The whole family will love this amazing harvest salad! Made with crisp apple slices, crunchy + sweet pomegranate seeds, and lots of greens paired with a simple balsamic dressing. The perfect salad to serve as Thanksgiving side salad or to compliment your favorite meal!&nbsp;

Apple Pomegranate Harvest Salad

pomegranate seeds

honey crisp apple (sliced thin)

Mixed greens

balsamic vinegar

Add greens to a medium to large bowl and arrange salad toppings as desired.

In a medium bowl add all of dressing ingredients and whisk thoroughly to combine. Taste and adjust as needed.

To make the dressing: Place all dressing ingredients in a jar, put the lid on and give it a vigorous shake. Set it aside.

To make the salad: Drizzle the bottom of a large salad bowl with half of the dressing. Add in the kale and give it a toss.* Make sure that all the kale leaves are coated with the dressing. 

Add in the sliced apple, figs, pomegranate arils, and pecans. Drizzle it with the rest of the dressing and give it a gentle toss.

Make the Dressing: Add the oil, vinegar, maple syrup, mustard, garlic, and salt to a small mason jar. Seal the jar well and shake vigorously until emulsified, about 20 to 30 seconds.

Massage: Add the chopped kale to a large bowl and pour 3/4 of the dressing over it. Use clean hands to massage the dressing into the kale for 45 to 60 seconds, until the kale is tender and has reduced in volume.

Mix: Add the parsley, apple, and walnuts to the bowl with the kale and top with the remaining dressing, plus black pepper to taste. Use salad tongs or two large spoons to mix everything together well.

Make the lemon tahini dressing. If you haven&#39;t already, make a batch of our lemon tahini dressing.

Toast the breadcrumbs. Heat 1 Tbsp olive oil in a small skillet over medium-high heat. When hot, add ⅓ cup of breadcrumbs. Cook, stirring occasionally, until the breadcrumbs are golden brown and toasted, about 2-3 minutes. Set aside.

Assemble the kale salad. Place thinly sliced kale, apple, ⅓ cup toasted pecans, ⅓ cup shaved Parmesan, and toasted breadcrumbs in a large bowl. Drizzle the lemon tahini dressing on top, then toss well. Serve immediately with additional shaved Parmesan, a sprinkle of flaky sea salt, and black pepper, if wanted.

not sure if i have commented on this recipe yet and also can't understand why because I have loved this every time I've made it! I make croutons instead of the crumbs (tho I see lots of positives about the crumbs!) and the crunch they give is very satisfying. I love the versatility of this salad...I've added pomegranite seeds, red onion, subbed the parm for aged gouda and when I don't have the tahini dressing made we use something else yummy with good results.
