Tacos Gobernador consist of shrimp tacos with cheese smushing out of the tortillas until crispy. The end result is something foodie dreams are made of.

Tacos Gobernador

lb medium shrimp (shells removed, deveined, rough chopped)

butter

olive oil

onion (diced)

garlic (finely minced)

salt

poblano pepper (skin and seeds removed, rough chopped)

corn tortillas

Monterey Jack cheese (shredded)

Remove the shells and devein the shrimp.

Chop into pieces.

Leaving them as big chunks is fine too.

Rinse.

In a large skillet, heat up the oil and butter.

Add the onion and cook for 1 minute, until translucent.

Add the shrimp, garlic, salt, roasted poblano pepper.

Cook until shrimp are pink. About 5 minutes.

Stir occasionally.

Set aside. Let cool slightly.

Heat griddle.

Place two tortillas on the griddle.

Cook for 1 minute, then flip.

Add about 2 tbsp cheese and 2 tbsp of the shrimp filling to one side of the tortilla.

Fold over the other side to create the taco.

Press down on the tortilla, using your spatula.

The cheese will ooze out.

Once the cheese is crispy, flip the taco.

Press down again.

Once the cheese on that side is crispy, remove from the griddle.

Place in a baking dish.

Cover with aluminum foil

Continue until there are no more tortillas and filling.

Camarones a la Diabola, or Mexican Devil Shrimp, is a fiery dish where plump shrimp are smothered in a spicy tomato and chili pepper sauce. It&#x27;s a must if you love hot flavors!

6-8 garlic cloves, finely chopped, divided

guajillo chilis

oregano

cumin

Heat olive oil in a skillet over medium...

Heat olive oil in a skillet over medium high heat. Sauté tomato, ½ onion and 3 garlic cloves for a couple of minutes, then add in dried chili peppers. Sauté for 5-8 minutes. Add ½ cup water, then cook 5 minutes.

Add the above mixture to a blender or...

Add the above mixture to a blender or food processor along with oregano, cumin, salt and pepper. Blend until you have a smooth consistency.

Pat the shrimp dry with a paper towel...

Pat the shrimp dry with a paper towel and season with ½ tsp salt, ½ tsp pepper and 1 tsp paprika. Heat butter in a skillet over medium high heat, then sauté the shrimp 3-4 minutes per side. Remove to a plate.

Sauté remaining onion and garlic till the onion...

Sauté remaining onion and garlic till the onion starts to become translucent. Add the blended sauce mixture. Simmer for 10-15 minutes, then add in the cooked shrimp.

This Spicy Mexican Shrimp recipe is delicious with rice &amp; beans, or served over salad or in tacos with creamy avocado sauce. An easy healthy dinner! 

Spicy Mexican Shrimp Recipe

water stock

basmati rice

black beans

½ tsp chile powder

½ teaspoon paprika or smoked paprika

granulated garlic or onion powder

lb raw shrimp, peeled and deveined

chili powder

smoked paprika

garlic powder

coriander

chipotle powder

lime juice

Avocado Sauce

cabbage (or Mexican Slaw)

tomatoes

cucumber

mango, diced

bell pepper

cilantro

onion jalapeno

hot sauce and lime wedges

Make the Rice and Beans

In a medium pot, add water, rice, beans, salt, seasonings and olive oil. Bring to a boil, cover and cook on a low simmer until the rice is tender and water is absorbed.

Prep any veggies

Make the quick Avocado Sauce

using a blender or a food processor and chill until ready to use.

Sear the shrimp. 

Pat dry the shrimp and place them in a bowl.  Mix the spices and salt together in a small bowl then sprinkle this over the shrimp, tossing with tongs to coat them evenly. Heat a large skillet over medium-high heat. Add the olive oil. When hot, using tongs, place the shrimp carefully in the hot pan with a little space around each one. Don&#8217;t fiddle with them- sear 1-2 minutes, or until golden, before turning each one over with the tongs. Sear the other side until golden, lowering heat if need be, then turn the heat off. 

Squeeze with a little lime juice, taste, and adjust the salt and spice level to your liking.

Assemble the bowls: 

Divide the rice and beans among 4 bowls. Top with any of the optional veggies, add the seared shrimp, and drizzle with the creamy avocado sauce.

This was my perfect dinner tonight. I wanted something reasonably healthy, flavorful, and quick. Excellent instructions, delicious flavor. Do not skip the avocado cream which I wanted to eat straight from the food processor. So good! Also, loved the quick and easy take on rice and beans. I usually cook the rice and beans separately— but no more. They were great this way! Will definitely make again (and again). Thank you!
