Soft &amp; chewy matcha sugar cookies with crispy edges and a soft and delicious texture inside!

Vegan Matcha Sugar Cookies

vegan butter (cold)

+ 2 Tablespoons sugar (1/2 cup for dough, 2 Tbsp

matcha powder

flax egg (1 Tbsp (8 grams) ground flaxseed mixed with 3 Tbsp water)

vanilla bean paste (or vanilla extract)

First add the butter, 1/2 cup of the sugar, and the matcha powder to a mixing bowl and cream together until light and fluffy, about 1 minute. Then, add in the flax egg and vanilla extract and whip together about 10 more seconds to combine.

Next, add in sifted flour, baking powder, and salt to the mixing bowl. Mix until a thick, yet slightly sticky, cookie batter forms. Do not overmix or else you will form too much gluten and the cookies will not spread as much and will be tough.

Next, cover the mixing bowl of dough and add to the fridge to chill for 30 minutes- 1 hour.

Cover a baking sheet in parchment paper and preheat the oven to 350F. Next, remove the dough from the fridge and use a 2 Tbsp cookie scoop to form your cookie dough (about 45 grams of dough per cookie). Roll into balls between your palms and then roll in the 2 Tbsp of sugar that was set aside so that each dough ball is coated in sugar.

Place the matcha cookie dough balls onto the baking sheet. Then, slightly press each dough ball down with your palm.  Make sure that each cookie is kept about 2 inches apart since they will spread slightly while baking.

Bake for 11-13 minutes until bottoms are lightly browned and the cookie is cooked, but still has soft centers. The cookies will continue baking after they are removed from the oven so the centers should be  soft and just cooked, but not glossy or raw, when they are removed from the oven. Please be careful not to overcook these cookies as they will still be soft but will lose their "chewy" texture if overcooked.

Remove the cookie tray from the oven and immediately tap the tray on the counter to produce a more “wrinkly” cookie. Then, let the cookies cool on the baking sheet for 5 minutes. The cookies will be soft and puffy out of the oven and will naturally deflate a little while cooling.

Once the cookies have cooled, serve and enjoy!

Matcha Shortbread Cookies Recipe

(8 ounces 225 grams) butter ((softened))

¼ cups (11¼oz/319 grams) all-purpose flour

With an electric mixer, beat butter, sugar, and vanilla extract together for a few minutes until light and fluffy.

In a separate bowl, combine flour, matcha powder, and salt, and gradually add this mixture to the butter mixture.

Gather and press the dough into a flattened disk and chill until firm, about 2 hours.

When ready to bake, preheat the oven to 325°F (165°C) and line 2 baking sheets with parchment paper.

Roll out dough to a ¼ inch (6mm) thickness on a floured surface and cut circles with a 2-inch (5cm) round cutter. Place cookies on the prepared baking sheet. Gather and reroll any scraps.

Sprinkle cookies with sugar, tapping gently so that the sugar sticks, and then bake for 18-22 minutes, until the cookies are dry and firm (they should not take on any color). Transfer to a wire rack to let cool completely.

Cranberry and Matcha Cookies (with white chocolate filling)

Add room-temperature softened butter and powdered sugar to a large bowl, mix with a spatula until well combined.

Beat an egg in a small bowl until the yolk and white are combined, weigh 50g egg, add the egg to the butter-sugar mixture. Mix with a spatula until well combined.

Add all purpose flour (optionally substitute a portion of all purpose flour with almond flour and milk powder for a better taste) to the large bowl, mix with  a spatula, then with your hands until well combined. (The dough should be softer and stickier than a bread dough.)

Optionally, evenly divide the dough into two portions. Add finely chopped dried cranberries to one portion of the dough, add matcha powder to the other portion of the dough. Mix well with your hands until well combined.

Transfer the dough on a sheet of parchment paper, shape it into a 1.5&#39;&#39;X1.5&#39;&#39;X10&#39;&#39; rectangular block (*see note 1). Keep the dough in the freezer for 30 minutes until it turns slightly hard.

Preheat oven to 320°F/160°C.

Take the dough out from the freezer, remove the parchment paper, and place the dough on a cutting board. Cut the dough block into ⅕ inch (½ cm) thick slices. You should be able to get about 30 slices of cookie dough.

Place the cookie slices on a baking sheet lined with parchment paper. Optionally use a mini cookie cutter (or the larger side of a piping tip) to hollow the center of each cookie slice.

Bake on the middle rack of the oven at 320°F/160°C for 20 to 25 minutes.

Melt the white chocolate in a double boiler. (See Note 2)

Wash and cut some strawberries into thin slices. Optionally cut them into heart or flower shape with a mini cookie cutter. Soak and rinse some salted sakura flowers. Pat dry the strawberries and flowers with kitchen paper.

Fill the center of each cookie with melted white chocolate, top with a slice of strawberry, an edible sakura flower, a cashew nut, or other topping of your choice.

