leftover rice

This fried rice with leftovers makes use of leftover rice and meat, seafood, or vegetables, and is served with a jalapeño garlic vinegar.

Fried Rice With Leftovers

jalapeño, sliced, with seeds

garlic clove, smashed

rice vinegar

water

rice*,

garlic cloves, finely chopped

soy sauce

egg,

scallion, white and green parts, chopped

salt

Combine

In a small jar, combine all the ingredients, screw on the lid, and shake to combine. Let it sit for 15 minutes. (You can keep the vinegar for up to 2 weeks in the refrigerator.)

Make the quick jalapeño garlic vinegar (optional)

Stir

In a medium bowl, stir the rice to break up any clumps. Set the bowl of rice and all remaining ingredients near the stovetop, as this recipe comes together quickly.

Heat

In a large skillet or wok (you want something nonstick, carbon-steel, or cast-iron) over high heat, warm 1 tablespoon fat. When the fat just begins to shimmer, add the garlic and stir-fry until aromatic, 10 to 15 seconds. 

Add the leftovers and cook, stirring, until warmed through, 1 to 2 minutes. Add the rice and stir-fry until everything is completely combined and heated through, about 2 minutes more. Slowly dribble 1 tablespoon soy or fish sauce (or a combination) over the rice and toss quickly. Taste and, if desired, add more soy or fish sauce.

Scramble

Use your spoon to push the rice to the edge of the skillet or wok to create a well in the middle at least 4 inches (10 cm) wide. Add the remaining 1 tablespoon fat to the well and pour in the egg.  Quickly stir-fry to scramble the egg and then gently stir to combine the rice with the egg. Add the scallion and stir-fry just until the scallion has softened, about 30 seconds more. Remove from the heat, taste, and, if desired, season with salt, although chances are the fried rice will be plenty salty from the soy or fish sauce.

Serve

Transfer the fried rice to a serving plate or shallow bowl. Serve with small bowls of additional soy or fish sauce on the side along with the jalapeño garlic vinegar, if desired. Originally published March 12, 2019.

Spicy Mushroom Rice Recipe

white rice

butter

shallot, sliced

jalapeno, diced

marsala wine

1/4teaspoon fresh ground black pepper

Start by melting the butter in a large skillet over medium-high heat.

Add in the sliced mushrooms and let brown, stirring, for 10 minutes.

Next add the shallot, jalapeño, salt and pepper and let cook for another minute or two.

Deglaze the skillet with the marsala wine and let reduce for 2 minutes.

Add the soy sauce and stir, then add the cooked rice.

Stir together and then season with more salt and pepper to taste if needed.

Simple and tasted amazing! Decided to cook for the wife for a change and she couldn't stop complimenting me. Thank you! =)

Don't wash mushrooms. They absorb water which makes them harder to brown. Put them in a dish towel or bag and gently shake the dirt off. Great recipe. Looks delicious.

Just made this but added ground sausage to the mix. Omg so good, using the leftovers to stuff some butternut squash! This will be a fall staple.

I've mad this recipe a ciuple of times. The first one exactly like the recipe states. The second I added an item to add a slight crunch to give it some more texture. They were both excellant! I just wish I could remember the crunchy ingredient. LOL!

I love this recipe, especially the mushrooms. My husband loves sautéed mushrooms on his steak so this will be my go to recipes from now on. My only criticism would be that I found it to be a little salty, but that’s a very personal preference.  Reheats nicely.

Being from Louisiana, this is basically rice with soy sauce. Not impChelebaileyley1ileyressed.  Without the seasoning I added, it has to bland. But hey, to each her own....we like food with kick. This ain't it.

I stumbled on this recipe looking for a side dish.  I followed the recipe  but used chicken broth as I didn’t have marsala wine.  It was sooooo very good!   It tasted phenomenal the next day.
I just recently  made it again and added bacon and let me tell you, the flavors of everything just popped.  
This is the most simplest side dish recipe I’ve made that can be tweaked but tastes wonderful any which way you add to it.
I always double it!

Spicy Mushroom Rice

Spam fried rice with egg takes less than 20 minutes to cook. Crispy pan-fried Spam, fluffy eggs, and simple vegetables creates a delicious weeknight meal that the whole family will love.

