it dry. Cut off the core so that you&#8217;re only left with the outer parts that are the ones easy to shred. The core is the part that comes to a point (see photo above).

Place the jackfruit in a large bowl and lightly shred with 2 forks (we&#8217;ll shred it a bit more while it cooks). Mix in the garlic powder, chili powder, salt, liquid smoke, paprika, and brown sugar. Toss to fully coat the jackfruit.

Heat the oil in a large skillet over medium heat and once hot, add in the jackfruit. Cook for about 5 minutes to heat through, stirring often. As it cooks, break up the jackfruit more with the back of a wooden spoon or using the same forks.

Remove from the heat and stir in the bbq sauce.

This had great flavor! Jackfruit in brine was the only option at my local store. I rinsed it a couple if times and dried it well. I used all the entire jackfruit since I don't like to waste food. I cut the core into smaller strips. It cooked on low in the crockpot with some bbq sauce for about 4.5 hours. Everything was tender, including the core. Extra sauce and cole slaw make it taste like a pulled pork sandwich.

This creamy jackfruit curry combines aromatic spices, tomatoes, coconut milk, and fragrant lime for a delicious vegan and gluten-free dish.

Creamy Jackfruit Curry with Tomato, Coconut & Lime

coconut oil ((or other cooking oil))

onion, finely sliced

red pepper, deseeded and finely sliced

garlic,

2 inch piece of fresh ginger, peeled and finely chopped

chillies,

cumin

coriander

garam masala

turmeric

cardamom pods ((optional))

1x 14 oz (400 ml) tin coconut milk ((full-fat is best))

lime

Salt and pepper,

fresh coriander, chopped ((optional))

Heat the oil in a large pan on medium heat. Add the onion and red pepper and soften for 4-5 minutes, stirring regularly.

Next, add the chopped garlic, ginger, and chilli. Stir well and cook for another couple of minutes.

After a couple of minutes, add the jackfruit pieces, cumin, coriander, garam masala, and turmeric. Lightly crush the cardamom pods with the flat of your knife and add these to the pan. Stir well for a minute or so, using a wooden spoon to break apart some of the jackfruit for a mix of tender chunks and stringy pieces.

Next, add the tomatoes and break these apart with a spoon. If using tinned tomatoes, fill up a third of the empty can with water and swirl this around before adding to the pan. If using fresh tomatoes, simply add around 150 ml (approx. ½ cup) of water. Add salt and pepper and simmer on low heat for 10 minutes, adding extra water if necessary.

After 10 minutes, add the coconut milk and lime zest. Stir well, bring to a gentle simmer, and cook for a further 10 minutes or until the curry is thick and creamy, being careful not to let the coconut milk boil.

Once thick and creamy, remove the cardamom pods and stir in most of the chopped coriander. Adjust the seasoning and serve with rice, fresh coriander, and a squeeze of lime juice.

A vegan take on a classic: Jackfruit Pot Roast

Jackfruit Pot Roast

white onion, diced into 1 inch chunks

Worcestershire sauce

red potatoes

baby carrots

In an extra large skillet or stockpot, heat the olive oil over medium heat. Add in the onion and saute for 5 minutes. Add in the garlic and cook for one additional minute. Add in the jackfruit and cook over medium for one more minute.

Now add in the red wine, Worcestershire sauce, thyme, rosemary, salt and pepper. Stir and bring to a gentle simmer.

In a measuring cup/ bowl, whisk together the broth and cornstarch until fully combined and then mix into the skillet with the jackfruit. Bring to a simmer and let cook for 5 minutes, stirring often.

Pour the jackfruit mixture over top of the carrots and potatoes and bake for 40 minutes or until the veggies are fork tender and ready to eat. Let cool slightly and enjoy!

For a prettier presentation like in my photos: remove as much of the jackfruit as possible to a separate plate. Spoon the veggies onto a serving tray and then top with the jackfruit in the middle. You can pour any remaining sauce over the top or serve it on the side as a gravy. YUM!

This was excellent — the perfect quarantine food! I didn’t have any red wine on hand but did have a nice dark stout beer that I subbed in and it was worked well! The flavors are so great and baking the jackfruit mixture on top gives it a great texture. I did find I needed to keep in the oven about 15 minutes longer than the recipe called for, to make sure all the root veggies were tender — but I think next time I’ll just cut them smaller so they’ll cook faster. This was so yummy! I am just getting ready to transition to that autumn state of mind and this recipe will definitely be on like the list. I ended up adding more veggies like bell peppers, zucchini and mushrooms and boy, it turned out hearty and delicious! Also, I could only find canned jackfruit in brine in my local stores so I made sure to drain it and rinse well with water a few times through. It still turned out yummy and the potatoes actually pulled in some of that flavor and were divine! Thank you so much for this recipe! 

