Truly chewy keto bagels - you want them and I've got them! These bagels are low carb, nut-free, and take only 5 ingredients to make. Easy and delicious, they will take your healthy breakfast to a whole new level.&nbsp;

Keto Fathead Bagels

coconut flour (56 grams)

tsp baking powder

tsp xanthan gum

oz pre-shredded part skim mozzarella

eggs

sesame seeds

tsp poppyseed

onion

salt

butter

Preheat the oven to 350F and line a large baking sheet with a silicone liner. In a medium bowl, whisk together the coconut flour, baking powder, and xanthan gum. Set aside.

In a large microwave safe bowl, melt the cheese on high in 30 second increments until well melted and almost liquid. Stir in the flour mixture and the eggs and knead in the bowl using a rubber spatula.

Turn out onto the prepared baking sheet and continue to knead together until cohesive. Cut the dough in half and cut each half into 4 equal portions so that you have 8 equal pieces of dough. &nbsp;

Roll each portion out into a log about 8 inches long. Pinch the ends of the log together.&nbsp;

In a shallow dish, stir together the sesame seeds, poppyseed, dried onion, and salt. Brush the top of each bagel with melted butter and dip firmly into the everything seasoning. Set back on the silicone mat.

Bake 15 to 20 minutes, until the bagels have risen and are golden brown.&nbsp;

These Keto bagels are just as soft and chewy as regular bagels! Made with just 6 ingredients, they are ready in only 30 minutes.

Keto Bagels

mozzarella

almond

egg (large, beaten)

cream cheese

tbsp psyllium husk powder

poppy / sesame seeds (optional)

Preheat the oven to 180 Celsius / 350 Fahrenheit.

Melt the mozzarella and cream cheese in the microwave (60-90 seconds). Or, melt on the stovetop over low heat in a non-stick pan.  

In another bowl, mix the dry ingredients - almond flour, psyllium husk powder and baking powder.

Add dry ingredients plus the beaten egg to the melted mozzarella mixture. Combine with a spatula, then knead with your hands until you have a smooth dough. Alternatively, mix in a stand mixer or food processor.

Form a large dough ball and cut it into 6 segments. 

Form each segment into a log (11 centimetres long). Lay them down in a circle and pinch the ends together to make bagel shapes.

Place the bagels on a baking sheet lined with parchment paper. Sprinkle with poppy seeds or sesame seeds. 

Bake for 20 minutes or until golden. 

I have an allergy to almonds and already have kidney stones for using almond flour in place of  wheat flour so almond flour is off the menu for me and I not liking the texture or taste of coconut flour as a replacement  I have been seeing a lot of keto sites using bamboo fiber.  It's fine ground so should be ok to replace the almond flour with it.  I'm going to give it a try.  Love me a bagel sandwich, whish me luck!

Thank you so much for sharing your recipes! I used your gluten free Victoria sponge recipe for a birthday cake for a child who had been unable to enjoy cake as she did not like the GF products on the market. With a few tweaks per her preference, it was a big hit and now kept on hand for her.

Took a few goes to get them right but think I have it now.  Lovely for breakfast or lunch with cheese and salad.

These taste absolutely delicious!  But mine turned out almost purple, I assume from the physulum husk powder.  I wonder why.  Also, can I flatten these before baking so I can use them for sandwiches?  It certainly tastes like bread!
