This spicy salsa verde chicken from Delish.com was made for lazy summer nights around the grill.

Grilled Salsa Verde Chicken

jar salsa verde, divided

olive oil

lime

garlic,

chili powder

This was sooo good. I omitted the red onion (personal preference) and used Trader Joes Hatch Chile verde and pepper jack cheese as that is what i had on hand. Will definitely be making this again!

This was such a hit, I'm making it again tonight!

Made this recipe last night and it was very good. I used medium salsa verde and marinated the chicken great for about 8 hours. I also cut the breasts horizontally before marinating. The only thing I would do differently is remove the seeds from the jalapeño as it has plenty of flavor without the seeds.

You'll Be Making This Grilled Salsa Verde Chicken All Summer Long

Mexican chicken and rice is a one-pot meal loaded with flavor. Marinated chicken thighs simmer together with healthy vegetables, black beans, and rice.

Mexican Chicken and Rice

½ teaspoon kosher salt

paprika

coriander

black pepper

chicken thighs (bone-in, skin on)

rice

onion

garlic

tomato paste

tomatoes (¼-inch dice)

corn kernels

black beans (canned,

zucchini (¼-inch dice)

carrots (¼-inch dice)

jalapeno

salt

unsalted chicken stock

cilantro leaves

limes

In a small bowl whisk together ¼ cup olive oil, 1 ½ teaspoons salt, paprika, cumin, coriander, and black pepper.

Pour marinade over chicken set in a baking dish and flip to evenly coat, marinate for 15 to 30 minutes.

Heat a large skillet or Dutch oven over medium-high heat, and 1 tablespoon of oil.

Once the oil is hot, add the chicken skin-side down and cook until skin is golden and crispy, 4 to 5 minutes.

Flip and saute another 2 minutes, transfer chicken to a clean plate.

If using a Dutch oven to cook the chicken, carefully drain the fat, wash and dry the pan.

Heat over medium-high heat, add 2 tablespoons oil. Once the oil is hot, add the rice and saute, stirring occasionally until the grains are lightly toasted.

Add in onion and garlic, saute until aromatics are fragrant, 30 seconds.&nbsp;

Add in tomato paste, stir to combine and cook 30 seconds.&nbsp;

Add in diced tomatoes, corn, black beans, zucchini, carrots, jalapeno, and 1 teaspoon salt, stir to combine.

Add chicken pieces on top of the rice mixture.

Slowly pour in the chicken stock, and bring to a boil.

Reduce to a simmer and cover. Cook until the rice is tender, about 20 minutes.

If desired, transfer chicken to a sheet pan and broil until skin is crispy 3 to 5 minutes.&nbsp;

Season rice with salt as desired and garnish with cilantro. Serve with lime wedges.

CROCKPOT DIRECTIONS: Drain the extra liquid out of the cans of rotel. Spray crockpot with a little nonstick spray. Spread 1 can of Rotel on the bottom of the crockpot. Lay chicken breasts or thighs on top of the Rotel. Sprinkle half of your taco seasoning onto the chicken.

Shred chicken and serve as desired! There will be more liquid in the pot when this Mexican Chicken is cooked in the instant pot versus the crockpot. So I like to remove my chicken breasts and shred them in a different bowl and then scoop out the corn/beans/tomatoes with a slotted spoon and add them to the shredded chicken.