This is pretty delicious but even after soaking the jackfruit for an hour, it still has the canned jackfruit flavor. I wish there was a way to get rid of that flavor.

Very delicious. Brita always makes the best recipes! The sauce was *chef's kiss* good. Definitely recommend getting the drained jackfruit like she said. I ignored that and got it in a can, and it had the brine-pickle taste. I didn't mind it, but will get the right jackfruit next time! haha.

I made this for the main dish for Thanksgiving and it was so yummy. I multiplied the recipe by 4 and cooked it in a crockpot rather than the oven. It cooked on high for about 4 hours and was so delicious!! Highly recommend.

I never have access to jackfruit but it tastes just as good without.
I just double the veggies and pair them with plenty of rice.

Just made this last night and it was so good. It reminded me of the roast we’d have as a family when I was a kid! We made a couple changes to the recipe just due to our ingredient availability. For example, I added dried sage, garlic powder, onion powder, and nutritional yeast and seasoned everything based on my own taste. I also didn’t have Worcestershire sauce, so I mixed equal parts soy sauce and ketchup. My fiancé likes softer veggies so we ended up roasting everything for about an hour. It was so fun to make and it was even better reheated the next day. Will definitely make again!!! 

I could only find canned and in brine jackfruit, so I boiled it in No Beef Base bouillon for 45 min. I think it added a nice little extra kick of flavor to the jackfruit and I don’t have any of the briny or canniness! Made it for the first time tonight, but will definitely get this into my winter rotation!

Love the recipe, do you think it could work in the slow cooker/ crock pot?

Super yummy!! Sautéed everything in the Instant Pot, added veggies (carrots, cut down on potato &amp; added turnip &amp; sunchokes, and added mushrooms). Sealed it up and did manual for 13mins, then a quick release and it was perfect! Skipped cornstarch, though could have done a slurry at the end if needed, it wasn’t  for us.

Great recipe, I would suggest boiling carrots a little before because they turned out hard.

Jackfruit Burger

T olive oil

oz green jackfruit (1 can drained and rinsed)

chickpea flour

red onion(s) (chopped)

ginger

cilantro (chopped)

curry powder

salt and black pepper

Cook the Jackfruit

Remove jackfruit from the can and rinse. Place in enough water to cover and keep at a rolling boil until fork tender, which takes about 45 minutes.

Mix Ingredients in the Food Processor

Drain the water and transfer to a food processor along with the chickpea flour, chopped onions, grated ginger, cilantro, curry powder, paprika, salt/pepper and a tablespoon of oil. Give a few pulses till everything comes together.

Put Patty Mix in a Bowl

Take the patty mix out of the food processor and place in a bowl. Mix in a little more chickpea flour if the mix feels too sticky.

Shape Into Patties

Fry the Patties

Heat 1 tbsp oil in a non-stick pan or cast iron skillet; fry the patties for about 2 to 3 minutes on each side. Transfer to a paper towel-lined plate to drain off excess oil.

Add a Bun and Condiments

This patty can be enjoyed alone, or you can place it on a bun with condiments and salad greens (mixed with a bit of olive oil).

These look good. I had a question, could I sub brown rice flour instead of garbanzo flour?

Wow! Holy heck! We made this at home and everyone LOVED it! We were shocked how tasty it was! A total winner! And you can put whatever sauce you want onto it and turn it into whatever dreamy burger you desire! We put these into pitas and had a really great time!

Jackfruit Burger Patty Recipe

Jackfruit Enchiladas

onion

15- oz can of black beans (rinsed and drained)

flour tortillas

enchilada sauce

Pre-heat the oven to 350 degrees F and spray a large casserole dish with cooking spray.

Prepare your jackfruit but first cutting off the core. It's the harder part of the pieces and you want to cut all of it off and discard. See my video for reference. Then take the remaining part and shred it with your fingers or forks. Set aside.

Heat the olive oil in a large skillet over medium heat. Once hot, add in the onion and cook for 4 minutes. Add in the garlic and saute 2 additional minutes.

Stir in the shredded jackfruit and green chiles and season with salt and pepper to taste. Cook for 5 additional minute, stirring often. Remove pan from heat and set aside.

To assemble the enchiladas, spread 2 tablespoons of enchilada sauce over the half of the tortilla and then top with 2 tablespoons of black beans and ~1/3 cup of the jackfruit mixture. I like to keep all of the filling to 1/2 of the tortilla to make rolling easier. Gently tuck the ingredients in as you roll the tortilla over the fillings. Place in the prepared pan.

Top the enchiladas with the remaining sauce and spread it out evenly over the top of the enchiladas. If using, add on the cheese. Bake for 20-25 minutes until the tortillas are just beginning to brown around the edges.

Top with your favorite toppings and ENJOY!
