Easy Okinawan Taco Rice Recipe

tomato

iceberg

cheese

cauliflower rice (I used frozen)

olive oil

tsp salt

garlic powder

onion powder

cumin powder

onion

red pepper

beef (or ground pork, chicken)

paprika powder

tsp cumin

tsp chili powder

oregano

salt

tomato paste

water

In a frying pan, add the olive oil and cook the onion and red pepper on medium heat until soft.  Add the ground meat and cook for 2 minutes, just until browned.Add all of the spices and water and cook for an additional 3-4 minutes until all of the water has evaporated.  Set the meat aside. Don&#x27;t wash the pan, you&#x27;ll use it in the next step.

Taco Meat

Crack the egg open in the previous frying pan. Cook on medium heat, covered, for a good 2 minutes.  The egg white should be cooked through and the egg yolk should still be runny. Set aside once cooked.

Sunny Side Up Egg

Add the oil, cauliflower rice and spices to a frying pan.  Cook 4-5 minutes until all of the cauliflower has been cooked through and is soft enough to eat.

Cauliflower Rice

Add the cauliflower rice on a large plate, cover with the chopped lettuce, ground meat, cheese, tomato and then fried egg.This makes two servings!

How to make delicious, refreshing Okinawan Style Taco Rice. Delicious seasoned meat that has been fried with onion and garlic, loaded on top of rice and salad, then sprinkled with cheese and tortilla chips and drizzled with mayonnaise. Every bite is packed with flavour!

Okinawan Style Taco Rice (沖縄タコライス)

Medium tomato

Lemon

tsp Chilli sauce (any that you like)

Vegetable oil

White onion

Minced beef (Preferably lean meat)

tbsp Sake

Sugar

tsp Soy sauce

Worcestershire sauce

tbsp Tomato ketchup

Chilli powder

rice

Lettuce

Avocado

tbsp Grated cheese

Tortilla chips

tsp Mayonnaise (Optional)

First, cut the tomato and avocado into about 1cm cubes.

Add the tomato to a small bowl and mix with 1 tsp lemon juice and 1/4 tsp of your favourite chilli sauce. Set aside for later.

Dice the onion and finely dice the garlic.

Heat the pan on medium high and add about 1 tsp vegetable oil.

Add the onion and garlic to the pan and cook until the onion becomes soft and transparent.

Add the mince to the pan and fry until it's browned.

Once cooked, add 1 tbsp sake, 1 tsp sugar, 2 tsp soy sauce, 2 tbsp Worcestershire sauce, 2 tbsp tomato ketchup, 1 tsp chilli powder and mix. Cook until the sauce is reduced by half. (See note)

Cut the lettuce into strips and lay it around the edge of the plate, leaving the middle empty.

Add the rice to the middle of the lettuce leaves.

Put between 1/3 and 1/2 of the mince mix on top (depending on if you're making 2 or 3 servings)

Place the tomato and avocado decoratively on the top.

Sprinkle with grated cheese and crushed tortilla chips.

How to Make Easy Okinawan Taco Rice Bowl

Discover a fusion of Japanese and Mexican flavours with this Japanese Taco Rice recipe. Featuring seasoned ground beef, fresh vegetables, and a poached egg, served over fluffy rice and topped with melted cheese, this dish offers a deliciously unique twist on a classic.

Japanese Taco Rice

vegetable oil

½ red onion, finely diced

ground beef

iceberg lettuce

jalapeno chilli,

Spice mix:

Cajun seasoning

tsp smoked paprika

bay leaves

½ tsp ground black pepper

tsp sea salt

Step 1

To make the spice mix, add all ingredients into a small bowl and mix until well combined.

Step 2

Heat the vegetable oil in a heavy-based non-stick saute pan over medium-high heat. Once the oil is hot, add the finely diced red onion and diced capsicum. Stir-fry for about a minute until the vegetables begin to soften. Then, add the ground beef to the pan. Use a spatula to break up the beef as it cooks, ensuring it browns evenly. This should take about 5 minutes.

Step 3

Once the beef is browned, add your spice mix. Stir-fry the mixture for another 3-4 minutes, allowing the spices to fully infuse into the beef.

Step 4

To assemble the dish, place the warm cooked rice into a large bowl (you can warm the rice in the microwave if it was prepared in advance). Spoon the warm beef mixture over the rice. Top with shredded iceberg lettuce, diced tomato, and a poached egg. Add a dollop of sour cream, and sprinkle over the grated mozzarella and red Leicester cheese. Finally, garnish with the chopped coriander and finely sliced jalapeno chilli.

Step 5

When ready to eat, mix everything together at the table, letting the runny poached egg and melted cheese blend with the warm beef and rice. Serve immediately and enjoy this fusion of Japanese and Mexican flavours.
