Easy Sugar-Free Candied Almonds with Cinnamon

Place the almonds, sweeteners, and cinnamon in your slow cooker and set to low.

In a small bowl, whisk the egg white and salt until foamy. Add to the nuts and mix well.

Place some paper towel over your slow cooker before putting on the lid.

Cook for 2 ½ hours, stirring every 30 minutes.

Add the water, stir well, then cook for another hour. Stirring halfway through.

Pour the almonds onto a cookie sheet lined with parchment paper to cool and dry out.

Once cooled, stored in an airtight container on the counter for up to 2 weeks.

This easy Keto Peanut Brittle is our take on the classic candy found at fetes, fairs and markets. Our version is sugar-free, yet still crunchy and delicious!

Vanilla Essence

Line a cookie sheet with parchment paper and evenly spread out the peanuts.

Place the butter, swerve and vanilla essence in a small saucepan over medium-high heat.

Cook the mixture to caramel stage, it should be a deep brown color. Note that under cooking the caramel will leave your brittle grainy.

Pour the caramel over the peanuts and leave to cool completely, around 30-50 minutes.

Break the cooled brittle into pieces and serve.

On low heat, melt the butter. You can brown the butter if you'd like, but that's optional (I like it though!).

Once the butter is melted, turn the heat to medium-low and add ChocZero syrup &amp; Lakanto and whisk frequently.

Keep whisking past the boiling point. Once it starts frothing, turn off the heat and keep whisking for 20 seconds.

Let it cool to room temperature before wrapping.

For Soft Keto Caramels / Keto Candy:

Same Instructions as the Soft Caramels for #1 &amp; 2

Get it past the boiling point and when it starts frothing, whisk for 10-15 seconds.  Do not let it create giant bubbles. After, remove from heat and whisk for another 20 seconds.

For Medium Chew Keto Caramels / Keto Candy:

Get past the boiling and froth stage. Keep Whisking. After 10-15 seconds, it'll start creating large bubbles. Remove from heat.

Pour into silicone mold. You'll need to work quickly. You have **seconds** to pour it into the molds before it hardens.

For Hard Keto Candy (like Werther's Original):

Question - I'm looking for a caramel sauce that I can dip and coat some not-as-good=as-advertised cookies. And of course, the recipe looked fantastic, so I doubled it! Now, instead of a dozen cookies, I'll have to bland my way through 24+. So I'm looking to sweeten things up a bit. 
1) would this recipe work as a dipping sauce?
2) if so, do you recommend hardness level 1 or 2?

This Keto Chocolate Fudge melts in your mouth and is so easy to make! This sugar-free fudge recipe can be part of a low-carb, Atkins, diabetic, egg-free, gluten-free or Banting diet.

The Best Keto Chocolate Fudge

oz chocolate

heavy cream

stevia/erythritol powdered sweetener (Pyure Brand--see notes*)

vanilla extract

cream cheese (softened)

Tablespoons butter (room temperature)

walnuts (chopped (optional)*)

In a medium saucepan, combine chocolate, cream, and Pyure sweetener. Place over low heat and bring to a simmer, stirring frequently. Simmer very gently over low heat for 1 minute.&nbsp;Remove from heat and whisk in collagen and vanilla extract. Allow to cool to room temperature.

While chocolate mixture is cooling, line an 8" X 8" baking dish with parchment paper.

In a large mixing bowl, beat the cream cheese and butter together until fluffy using a hand mixer.&nbsp;

Slowly add the cooled chocolate mixture to the cream cheese mixture in small amounts, beating after each addition

Stir in the walnuts.

Spread the fudge mixture evenly in the prepared 8x8 glass pan.

Spread the fudge out evenly and cool in fridge until solid (about 2-3 hours). After it has cooled, cover it.&nbsp;

When fudge is completely solid, using the edges of the parchment paper, lift the fudge out of the baking pan and place on a cutting board. Using a serrated knife, cut into 16 pieces. Store in an airtight container in the refrigerator.
