Simple to prep and so flavorful, this Lemon Orzo Salad is so quick to toss together and a perfect side dish for any meal. Loaded with fresh herbs, cucumbers, peppers and lots of feta. Lemon zest and juice give the salad a vibrant and fresh flavor everyone will love!

Easy Lemon Orzo Salad with Feta

orzo (uncooked)

red bell pepper, chopped

cucumber,

red onion, small diced

feta cheese, crumbled

2-3 garlic cloves,

c fresh parsley, chopped

¼ c fresh basil, chopped

lemon (1.5-2 oz juice)

c extra virgin olive oil

T honey

tsp sea salt

½ tsp cracked pepper

Cook orzo according to package instructions. Chop and prep all veggies.

When orzo is cooked al dente, drain the water and then pour cold water over the orzo to cool it off. Drain the water completely.

Add the orzo and all other ingredients into a large bowl (you can wait to add the honey until after tossing.) Toss the salad well. Add more olive oil if desired and adjust salt and pepper to taste.

Chill until ready to serve. Toss just before serving and add an extra drizzle of olive oil if desired. Refrigerate in a sealed container for about 5 days.

Cucumber Lemon Orzo Salad

dry orzo pasta

olive oil

lemon juice

garlic, (minced)

cucumbers, (chopped)

arugula, (loosely packed)

parsley, (minced)

tbsp. fresh mint, (minced)

Combine the olive oil, lemon juice, and garlic in a small bowl and set aside.

Bring 4 cups of water to a boil. Cook orzo in the boiling water for 9 minutes, stirring occasionally. Strain the orzo well and transfer it to a large bowl. Toss with olive oil/lemon juice mixture and place in the refrigerator to cool.

Prepare the vegetables and herbs.

Toss the cucumbers, arugula, herbs, and pine nuts with the orzo. Add salt and pepper and return to the refrigerator for at least 30 minutes before serving. Serve with fresh lemon wedges and freshly ground pepper.

mini cucumbers (or 1/2 English cucumber) (chopped)

cooked/rotisserie chicken

Boil a salted pot of water and cook the orzo al dente according to package directions. Once it&#039;s done, rinse it with cool water and let it drain thoroughly. Transfer to a large bowl.

Meanwhile, prep all the salad ingredients and add them to the bowl. If you&#039;re not going to eat the salad right away, I suggest skipping the arugula.

Add the dressing ingredients to a jar or small bowl, and whisk/shake until well combined.

Toss the salad with the dressing. Add more lemon/oil if needed. I also add plenty of salt &amp; pepper - there&#039;s a lot of pasta in here, so you need to salt it well so it doesn&#039;t taste bland.

Lemon Orzo Salad

(60 ml) extra virgin olive oil

lemon

Dijon mustard

maple syrup (, (or 1 heaping teaspoon sugar))

garlic (, grated or very finely minced)

black pepper

OPTIONAL ¼ teaspoon red pepper flakes

feta (, for crumbling when serving)

Bring a large pan of generously salted water to a boil.

While waiting make the dressing. Add all of the ingredients to the bottom of a large salad bowl (the one you&#39;ll be making the salad in) and whisk together. You can also shake it together in a jar if you prefer.

Once the water is at a rolling boil add the orzo. Immediately give it a stir, then cook, stirring briefly every couple of minutes until al dente. It usually takes about 1 to 2 minutes less than the package instructions say to cook it for. Keep testing a bit and as soon as it&#39;s barely done (softish when you bite but still firm in the centre) that&#39;s it. It will continue to soften once mixed with the dressing so it&#39;s important not to overcook it.

Drain the orzo immediately using a sieve, and tip it into the salad bowl with the dressing while still warm. The orzo will suck up all of the lemony dressing quite quickly.

Add the arugula leaves and toss everything together. It will look like too much arugula at first but the leaves wilt with the lemon juice and it ends up being just right.

If using the optional vegan feta, crumble it over the salad before serving.

You can watch the video in the post for visual instructions.First, cook the orzo following the package directions minus 1-2 minutes, until al dente. Then, drain the pasta and leave it to cool.Use vegetable stock/ bouillon when cooking the orzo pasta for more flavor.

Meanwhile, prepare all the vegetables. To do so, rinse and dice them into similar bite-sized pieces.

Prepare the lemon vinaigrette by combining all the ingredients in a small bowl - whisk (or blend) well.

Finally, assemble the orzo salad by combining all the ingredients in a large bowl/ serving dish. Pour over the dressing, and toss to combine, then enjoy!
