Jerk Chicken and Rice

Swerve Sweetener

fine sea salt

allspice

pepper

garlic

cayenne pepper

parsley

paprika

thyme

cinnamon

nutmeg

chicken thighs

Preheat the oven to 375ºF.

In a small bowl, whisk together the sweetener, sea salt, all spice, pepper, garlic, cayenne, parsley, paprika, thyme, cinnamon, and nutmeg. Rub the chicken all over with the spice blend.

In a large skillet over medium heat, heat the avocado oil until shimmering. Add the chicken skin-side down and do not disturb for 4 minutes, until the skin is golden brown. Flip the chicken and cook another 4 minutes.

Remove the chicken to a plate and add the onion to the pan. Sauté until translucent, about 4 minutes. Add the cauliflower rice and cook until just tender, another 4 minutes.

Return the chicken thighs to the pan, skin-side up, and transfer the whole skillet to the oven. Bake 20 minutes or until the chicken reaches an internal temperature of 165ºF.

Easy Baked Jerk Chicken Low carb is an easy paleo, low carb and healthy Jerk chicken Recipe made in the oven.

Easy Baked Jerk Chicken Low Carb

MARINADE:

avocado oil (or olive oil)

apple cider vinegar

tsp sea salt

½ tsp Truvia brown sugar

onion powder

½ tsp black pepper

½ tsp ground ginger

¼ tsp to ½ tsp cayenne pepper (mild

tsp ground cinnamon

thyme leaves

CHICKEN:

Combine Marinade.

In a large mixing bowl combine all marinade ingredients. Mix together thoroughly.

Add chicken to marinade &amp; coat.

Add chicken pieces and toss to coat with marinade..

Cover &amp; refrigerate.

Cover mixing bowl with chicken and marinade in it, with plastic wrap or foil and place in the fridge to marinate for 2 hrs or longer.

Preheat oven.

Preheat oven to 375 F. Place marinated chicken skin side up in a 9 x 13 baking pan.

Bake.

Bake for 1 hour and 10 minutes or until chicken is done near bone. Turn oven to broil, and broil chicken to brown skin for 2 to 4 minutes. Remove from oven and serve.

Keto Jerk Chicken Sheet Pan Meal

chicken breast,

tablespoon coconut aminos

sugar free jerk seasoning

lime juice

pineapple

avocado

red onion

red bell pepper

cilantro

salt

Combine the marinade ingredients in a medium sized bowl.  

Marinate for at least 1 hour or overnight.  

Preheat the oven to 400 degrees Fahrenheit. 

Combine the cauliflower rice, coconut milk, avocado oil and salt in a medium sized bowl and stir well.  

Spread the cauliflower rice mixture onto a sheet pan.  

Bake for 20 minutes, or until the chicken is cooked through.  

Remove from the oven and serve with the salsa.  

Combine all of the salsa ingredients in a bowl while chicken is baking.

Stir and chill, covered, until ready to serve.