Leave the cookies to cool completely on the parchment paper until the chocolate  turns hard. You can keep the baking sheet in the fridge to speed up the cooling process.

Brown Butter White Chocolate Matcha Cookies

Brown your butter. Heat your butter over medium heat until it turns a golden yellow color. Pour butter in a heat proof bowl to cool. As the butter cools, it will get darker in color.

Combine flour, baking soda, salt, and matcha powder in a medium size mixing bowl. Mix well and set aside.

Next add in white sugar and brown sugar to your butter. Mix to combine. Once well combined, add in your eggs and vanilla. Whisk together. Whisk until you get a light and creamy texture (~1 minute). This is the key to getting a crisp and chewy cookie.

Once the wet ingredients are well mixed, slowly add in the dry ingredients from step 3. Combine with a spatula until a green dough forms.

Add in the white chocolate chips and mix until they are well incorporated.

Let the dough rest in the fridge for 1 hour.

Preheat oven to 350 degrees F.

Cover 2 baking sheets with parchment paper. Use a 3 tablespoon (1.5 oz) ice cream scoop to scoop cookie dough onto baking sheets. Cookies should be 2-3 inches apart.

Bake for 10-12 minutes.

Let cookies cool for 10 minutes before putting them on a cooling rack.

Cool cookies for another 15 minutes before serving.

Matcha Cookies (Soft and Chewy Green Tea Cookies)

all purpose flour

unsalted butter (room temperature)

Heat oven - Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.

Sift dry ingredients - In a large mixing bowl, whisk together flour, sifted matcha powder, baking soda, baking powder, and kosher salt and set aside.

Mix wet ingredients - In a separate large mixing bowl, use a handheld electric mixer or stand mixer and cream together butter, granulated sugar, and brown sugar until smooth and fluffy, about 1 to 2 minutes. Add the vanilla and egg and mix until combined. Use a silicone baking spatula and scrape the sides of the mixing bowl walls to bring the butter mixture to the center of the bowl.

Combine dry and wet ingredients - Gradually add in the dry ingredients and mix until the ingredients are just combined. Do not over-mix the dough.

Prepare cookie dough balls - Place the coarse sugar in a shallow bowl. Use a small ice cream scooper, cookie dough scooper, or tablespoon to scoop the dough and form 1.7 tablespoon (26 ml) cookie dough balls. Use your hands to roll the dough into balls and gently roll each ball in the sugar bowl until covered. Place the dough balls onto the prepared cookie sheets. Leave 1½-2 inches between each cookie to allow the dough to spread.

Bake the cookies - Bake for 8 to 10 minutes. The cookie will look soft in the middle and the edges will turn slightly golden. Let the cookies rest for 5 minutes on the cookie sheet then transfer to a wire cooling rack.

Pre-heat oven to 180°C (356°F).

In a medium bowl, whisk together the 0 calorie brown sugar, applesauce, olive oil and vanilla extract until well combined.

In the bowl of a stand mixer fitted with a paddle attachment, cream together softened butter, sugar, and matcha until smooth, about 3 minutes. Add egg and mix until incorporated. Scrape down bowl as needed to ensure thorough mixing.&nbsp;

In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt. Add dry mixture to mixing bowl. Mix on low speed until dough forms. Scrape down bowl as needed. Do not overmix.&nbsp;

Cover and refrigerate dough for at least 1 hour, overnight is best.&nbsp;

Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking mat. Set aside. 

Use a 1 ½ Tablespoon scoop (#40 scoop) to portion out dough. Roll into ball and coat with granulated sugar.  Place cookie balls 2-inches apart of prepared baking sheet. Bake 13-15 minutes, until the edges of the cookies are set. Allow to rest in baking sheet for 3-5 minutes before transferring to wire rack to cool.

I love most things matcha and these cookies did turn out to be soft and chewy. They were super simple to make. The only thing I did differently was adding some white chocolate chips to the dough and to the cookie tops when I took them out of the oven only because I like the flavor combination. i'm almost certain the recipe is wrong. i've tried this so many times as written and it's never close to as flat as shown. i believe it will be similar if you reduce the flour by 3-4 tablespoons. i've made other cookies with similar flatness and it's wayyy less flour than this recipe.

Adjust the oven rack to the middle position, pre-heat the oven to 355ºF (180ºC) and line two large baking sheets with baking/greaseproof paper.

In a large bowl, mix together the oil, sugar, non-dairy milk and Nature&#039;s Charm Matcha Sauce, until combined. At this point, you can also add the green food colouring (optional).

Add the flour, almond flour, baking powder and salt, and mix well until you get a smooth, soft cookie dough that shouldn&#039;t be sticky to the touch.

Spoon out about 1 tablespoon worth of the cookie dough and roll it into a ball. Roll it in sprinkles (optional), then transfer it to the lined baking sheet. Repeat with the rest of the cookie dough to make a total of 24 cookies, you should be able to fit about 12 cookie dough balls per baking sheet.

Use a 1/2 teaspoon measuring spoon to make a well in the centre of each cookie dough ball.
