Soft and tender Lemon Yogurt Cake with a crunchy lemon crumb.

Lemon Yogurt Cake

butter, melted

(1/4 cup) plain flour flour

(2 tablespoons) caster sugar or granulated sugar

lemon

(1 and 1/2 cups) plain flour or all purpose flour, sifted

baking powder

(3/4 cup) caster sugar or granulated sugar

salt

120 ml (1/2 cup) vegetable oil

eggs, room temperature

vanilla extract

lemon juice,

120 ml (1/2 cup) full fat Greek yogurt

(1/4 cup) icing sugar

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.

First, make the lemon crumb. In a small bowl, combine melted butter, flour, sugar and lemon zest until soft crumble forms. It will look like wet sand. Set aside.

In a large mixing bowl, add flour, baking powder, sugar, lemon zest and salt. Stir briefly to combine.

In a separate bowl, add oil, eggs, vanilla and lemon juice. Whisk briefly just to break up the egg yolks.

Add wet ingredients to dry ingredients, as well as the yogurt, and gently mix using a spatula until combined – but be careful not to over mix. Batter will be fairly thick. Spoon batter into prepared tin.

Sprinkle the lemon crumbs evenly over the top of the cake. Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.

To make the glaze, mix together sugar and 1 tablespoon of lemon juice. Stir until smooth. If the glaze is too thick, add an extra tablespoon of lemon juice. Drizzle glaze all over the cooled cake.

Absolutely delicious. Tasty, moist and light cake. And that lemon crumb is incredible! I thought your Cinnamon Apple Cake was amazing (and it still is), but this one has now become our favourite!

I made this cake for my husband's birthday and it not only turned out great but tasted wonderful! It was probably the easiest cake I have ever made.

My question is: can I bake this in a 9X5 loaf pan? I plan on baking it, packing it well and taking with us on a friend's trip to Kona. What is your thoughts on using the loaf pan?

Easy and decadent Cream Cheese Lemon Crumb Cake! Perfectly sweetened, moist and flavorful lemon cake with a cream cheese ripple, crumb topping, and tangy lemon glaze.&nbsp;

Cream Cheese Lemon Crumb Cake

flour

sugar

baking soda

butter (softened)

vanilla

eggs

lemon juice ((about 1 small lemon))

fat free half and half ((or other milk))

cream cheese (softened)

egg egg yolk

butter (melted)

brown sugar

lemon zest

juice and zest of 1 small lemon

milk (as needed)

Preheat oven to 325 degrees. Grease and flour a 9-inch springform cake pan.&nbsp;

Prepare the cake batter first. In a large bowl whisk together flour, sugar, baking powder, baking soda, and salt. In a medium bowl cream together butter, vanilla, eggs, lemon juice, and half and half/milk for 3-4 minutes until fluffy and smooth. Combine wet ingredients and dry ingredients and mix until combined and there are no more streaks of flour. Pour into prepared cake pan.&nbsp;

Prepare the cream cheese layer. In a medium bowl cream together cream cheese, sugar, egg and egg yolk, and lemon zest until smooth. Pour into the center of the cake pan, spreading evenly with a spatula over the cake batter BUT be sure to leave a 1/2 inch between the cream cheese layer and pan sides so that the cream cheese mixture is not touching the pan and not quite covering the cake batter.&nbsp;

Prepare the crumb topping. Mix together butter, sugars, flour, and lemon zest until mixture resembles large crumbs. Spoon crumb mixture into the cake pan, covering both the cream cheese layer and the cake batter completely.&nbsp;

Bake for 40-45 minutes in preheated oven until an inserted toothpick comes out clean. Allow to completely cool on a cooling rack before releasing the springform latch and removing the ring.&nbsp;

Prepare the glaze by mixing together powdered sugar, lemon juice and zest, cream cheese until combined, then mix in milk one tablespoon at a time until smooth and pourable. Drizzle over cooled cake and serve. If making ahead, store cake in airtight container or cover in plastic wrap and wait to drizzle glaze over the top until just before serving.&nbsp;

Read through the whole recipe and thought this might be a long process but got all the ingredients ready and in no time it turned out so easy and was a hit at our party! Worth the try and so tasty!

This cake was delicious! I need to practice pouring the cream cheese part over the batter because mine definitely touched the sides but it still tasted great! Thank you for the tip on the springform pan too!

I'm a lemon lover. This did not turn out like I expected. It was ok. The flavors are good. It did not look anything like the picture. I followed the recipe, except I did cook it 20 minutes longer because it was still very wet after 45 minutes. It ended up being a very dense cake. I don't like leaving negative comments. It was ok for a one-time-something-different, but it won't go into my Favorites Recipe book.

This tasted amazing! I do love lemon flavored desserts. I baked for 45 minutes and then let stand on the counter until it was completely cooled.

This is a unique and delicious cake. The three layers are so good, and it would be great at parties. The two major things you need to know about this recipe are the creaming of the butter and the bake time. 

Other reviewers have mentioned how the butter mixture hasn't creamed properly and I found the same. Honestly you're probably better off creaming the sugar in with the butter, otherwise your butter mixture will be too wet and look curdled. I've made this twice now following the recipe and in the future i'm going to cream the sugar in with the liquids. HOWEVER if you don't add the sugar in with the butter, it's ok! You can still bake it! Try to get the butter bits as small as you can, and mix them with the dry ingredients  and it'll bake off fine. 

The other thing about the recipe is you should probably bake it for longer. At 45 minutes my cake was still jiggly. You can check with a toothpick and make sure it isn't wet. The bake time that worked for me was 80 minutes.

I had trouble with creaming the butter with the lemon juice and the milk but I put the lemon juice and butter in first and mixed it the best I could.  then I added the milk and the rest of the wet ingredients.  It never actually creamed together but I just added the dry ingredients and then everything blended well.  It turned out beautifully and my family loved it.  Ill definitely make it again!

THE CAKE TURNT OUT AMAZING AND DELICIOUS, I TOOK OFF A STAR BECAUSE OF MULTIPLE THINGS: creaming the butter, eggs, cream, and lemon juice did not work at all, spent about 10+ minutes trying to make it come together, but it curdled. took the butter out and microwaved it and mixed it fine by itslef, then added the ingredients SEPARATELY into flour. For baking it, i put it in at 325 for 45, i checked it and it was nowhere near done put it up to 360 and the middle started to cook. my family loved the cake, will be making it again and again in the future but will tweak some things. thank you for this recipe.
