lemon loaf recipe

This lemon pound cake comes together easily with some quick tips and simple ingredients. You bet we're enjoying it as a snack, dessert, and breakfast.

Lemon Pound Cake

all-purpose flour

baking powder

salt

lemon

unsalted butter (two sticks, at room temperature)

sugar

eggs (at room temperature)

sour cream (at room temperature)

vanilla extract

lemon (juiced)

lemon juice

heavy whipping cream

Preheat the oven to 350°F and spray an 8×4 inch loaf pan with nonstick cooking spray. Set aside.

In a medium bowl, whisk together the flour, baking powder, salt, and lemon zest; set aside.

Using a stand mixer fitted with a paddle attachment beat the butter until creamy, about 1 minute.

Add the sugar and beat for 2 minutes until creamed, scraping down the sides of the bowl.

Turn the mixer down to low speed and slowly add the eggs one at a time. Turn off the mixer.

Add the sour cream, vanilla extract, and lemon juice. Beat on medium speed until combined, scraping down the sides of the bowl as needed.TIP - The mixture may look curdled before adding the flour to the batter. This is normal and it will smooth itself out after you mix in the flour.

Slowly add in the flour mixture and mix until just combined. Avoid overmixing the batter.

Evenly spread the batter in the greased loaf pan and bake for 50-65 minutes.

Set the cake on a cooling rack and allow it to cool completely before icing.

Add all of the icing ingredients to a medium size mixing bowl and whisk until thick and pourable.

Pour the glaze over the top of the cake. Let the cake sit for about 30 minutes to 1 hour to allow the glaze to set. Serve and enjoy!

Lemon Loaf (Starbucks Copycat!)

Tablespoons lemon zest

unsalted butter (softened)

neutral cooking oil ((canola, vegetable, or avocado oil))

sour cream

eggs

cake flour ((see note to sub all-purpose flour))

table salt ((or fine sea salt))

lemon juice (as needed)

½ Tablespoons salted butter (melted)

Preheat oven to 350F (175C) and lightly grease and flour a 9x5” (23x12cm) bread pan or line with a parchment paper sling. Set aside.

Cream butter, sugar, and zest: In a large mixing bowl, combine sugar, butter, and lemon zest and use an electric mixer to beat until light, fluffy, and well-creamed (about 3-4 minutes on medium-high speed).

Stir in the oil until well combined.

In a separate bowl or large measuring cup, whisk together sour cream, egg yolks, lemon juice, and vanilla extract until well-combined, and then stir into the butter mixture on low-speed until fully incorporated. Set aside.

Whisk together the dry ingredients & add to the batter: In a separate mixing bowl, whisk together cake flour, baking powder, and salt. Gently fold the dry ingredients into the wet until completely combined.

Whip the egg whites. In a separate, medium-sized clean, dry, grease-free mixing bowl, use an electric mixer (with clean, dry beaters), to beat the egg whites on low-speed, then gradually increase to high and beat until you have stiff peaks (mixture will be thick, white, fluffy, and voluminous and the peaks that form when you lift the beaters out should hold their shape and not dissolve back into the bowl).

Fold in egg whites. Add the egg whites to the batter and use a spatula to gently fold together until batter is just combined, smooth and uniform. Pour evenly into prepared loaf pan.

Bake. Transfer pan to center rack of 350F (175C) preheated oven and bake for 74 minutes or until a wooden skewer inserted in the center comes out clean or with a few moist crumbs (no wet batter).

Allow the loaf to cool in the baking pan for 15 minutes before running a knife around the edges to loosen and carefully removing to a cooling rack. Prepare the lemon glaze.

Lemon glaze: Whisk together powdered sugar, 1 Tablespoon lemon juice, butter, and vanilla extract. Continue to add lemon juice as needed until mixture is smooth. Spread or pour evenly over loaf (it’s OK if it’s still warm).

Allow loaf to cool and glaze to set for at least 30 minutes after frosting before slicing and serving.

This recipe took a lot of time to prepare. I did not use cake flour which I realize probably contributed to the very dense texture when it was finished. The taste wasn't bad but not as lemony as a slice from Starbucks. The cook time at 74 minutes resulted in a crusty bottom and sides. I checked the loaf at 60 minutes and it was still raw in the middle, so I let it continue for the 14 minutes thinking it needed that time to finish. If I make it again I will add lemon extract in place of the vanilla and hopefully cut back on the cook time. I used a metal loaf pan and wonder if a glass pan would have had a different outcome.

I cut this open and it looked EXACTLY like the pictures. 🤩 It also reminded me a lot of the lemon loaf at Starbucks, especially the glaze! Very lemony especially for a recipe with no lemon extract. Thanks Sam.

Really tasty! Good lemon flavor and nice and moist. Used all-purpose flour and made the simple syrup. Great recipe! Friends and family loved it!

Made the recipe, and tihen immediately made a double batch right after trying! The cake is sooooo soft and the taste is delicious and addictive! The whole family loved it
