Coconut Shrimp with Spicy Mango Dipping Sauce

jumbo shrimp (peeled, tails on)

breadcrumbs

eggs

coconut (shredded)

salt and pepper (to taste)

vegetable oil

mayonnaise

mango (cubed, about ½ cup to ¾ cup)

honey

sriracha

curry powder

salt

lemon juice

cilantro

Prepare Spicy Mango Dipping Sauce:

In a blender, combine mayonnaise, cubed mango, honey, sriracha, curry powder, salt, lemon juice, and cilantro. Blend until smooth and refrigerate.

Heat Oil for Frying:

Fill a Dutch oven or deep frying pan with about 1 1/2 inches of vegetable oil. Heat the oil until it reaches a temperature between 350°F (175°C) and 375°F (190°C), ensuring it&#39;s hot enough for frying the shrimp to a perfect crisp.

Prepare Shrimp:

Set up a breading station with three plates - one with breadcrumbs, one with beaten eggs seasoned with salt and pepper, and one with shredded coconut. Dredge each shrimp in breadcrumbs, then in egg, and finally in coconut.

Fry Shrimp:

Once oil is hot, fry shrimp in batches for about 2 minutes or until golden and crispy.

Serve:

Mango Sauce For Chicken, Fish And Seafood

mango (cubed /fresh and ripe)

olive oil

lemon juice (lime juice

tbsp ketchup (whole30 approved)

Dijon mustard

onion (or 1/2 large)

garlic

tbsp maple syrup (optional (if not whole30))

tsp sea salt

tsp black pepper

habanero peppers (or 1 tsp chili sauce

Add all ingredients to a food processor or blender. Process until smooth, for about 1 minute.

You can use it raw as it is, or cook it for longer storage. Just add the sauce you just made to a large pan and bring to a boil. Reduce heat and simmer for 5-7 minutes.

Cool the mango sauce then transfer to a storage container.
