Roast cauliflower cheese pizza

<p>Heat oven to 200C/180C fan/gas 6. Mix the oil and garlic, then toss the cauliflower in it. Tip onto a <a href="https://www.bbcgoodfood.com/content/kimberley-wilsons-top-5-baking-trays">baking sheet</a> and roast for 30-45 mins until the edges have browned a little and the cauliflower is tender.</p>

<p>Spread half the mascarpone on the pizza base (or bases) and season well. Scatter over the cauliflower and dot over the remaining mascarpone, then sprinkle with the cheese. Bake for 20 mins, then cool for 5 mins before serving.</p>

An easy veggie curry that makes a cheap and healthy meal. It uses basic store cupboard ingredients so is very quick and easy to cook. It's simple to make vegan too, just swap the yoghurt for a dairy-free alternative.

Each serving provides 335 kcal, 9g protein, 41g carbohydrate (of which 14.5g sugars), 12.5g fat (of which 1.5g saturates), 10g fibre and 0.5g salt.

Easy vegetable curry

potatoes

cauliflower (around 300 grams/10½oz),

tbsp sunflower or vegetable oil

onion,

tbsp curry powder

tomatoes

300 milliliters/10fl oz vegetable or chicken stock

peas

plain yoghurt

mango chutney, to serve

Toss together tagliatelle, mushrooms and spinach in a parmesan and crème fraîche sauce to make a quick and low calorie dinner that takes just 25 minutes

Creamy mushroom & spinach pasta

olive oil

baby mushrooms, halved

tagliatelle

garlic cloves, crushed

low-fat crème fraîche

baby spinach

½ tsp chilli flakes (optional)

Heat the oil in a medium saucepan over a medium heat and fry the onion and mushrooms for 10 mins, or until softened and browned slightly. Meanwhile, cook the pasta following pack instructions.

Add the garlic to the pan with the mushrooms and cook for 2 mins more. Tip in the crème fraîche and parmesan, stir to combine, then add the baby spinach. Set aside.

Remove the pasta from the heat and drain, reserving 25ml of the water. Toss the pasta in the creamy mushroom sauce, put back on the heat and cook over a low heat until the spinach wilts, about 5 mins. Pour in enough of the reserved water to loosen slightly. Season with black pepper and finish with a sprinkle of chilli flakes, if you like.

Braised sesame tofu

extra-firm tofu

½ tbsp reduced-salt soy sauce

mirin

½ tbsp gochujang

garlic cloves, finely chopped

tsp sesame seeds

spring onions, finely sliced

tbsp rapeseed oil

green beans

brown rice, to serve

Pat the tofu block dry and cut in half lengthways, then into 1cm- thick slices. Set aside on a plate lined with kitchen paper, then put another sheet of paper and a plate on top to weigh it down while you prepare the braise. Mix the soy sauce with the mirin, gochujang, garlic, sesame seeds, most of the spring onions and 200ml water.

Heat the oil in a pan over a medium-high heat and fry the tofu for 4-5 mins on each side until golden brown. Pour in the soy sauce mixture and scatter over the green beans. Bring to a simmer, and cook over a medium heat for 10 mins until the braising liquid has thickened and the green beans are tender.

Sprinkle over the remaining spring onions and serve with the brown rice.
