This is the very BEST kale salad dressing recipe ever. I know that is a big claim, but I've been told it so many times and by so many people that it must be true. The honey helps balance kale's bitter flavor and the two types of vinegar (apple cider and balsamic) create an irresistible flavor.

BEST Kale Salad Dressing

extra virgin olive oil

apple cider vinegar

honey

balsamic vinegar

Dijon mustard

garlic

sea salt

Place all the ingredients into a 2-cup mason jar.

Shake well until the ingredients are mixed together and the dressing is creamy.

We've been eating a ton of kale lately and have been trying different dressings and vinaigrettes but haven't loved any of them until now. This one really is made for kale. Planning on making a double batch of it today so we can keep some in the fridge. Do you know how long it will last?

Incredible and perfect mix of flavor. I was searching for a great kale dressing that didn't rely on cheese as part of the recipe and this recipe popped up. I made the dressing and combined it with two bunches of kale. That is a great thing about kale and this recipe, you can make it and you have healthy delicious salad ready to go for the same day or a couple days. I ate it as a solo lunch salad and also as a base with buffalo chicken tenders on top, so it has a lot of flexibility to stand on it's own or pair with other tasty foods. Excellent! Don't forget to massage the kale thoroughly before adding other ingredients - crushing the leaves in your hands somehow magically removes the bitterness!

So easy yet so tasty!  I used it on a Kale Salad mix which I bought, and the whole family loved it!

Best Kale Salad Recipe with a Twist!

kale (with stems removed)

parsnip (sliced thin)

carrot (sliced thin)

red onion (sliced thin)

tbsp red wine vinegar

olive oil

salt

black pepper

oregano

tsp minced garlic (or 1 large clove minced)

dried cranberries

oz feta cheese

Grab a bunch of the kale and slice it into thin ribbons. Add the cut kale to a large bowl.&nbsp;

Slice the parsnip, carrot and onion as thin as possible and add them to the bowl.&nbsp;

In a small bowl add the vinegar, salt, pepper, oregano, garlic, and dried cranberries. Whisk and mash the cranberries a bit letting them flavor the dressing.&nbsp;

Pour the dressing over the kale and veggies. Toss everything together making sure to coat all the leaves with the dressing.

Cover and let sit in the fridge for at least 2 hours. Once you’re ready to eat add the feta and toss.

Smooth, Creamy Lemon Tahini Dressing Recipe

Tbsp tahini

water

lemons (juiced, about ¼ cup)

garlic clove

tsp honey ()

¼ tsp Aleppo pepper (or black pepper)

Make the lemon tahini dressing. Place 2 Tbsp tahini, 3 Tbsp water, and ¼ cup fresh lemon juice in a medium bowl. Using a microplane, grate 1 garlic clove on top. Add 1 tsp honey, ½ tsp Kosher salt, and ¼ tsp Aleppo pepper (or black pepper). Whisk until the mixture is smooth. Note: it will harden and seize at first, then loosen up. Stream in ¼ cup of olive oil, whisking constantly, until emulsified. Taste, adjust seasoning, then set aside.
