Homemade Tigernut Granola (Nut Free, Gluten Free, Keto, Paleo, Vegan, Dairy Free &amp; Oil Free) – A crunchy nut free granola cereal made with tigernuts and a mix of seeds like pumpkin, chia and hemp seeds. This gluten free nut free grain free granola is delicious on its own or served with dairy free milk, yogurt, smoothie or ice cream. 

Gluten Free Nut Free Tigernut Granola (Grain Free, Oil Free, Keto, Vegan)

tigernuts ((chopped))

tigernuts ((sliced))

sunflower seeds (raw)

pumpkin seeds (raw)

golden flax seeds ((ground))

currants

cranberries (or raisins (soaked))

hemp seeds

chia seeds

coconut cream

sugar

tsp vanilla extract

tsp pink Himalayan salt

raspberries (crushed)

freeze dried bananas (crushed)

Take 1.3 cup of tigernuts and soak them in a bowl of water overnight.

Soak the dried black currants or any of your dried fruit in warm water for at least 30 minutes before use in the recipe. This will help remove dirt and any oil or sugar residue.

Prepare The Ingredients That Need Soaking

Once soaked discard the water, place the tigernuts in a food processor and pulse a few times until they resemble chopped nuts.

You can also thinly slice them with a knife if you prefer larger pieces.

Chop And Slice

Preheat oven to 300F. Line a baking tray with parchment paper.  

Into a large bowl toss chopped and sliced tigernuts, sunflower seeds, pumpkin seeds, chia seeds, hemp seeds, flaxseed meal, dried black currants, coconut cream (room temperature) or oil, the sweetener (if you use any) and salt.

Use a spatula to stir and combine.

Spread your grain free nut free granola mixture evenly on the prepared baking tray. Spread the granola in a single thin layer or use two baking trays if needed.&nbsp;

Assemble The Gluten Free Nut Free Grain Free Granola

Bake for 40 minutes, stirring halfway through with a spatula. Your grain free granola is ready when is slightly golden brown and crisp.

Bake The Granola

Cool down for 15 minutes on the tray then stir in the dried freeze fruits (I used raspberries and bananas).

Final Mix-ins

Transfer your cool granola into a glass jar.  Store up to 3-4 weeks. This recipe makes about 4-5 cups of granola.

Keto Granola Recipe | One of The BEST Keto Recipes For Breakfast!

Cup (170 grams) Raw Almonds

Cup (125 grams) Raw Pecans or Walnuts

Cup (150 grams) Raw Hazelnuts

Cup (96 grams) Unsweetened Shredded Coconut

Cup (60 grams) Pumpkin Seeds

Cup (65 grams) Sunflower Seeds

Cup (45 grams) Sesame Seeds

Cup (55 grams) Chia Seeds

Just less than 1/2 Cup (110 grams) NO SUGAR Peanut Butter

(70 grams) Egg Whites

Tsp. (5 grams) Pure Vanilla Extract

Salt

***Optional: 1/2 Tbsp Ground Cinnamon

Add all of the nuts, half of the pumpkin seeds, and half of sunflower seeds to your food processor. Pulse to roughly chop nuts/seeds. ***Do NOT over pulse; you do not want a fine meal.

Transfer the mixture to a large bowl. Stir in the rest of the dry ingredients. 

In a separate bowl, whisk the wet ingredients together. Add this to the dry ingredients. Mix together.

Spread mixture in an even layer onto the prepared baking sheet and flatten with your hands and a rolling pin.

Bake for 25 minutes or until golden brown. Remove the tray from the oven and let cool.

Use your hands to break granola apart into pieces. 

Store in cool, dry place in an airtight container.

Excellent. I made only half recipe to make sure I liked it. It is amazing! My husband loves it. He said it tastes like traditional granola made with oats. He said he could not tell it was Keto. Whip up my fast, easy, keto granola recipe with nuts &amp; seeds in 30 minutes! This keto cereal is crunchy, grain free, and just 2g net carbs.

Keto Granola Cereal (Low Carb &amp; Easy)

Almonds ((see notes below))

Hazelnuts

Pecans

Pumpkin seeds

Sunflower seeds

tbsp Besti Monk Fruit Allulose Blend

Golden flaxseed meal

Egg white

Unsalted butter

tsp Vanilla extract

Preheat the oven to 325 degrees F (163 degrees C). Line a large baking sheet (I used this size), or two small ones, with parchment paper.

Pulse the almonds and hazelnuts in a food processor intermittently, until most of the nuts are in chopped into large pieces (about 1/4 to 1/2 of the full size of the nuts).

Add the pecans. Pulse again, stopping when the pecans are in large pieces. (Pecans are added later since they are softer.)

Add the pumpkin seeds, sunflower seeds, Besti, and golden flax seed meal. Pulse just until everything is mixed well. Don&#39;t over-process! You want to have plenty of nut pieces remaining, and most of the seeds should be intact.

Add the egg white to the food processor. Whisk together the melted butter and vanilla extract in a small bowl, and evenly pour that in, too.

Pulse a couple times, mix a little from the bottom toward the top with a spatula, then pulse a couple times again. Repeat as needed until everything is coated evenly. Again, avoid over-processing. At the end of this step, you&#39;ll have a combination of coarse meal and nut pieces, and everything should be a little damp from the egg white and butter. (Alternatively, you can do this step in a large bowl instead to avoid over-processing.)

Transfer the nut mixture to the prepared baking sheet in a uniform layer, pressing together into a thin rectangle (about 1/4 to 1/3 in (.6-.8 cm) thick). Bake for 15-18 minutes, until lightly browned, especially at the edges.

Cool completely before breaking apart into pieces. (The granola will be soft when you remove it from the oven, but will crisp up as it cools.)

I have tried several different keto granola recipes over the years and I always come back to this one as my favourite. I try to mix it up a bit here and there, but the basics are generally the same. It’s just an all around good recipe.

This was the first recipe I tried from your vast collection, and I have made it twice now. Absolutely delicious to the last crumb! I eat the large pieces as a snack, made a great topping for yogurt, in a bowl with almond milk,  even used as a base for overnight oats without the oats!  Will definitely make this again and again…

I make this granola every week. It tastes better than the traditional granola and tastes so much better. I add a teaspoon of cinnamon and toasted unsweetened coconut. Thank you for making my low carb diet so much easier! This is awesome!

Full of flavor!  I added shredded unsweetened coconut.

I didn't use hazelnuts, just increased the pecans and almonds. I didn't use Besti; substituted stevia. Since I omitted the hazelnuts, do nutrition facts change much?
Otherwise this granola was so good and satisfying. Will make it again.

Great recipe! I smashed nuts with the handle of a cleaver to get more nut chunks and less nut flour. I used raw nuts and 6 Tb of straight allulose. Laying bits down on parchment paper with spaces in between helped airflow when baking and lowered oven temperature to 300° to prevent burning. Before putting in oven and while sticky, I sprinkled coarse salt. That gave it a salty and mild sweet taste.
