Avocado Dressing

avocado

olive oil

water (or more for thinner consistency)

cilantro, basil or parsley leaves

lime (juiced)

garlic (minced)

salt and pepper (to taste)

Blend

Add all of the ingredients to a food processor. Blend until creamy and feel free to add more water for a thinner consistency.

This healthy Mediterranean Salad recipe makes  a flavorful, crunchy salad. This salad is packed with cucumber, tomatoes, riced cauliflower, and feta cheese. Our recipe makes an easy and fool-proof summer salad for all occasions. This fresh salad is also suitable those following a low-carb, keto, diabetic, Banting, or vegetarian diet.

Mediterranean Salad (Keto Friendly)

riced cauliflower (fresh

cucumbers (coarsely chopped)

red onion (chopped finely)

tomatoes (coarsely chopped)

feta cheese (crumbled)

kalamata olives (pitted)

Tbsp red wine vinegar

lemon juice

oregano

garlic (crushed)

salt and pepper

Add the 1 tbsp olive oil to a medium pan over low heat. Then add the cauliflower and stir frequently until cooked through, about 5 minutes. Remove from heat and let cool completely before adding to the salad.

Cauliflower Mixture

 Combine cucumbers, red onion, and tomatoes in a large bowl and toss until combined.

The Salad Mixture

Combine the olive oil, vinegar, sweetener, lemon juice, oregano, garlic, and salt and pepper in a small bowl and whisk until thoroughly combined.

In a large bowl, combine the riced cauliflower, the salad mixture, and the dressing and toss together. Finally, add the olives and feta cheese and toss until thoroughly incorporated. Store in the fridge until serving. Flavor is best with at least an hour for the salad to marinate before serving.

Raspberry Vinaigrette - Keto and Low Carb

raspberries

white wine vinegar (see notes)

olive oil (see notes)

Swerve confectioners (or powdered erythritol)

onion (minced (or shallot))

dijon mustard

salt

Add all the ingredients except the olive oil to the bowl of a food processor.  Blend until smooth.

With the processor running, slowly stream in the olive oil and continue mixing until fully blended. &nbsp;That's it, told ya it was easy!!

Store leftovers in the fridge for up to a week.

Use with salads, grilled meats, as a dip, or over steamed vegetables for a lovely flavor.&nbsp;This All-Purpose Easy Mustard Keto Salad Dressing&nbsp;just melts onto veggies creating a wonderful glaze-like finish.

Apple Cider Vinegar

Gray Poupon (or other prepared mustard)

Soy Sauce

Splenda

Garlic (minced)

Kosher Salt

Black Pepper

Pour all ingredients into a Vitamix or other powerful blender and blend for 1 minute until well-emulsified.

Store in the refrigerator for up to a month, shaking up before each use.

Use with salads, grilled meats, as a dip, or over steamed vegetables for a lovely flavor.&nbsp;This dressing just melts onto veggies creating a wonderful glaze-like finish.

Our Keto Coleslaw is a creamy, tangy and colorful side dish. This classic cabbage salad is a staple recipe that everyone can enjoy!

Keto Coleslaw & Creamy Dressing

green cabbage (thinly sliced)

red cabbage (thinly sliced)

scallions (thinly sliced)

parsley (fresh)

Low Carb Mayonnaise

sour cream

apple cider vinegar

garlic powder

pepper

In a large mixing bowl, add the cabbages, scallions, and parsley and toss together. Set aside while you make the dressing.

In a small bowl, add the remaining ingredients and whisk together until smooth.

Pour half the dressing into the salad and mix well. Continue to add the dressing until the salad reaches your desired level of dressing (we like to add it all).

Taste your coleslaw and season with additional salt and pepper if desired.

Serve and enjoy.

Ingredients needed for Keto Ranch Dressing Recipe

First of all, prepare all of your ingredients. I have replaced the mayo with sour cream to reduce calories. Regarding herbs, it is best if you could use all the fresh ones. Chop all herbs into tiny pieces, press your garlic, squeeze juice from lemon and get 2 cups of sour cream.

Sour Cream and Lemon

Let us start with a big mixing bowl into which you can add all of the sour cream and the juice from freshly squeezed lemon.

Herbs and garlic

As the next step, add all of the herbs one by one, which is, in our case, dill, chives, and parsley. Add freshly pressed garlic cloves.

The last two ingredients are salt and pepper. I only add approximately one teaspoon each as I always like the fresh aroma from the other herbs.

Combine

Once all ingredients are in the mixing bowl, take your spatula or a spoon and mix all herbs with the sour cream until all thoroughly combined.
