Easy Dubu Jorim (Korean Braised Tofu)

soy sauce

Cut tofu into 1/4 inch thick pieces, and pat dry to remove moisture (this will yield a crispy exterior). Lightly season with salt and pepper and set aside.

Add all sauce ingredients into a bowl. Add onion, green onion, and chili pepper, and mix to combine.

Heat oil in a large skillet over medium heat, carefully add the tofu pieces and sear both sides until golden-brown, about 2-3 minutes.

Pour the sauce over the tofu and cook for about 5 minutes, flipping occasionally. Cover and simmer for another 2-3 minutes until the sauce is reduced to a thick consistency.

Garnish with the reserved green onions and sesame seeds, and serve immediately with rice, noodles, or any other dish of choice. Enjoy!

Dubu Jorim - Korean Braised Tofu

400 g firm tofu (pressed

sesame seeds (raw

spring onion / green onion (chopped finely)

garlic (chopped finely)

Korean hot pepper flakes / gochugaru

tbsp sugar (sub honey)

tbsp cooking wine

Press

Press out tofu on a plate with a heavy weight (around 1 kg / 2 lbs) for 10 minutes to extract as much water as possible. Slice into steaks and pat dry with a paper towel on both sides. Optional: Sprinkle salt and pepper over the tofu steaks to your liking.

Prepare the tofu

Add the spring onion, garlic, gochugaru, sugar, soy sauce, cooking wine, sesame oil and water into a small bowl. Mix well until combined.

Prepare the seasoning sauce

Heat the vegetable oil in a large frying pan over medium high heat. Add the tofu steaks and fry for 2-3 minutes on one side until golden brown, then flip. Top with the sliced onion and allow to soften while you fry the other side of the tofu.

Reduce

Once cooked to your liking, pour over the seasoning sauce. Reduce to medium heat and cook until all the liquid has evaporated and the sauce is sticking to the tofu (around 2-4 minutes).

Serve hot with rice and / or garnish with toasted sesame seeds.

Korean Braised Tofu (Dubu Jorim)

block of firm tofu (450 grams)

tbsp gochugaru (Korean red pepper flakes)

garlic, finely minced

tbsp sugar

tsp sesame seeds

Fry the tofu in oil until golden brown on both sides.

In a bowl, combine soy sauce, water, sesame oil, gochugaru, sugar, half of the sesame seeds, minced garlic, and the white part of the scallion.

Pour the mixture into the pan with the fried tofu and give it a mix to evenly coat all the tofu pieces with the sauce.

Close the lid and simmer for 5-6 minutes or until the sauce has reduced by half.

Garnish with the green part of the scallion and leftover sesame seeds.

Transfer to a plate and enjoy as a side dish with rice or noodles.
