This healthy egg salad recipe is gluten free, paleo, low carb, keto, and super easy to make for a healthy lunch recipe.

Eggs

C. Healthy Mayonnaise (I use the Primal Kitchen Avocado Mayo)

C. Red Onion, diced

2-4 Tbsp Fresh Dill, stems removed & minced

2-4 Tbsp Green Onion, chopped

Dijon Mustard

Lemon

Sea Salt & Pepper,

In a medium saucepan over high heat, bring water to a boil then gently add the eggs.  Boil eggs for 10-12 minutes.  Once done, immediately place the eggs in ice water for 10 minutes and then peel the eggs.

While eggs are boiling and cooling, go ahead and chop the herbs & vegetables.

Once eggs are peeled, dice them with a knife into small chunky pieces then transfer to a mixing bowl.  Add all remaining egg salad ingredients to the mixing bowl and stir until fully combined.

Serve with gluten free bread, crackers, lettuce wraps, etc.  This egg salad will stay fresh in the refrigerator for 3-4 days.

Easy Keto Egg Salad

eggs

mayonnaise

dijon mustard

lemon juice

lite salt (for potassium)

salt black pepper

Place the eggs gently in a medium saucepan.

Add cold water until the eggs are covered by about an inch.

Bring to a boil and cook for ten minutes.

Add the eggs to a food processor or magic bullet and pulse until chopped.

Stir in the mayonnaise, mustard, lemon juice and salt and pepper.

How did u do on the egg fast diet. I'm thinking about starting it tomorrow.

I know you have to limit your protein too as well as your carbs, so that the fat you eat is used to burn fat , and the protein won't be used to burn fat instead, but how can you limit your protein when so many foods have it in them, like eggs, cheese, meat, yogurt, ect.?

This is the amazing recipe and sooo simple. I did a finger food party for 15 people. Made sandwiches with this filling and everyone wanted the recipe. And not a single high carb morsel crossed my lips either, holding steady. Thank you

This recipe is good however there’s no way you can get (3) 1/2 cup servings out of it. I made it for my husband and I and after scooping (2) 1/2 cup servings there was probably only a 1/4 cup left. 

I bought your book Keto for Life and I have actually found the serving size has been incorrect on the recipes I’ve made from it so far. This is really disappointing when planning meals and needing to have leftovers for lunch.

I had the same experience as you.  I measured out two half cup servings and only had about a half cup left.  Next time I will know to divide into three and not measure.  I have seen the same thing with a few other recipes.  And when I put the ingredients into My Fitness Pal, the calories match for a serving.

Know what makes this recipe even better (and it is really good the way it is)? Stir in Palmetto Pimento cheese (the jalapeno is my favorite). I am guessing that I add a generous Tablespoon per egg. Yum!

I was told that yogurt is unacceptable because of the high levels of milk sugars

Wonderfully tasty recipe. Doing the Egg Fast leading up to my daughter’s wedding on Saturday. How long does this keep in the fridge or would you recommend freezing any leftovers over the weekend, not that I expect to have any leftover as I’m not a Buffalo sauce fan &amp; will probably repeat Egg Salad for dinner.

This is an easy, delicious egg salad recipe that wins every time.  The addition of the bacon adds the perfect crunch...I don't miss the bread at all!  And the zip of the mustard adds much needed flavor and keeps the dish from being too heavy.  I love these wrapped up in a large romaine leaf or on top of a bed of spinach.

This is a very tasty way to eat eggs! I DO, however add about a1/2 t. of DILL WEED to it. After reading up on dill, which I LOVE, it makes great sense to add it anywhere we can. I just did the egg fast this week, lost 6.8 pounds. Yeah!! And some dill flavor in egg salad is perfect.

Make hard-boiled eggs. Bring a small pot of water to a boil and submerge your medium to large eggs with a spoon. Cook for 9 minutes for the yolk to be just a tiny bit jammy, or 10-12 minutes if you like your eggs properly HARD-boiled.

Drain and submerged the cooked eggs under cold water as soon as possible. Once the water gets warm, refill it with cold water again. Allow the eggs to cool slightly before peeling.

Chop the ham, pickles and finely diced red onions. Dice the hard-boiled eggs slightly larger. Combine everything in a bowl with mayonnaise and a little black pepper. Mix and serve.

This easy Keto Egg Salad recipe has just four simple ingredients but is creamy and delicious. It stays low-carb served in lettuce wraps or on chaffles.

Easy Keto Egg Salad Recipe

apple cider vinegar (or white vinegar)

celery or chives (optional) (finely diced)

In an air fryer - Place eggs in the air fryer basket. Cook at 250°F for about 16 minutes. The exact timing will vary depending on your make and model. If this is your first time cooking eggs this way, cook only 1 or 2 eggs to ensure that the timing is correct, and then cook the rest.On the stovetop - Place eggs in the bottom of a large pot and add water so that they are covered with an extra inch or two to spare at the top. Bring the water to a rolling boil, then turn it off and allow the eggs to sit for 10-12 minutes. The exact time will vary depending on your stove, pots, etc.

When finished cooking, immediately transfer the eggs to a bowl filled with ice cold water for at least 5 minutes or until cool to touch.

Cook Hard Boiled Eggs

Peel eggs. Gently tap the end of each egg and then roll and crack the rest of the egg. The egg yolk should pop right out.

Cut eggs in half and place the egg yolks in a small bowl. Use a fork to finely crumble the yolks and set aside.

Chop the egg whites into small pieces and set aside.

Add mayonnaise, Dijon mustard, and apple cider vinegar to the bowl with the crumbled egg yolks and mix well to combine.

Fold in chopped egg whites and any other ingredients, such as celery or chives.

Enjoy on lettuce leaves, low-carb tortillas, thin-sliced bread, or chaffles!
