These bright and zingy lemon bars are easy to make and so delicious!

Lemon Bars

all-purpose flour

powdered sugar (66 grams,

tsp salt

tbsp unsalted butter (melted, 170 grams)

tbsp lemon zest (zest of three lemons)

sugar (600 grams)

eggs (large, room temperature)

lemon juice (fresh, 240 milliliters)

Heat oven to 350F and line a 9x13 baking dish with parchment paper.

Whisk together 2 1/2 cups of flour (300g) with the powdered sugar and salt, then pour in the melted butter and mix until combined. You can also do this using a stand mixer with a paddle attachment. If you&#039;d like a dash of vanilla can be added in with the butter at this step.

Sprinkle the dough into your lined pan and press down into a flat layer. Bake at 350F for about 20 minutes or until a light golden color.

While the crust is baking add the sugar to a food processor and add the zest of three lemons. Pulse until the zest is fully incorporated and sugar is a light yellow color. If you don&#039;t have a processor just mince the zest and mix with the sugar in a bag or bowl.

Add the sugar and remaining half cup of flour to a large bowl and mix well. You can sift together however and zesty sugar bits will need to get dumped out of the sifter as they might clog things up and not go through.

Pour in the lemon juice and add the eggs then mix very well until completely combined.

Pour the filling onto the warm crust then transfer to oven and bake for about 25 minutes, turning halfway through the bake. Remove from oven and allow to cool for an hour before chilling in the refrigerator for two hours.

Dust with powdered sugar and cut into bars using a clean, sharp, damp knife. Clean and re-wet the knife after each cut.

Sweet, tangy and decadent raspberry lemon bars! The crisp crust delivers a delicious tangy raspberry lemon custard that will stick to your fingers.

Raspberry Lemon Bars

unsalted butter (at room temperature (1 cup))

sugar

salt

lemon zest (grated)

lemon juice

cornstarch

raspberries

eggs

lemon juice (freshly-squeezed)

Preheat oven to 350°F.

Lightly spray a 9x13-inch baking pan with cooking spray. Using a mixer fitted with a paddle attachment, cream the butter and sugar together on medium speed (about 2 minutes) until light in color. Add the lemon zest and mix for a few seconds.

Combine the flour and salt in a separate bowl. With the mixer on low, add the flour mixture to the butter until just mixed, about 1 minute. Place the dough onto a well-floured board and gather into a ball and transfer to the baking pan. Using your fingers, evenly press and flatten the dough into the baking pan.

Chill the dough for 15 minutes. Bake the crust for 15 to 20 minutes, until very lightly browned. Cool the crust in the baking sheet on a wire rack for about 30 minutes, until the dough is slightly firm. Keep oven heated to 350°F.

Put the sugar, cornstarch, and lemon juice in a small saucepan and whisk together. Add raspberries to the saucepan. Cook over medium heat, constantly whisking until the puree has broken down and thickened and has come to a bubble, about 6 minutes. Strain the hot thickened puree, discarding the seeds. Set the strained puree aside, at room temperature until ready to use.

To make the filling, whisk together the eggs, sugar, lemon zest, and flour until combined. Gradually add the lemon juice and whisk until combined and pour over the crust. Add about a tablespoon-sized spoonfuls of raspberry puree around the entire surface of the lemon mixture. Quickly drag a toothpick across the surface to create swirls.

Carefully transfer to the oven. Bake for 30-35 minutes until the filling is set in the center. Let cool to room temperature.

Cut into squares or triangles and dust with confectioners' sugar.

Classic Lemon Bars Recipe

unsalted butter ((16 Tbsp) room temperature)

tsp vanilla extract

eggs (room temperature)

lemon

lemon juice (freshly squeezed (from 5 large or 8 medium lemons))

Confectioners sugar (to dust)

PREP: Preheat oven to 350˚F. Line a 13x9x2” baking pan with parchment paper (it should go most of the way up the sides so filling doesn’t spill over.

CRUST: In the bowl of a stand mixer fitted with the paddle attachment, cream together softened butter and 1/2 cup sugar. Add 1 1/2 tsp vanilla extract, 2 cups flour and 1/4 tsp salt. Continue mixing until mixture is crumbly and no dry flour remains. Spread the dough evenly into the bottom of your prepared pan. Press it with your fingertips to flatten and even out the dough. Bake crust at 350˚F for 18-20 minutes or until lightly golden at the edges. Transfer to a wire rack to cool slightly.

FILLING: While the crust is baking, zest then squeeze the lemons and prepare your filling. In a large mixing bowl, whisk together eggs and sugar until blended. Add Lemon juice and lemon zest and whisk to combine. Add 1 cup flour and whisk until smooth and very well blended and no traces of flour remain.

BAKING: Pour filling over the warm crust and bake in the center of a preheated oven at 350˚F for 30-35 minutes or until the filling is set. As soon as the filling is no longer wobbly in the center, remove from the oven so you don’t over-bake. Cool in the pan at room temperature for at least 1 hour then refrigerate for at least 2 hours before serving.

TO SERVE: Pull the parchment paper up slightly to loosen from the pan then transfer to a cutting board and cut into 18-20 squares then dust the tops with powdered sugar.

How To Make Classic LEMON BARS - Easy Recipe

These family friendly no fail easy Lemon Bars come together quickly with a three ingredient graham cracker crust and microwave lemon curd.

Nonstick cooking spray

Preheat oven to 325 degrees. Spray 9 x 13 inch baking dish with nonstick cooking spray. In small bowl combine graham cracker crumbs, 6 tablespoons melted butter and 2 tablespoons sugar. Press evenly into baking dish.

Melt 4 tablespoons butter and allow to cool for 5 minutes. In medium microwavable bowl combine 1/2 cup sugar and egg yolks until smooth. Whisk in lemon juice, lemon zest and melted butter. Microwave in one minute intervals, stirring after each minute until the mixture is thick enough to coat the back of a spoon. Curd will thicken more as it cools.

In stand mixer with paddle attachment mix 1/2 cup sugar and cream cheese until smooth. Turn mixer to low; add lemon juice and 1 egg at a time mixing just until incorporated. Pour cream cheese mixture over graham cracker crust.

Using lemon curd make three lines the length of the baking dish going all the way to the edge. Using a shish kabeb stick or chop sticks make small S&#8217;s through each line. Don&#8217;t go too deep as you do not want to disturb the crust. Bake 35-40 minutes or until set in the center.

Cool completely before slicing.  For best results refrigerate for several hours up to overnight.

Easy Creamy Lemon Squares

graham crackers

14 oz can of sweetened condensed milk

lemons (about 5-6 lemons)

Whipped cream

Pre heat your oven to 350 degrees

Prepare an 8x8 baking pan by cutting 2 pieces of parchment paper and overlapping them into a cross shape. Make sure the paper overlaps the sides of the pan a little bit. This will be your handles later when you lift the baked bars out of the pan.

Place graham crackers into a food processor and blend until it is all crumbs. You will need about 2-3 of the small packages in the box to make 1 1/3 cups of crumbs.
