This is Mary's classic lasagne recipe which has been perfected over the years. For the best results leave the lasagne to stand for six hours before cooking. 

Each serving provides 861 kcal, 50g protein, 56g carbohydrates (of which 17g sugars), 47g fat (of which 23g saturates), 5.5g fibre and 1.4g salt.

tbsp redcurrant jelly (optional) or 1 tsp caster sugar

75 grams/3 ounces mature cheddar, grated

This will become a firm family favourite as it can be cooked in one dish and is so quick and easy to put together. Choose your favourite type of local, British sausage for this recipe – my family loves leek and sage.

200 milliliters/7fl oz white wine

Salmon risotto is such a quick and easy dish: the creamy rice is complemented here by the salmon and peas. Be careful not to overcook the risotto, though, or it will be stodgy.

Salmon, fennel and pea risotto

milliliters/1 pint 6fl oz hot fish or vegetable stock

sunflower oil

fennel bulb (or 1 small bulb), trimmed and finely chopped

225 grams/8 ounces arborio or risotto rice

300 milliliters/10fl oz dry white wine

150 grams/5½oz frozen petits pois

½ lemon, juice only

x 150 grams/5½oz salmon fillets, skinned and thinly sliced

tbsp full-fat crème fraîche

grams/1 ounces Parmesan, grated, plus extra for sprinkling

grams/2 ounces pea shoots, to ganish (optional)

A wonderfully comforting chicken pasta bake, this can be made ahead and will go down really well with the family. 

Each serving provides 532 kcal, 35g protein, 46g carbohydrates (of which 10g sugars), 22g fat (of which 11.5g saturates), 4.5g fibre and 0.9g salt.

Pork fillet is a really tender cut so great for quick-cook dishes like Mary's creamy pork stroganoff. It makes a great change from beef and tends to be cheaper and leaner, too.
