This Creamy Keto Chicken Marsala recipe is a low carb version of the traditional Italian dish. It is made in one pan using thinly sliced chicken breasts, mushrooms, and topped with a rich and creamy marsala sauce.

Creamy Keto Chicken Marsala

tbsp butter

olive oil

chicken breasts

oz cremini mushrooms, sliced ((baby Bella mushrooms))

onion

garlic

chicken broth

¼ tsp dried thyme

salt

⅛ tsp pepper

Marsala cooking wine (or Marsala wine)

heavy whipping cream

parsley

tsp Xanthan Gum (optional)

Melt 1 TB butter and 1 TB olive oil over medium-high heat in a skillet. Salt and pepper chicken breasts on each side, then sear it on both sides so that it is nicely browned. (Approx 4 min on each side.)

Remove the browned chicken from the skillet to a platter and set aside.

Turn the heat down to medium then add the remaining butter and olive oil to the skillet.

Add your sliced mushrooms, onions, and minced garlic.

Sauté the mushrooms, onions, and garlic over medium heat until the mushrooms are golden brown.

Add chicken broth and deglaze skillet by scraping the bottom of the pan with a wooden spoon. The brown bits have lots of flavors, so keep them in your pan.

Add the marsala cooking wine and spices and bring to a boil.

Add the heavy whipping cream and turn down the stove to medium. Boil for 6-10 minutes so that the sauce can thicken and reduce. ***See note in the last step if you prefer a thicker sauce.

Add your browned chicken back to the pan and simmer for 5 minutes or until the chicken reaches 165 degrees with an internal thermometer.

If you prefer a thinner sauce, add more chicken broth.

Garnish with parsley and serve alone, with a salad, or with over steamed cauliflower rice.

****If you prefer a thicker sauce, follow the instructions below instead of steps 8 and 9. Add the heavy whipping cream to the skillet and stir to combine the ingredients. Then, remove 2 tablespoons of the sauce from the pan and place it in a small bowl with 1/4 tsp Xanthan Gum. Whisk together until combined, then return to the skillet along with the browned chicken and simmer on medium/low for 5 minutes or until the sauce has thickened and chicken reaches 165 degrees with an internal thermometer.

Keto Chicken Marsala Recipe

lb chicken tenders (or breasts

Salt and pepper

tbsp extra virgin olive oil

shallot,

mushrooms

tsp fresh chopped sage (or thyme)

dry marsala wine

Season the chicken on both sides with salt and pepper. Add the oil to a large skillet set over medium heat. Once hot, add the tenders and cook 5 to 6 minutes per side, until golden. Remove to a plate.

Add the butter to the pan and let melt. Add the shallot and cook, stirring frequently, until translucent. Add the mushrooms and sauté until golden brown, about 5 minutes. Sprinkle with salt and pepper and the sage.

Pour the marsala over the mushrooms and let cook until the wine is reduced by about half. Add the broth and the whipping cream and bring to a boil. Let cook until sauce is beginning to thicken.

Add the chicken back to the pan and cook another 3 to 5 minutes to heat through.

This is a great dinner for guests, and the suggestions for side dishes are so helpful, too.

Omg sooooo good!!!  I learned to make Chicken Marsala in Italy 12 years ago at a weeklong Agriturismo Cooking School stay and don’t think I’ve made it since!!  This version was every bit as good and sooo much quicker. Thank you thank you thank you Carolyn for NEVER disappointing with your recipes old and new.   PS I couldn’t find Marsala wine but guess what?!?  AMAZON to the rescue!!

So good! I doubling the sauce like others suggested and served over cauliflower rice. I used some of our home-grown chicken- thank you!

Delicious!!! Use chicken breast and cut them into thin strips used ground sage because that’s all I had but it was definitely yummy and will be on the list of “do agains”

Delicious! My husband asked for this to be added into the dinner rotation.  Next time I'll make more sauce to serve over cauli rice.

Made this tonight for my 17 year old daughter and I, oh yummy!  Good thing my husband is out of town since my daughter and I can’t wait for the leftovers tomorrow night.  😌

Oh my gosh this was so good! Way better than expected! I used thyme instead of sage and 1/3 c half n half because I didn’t have heavy whipping cream. It was fantastic and will definitely be making again!