Quick Spam Fried Rice

tbsp oil (divided)

eggs (beaten)

oz Spam (low sodium preferred)

garlic (minced)

peas (thawed)

corn kernel (thawed)

rice

oyster sauce

tsp sesame oil

tsp white pepper (or black pepper)

To make the fried riced sauce, mix all the ingredients in a small bowl and set aside.

Heat a tablespoon of oil in a wok or a large skillet over med-high heat. Add the beaten eggs and stir until they are half cooked (still slightly wet). Transfer the eggs to a plate and set aside.

Heat another tablespoon of oil, add Spam pieces and fry until they are crisp and slightly browned, about 2-3 minutes. Add garlic, green onion and stir fry for 1 minute.

Add peas and corn and continue to fry for 30 seconds. Add rice and toss with spam and vegetables until rice grains are separated and well incorporated.

Pour the sauce over and toss well with fried rice. Add the reserved scramble egg and continue to toss to heat through. Serve hot.

Rice Pudding For One

Preheat the oven to 325° F (165° C). Lightly butter a 4x6 or a 5x5-inch baking dish.

In a medium-sized bowl, whisk together the egg, milk, salt, cinnamon, nutmeg, sugar, and vanilla.

Stir in the rice and pour into a small baking dish.Pro Tip: I use a 4x6-inch baking dish that has a base area of 24 square inches. You can also use a 5x5-inch baking dish with a base area of 25 square inches or a 6x6-inch dish which will yield a thinner pudding and may bake faster.

Boil a kettle of water to make a water bath. Place the baking dish with the rice pudding into a larger baking pan. I use either an 8x8-inch pan or an 8 or 9-inch round pan. Pour the boiling water into the larger pan until it reaches halfway up the sides of the rice pudding dish.Place the pan on a rimmed sheet pan which will make it easier to transfer into and out of the oven.Pro Tip: This is called a water bath or a bain marie. A water bath is a dish of water used to bake recipes requiring gentle, even heat. It insulates the dish so that it doesn&#39;t overcook. Please don&#39;t be put off by this, it&#39;s incredibly easy. You will need to find a pan that will comfortably hold your small baking dish while maintaining an inch or more of space around the sides for the water. A small to medium-sized roasting pan works well.

Place the pan in the oven and bake for 50-55 minutes, until lightly browned and set.

Enjoy with whipped cream, if desired.

These colorful rice balls are made with leftover rice. You can easily adapt the recipe for any vegetables you have on hand. Use short grain rice.

Korean soup soy sauce (gukganjang)

mayonnaise

Heat oil in a skillet and saute spinach and green onion until they are wilted. (Do not use too much oil. It will prevent the rice grains from sticking to each other) Season with Korean soup soy sauce.

Combine rice, ham, and sauteed spinach in a mixing bowl; mix well.

Take a heaping tablespoonful of rice mixture and gently squeeze to form a ball, about 1 1/2-inch in size.

For Ham and spinach rice balls

Chop the egg whites finely.

Using a strainer and a spoon, mash the egg yolks to crumble. In a mixing bowl combine egg whites, egg yolks, pickled radish, rice, and mayonnaise; mix well. Season with salt according to your taste.

For egg and pickled radish rice balls

Heat oil in a skillet. Saute mushroom and vegetables with garlic and ginger. Season with Korean soup soy sauce, and sesame oil.

Combine the mushroom mixture with the rice in a mixing bowl; mix well. Season with salt and pepper according to your taste.

For mushroom and vegetable rice balls

This is a great recipe to use up leftover rice or ring bologna or sweet corn. Clean out your fridge or freezer!

Ring Bologna And Sweet Corn Fried Rice

Heat 1 tablespoon of butter in a large skillet.Add in the eggs and scramble until fully cooked. Remove them from the pan and set aside.

Add the remaining tablespoon of butter into the pan.Add the carrots and onion to the pan and cook until tender, 3-4 minutes. Stir in the garlic and cook for an additional minute.

Add in the cold rice and sauté for 2-3 minutes. The rice should brown up a bit.Stir the eggs back to the pan along with the peas and shredded chicken.

Pour in the soy sauce, oyster sauce and sesame oil. Cook for 1-2 minutes or until everything is heated through.Serve immediately with green onions for garnish, if desired.
