This rich and moist pound cake has big notes of butter and vanilla. It&#x27;s an easy to make cake that melts in your mouth and will bring a smile to your face.

Pound Cake

eggs

unsalted butter (226 grams, room temperature)

sugar (200 grams)

all-purpose flour (180 grams)

sour cream (120 milliliters)

salt

vanilla

tsp baking powder

Preheat oven to 350F. Butter and flour a 9x5 inch baking tin.

In a medium bowl whisk together the flour, salt, and baking powder then set aside.

In a stand mixer fitted with a whisk attachment cream the butter. Add sugar in and mix until light and fluffy. Scrape the bowl down and beat a few more seconds.

Add the eggs in one at a time while mixing ad medium speed. Scrape the bowl down and beat until fully incorporated.

Add the sour cream, and vanilla. Mix until incorporated. Scrape the bowl down.

Add the flour mixture in and mix until combined. Scrape the bowl down and use your spatula to mix in any pockets of flour or butter that remain.

Transfer batter into tin then give a quick smooth to even the batter out a bit. Bake at 350F for about 40 minutes or until the center is set and a skewer comes out clean.

Allow to cool in the tin for about 10 minutes before transferring to a cooling rack.

Moist Mango Pound Cake

cream

Mango,

Cup Sugar

Salt

tbsp Canola Oil

tsp Coconut Extract,

Cup Unsalted Butter,

Egg(s), large eggs, at room temprature

tsp Baking Soda

tsp Baking Powder

Mango, fresh, diced

Sugar,

Pre-Prep - Preheat oven to 325 degree F. Prepare a 7 inch round pan (or square pan) with butter and flour. Rub the interior of pan with butter, then add flour and swirl it around to make a coating. Set aside. Also, peel mangoes, and using food processor puree the pulp to yield about 3/4 cup puree. (add 1-2 tbsp water if puree looks too thick or lumpy. It should be smooth like pancake batter. Not runny or too thick )

Using a hand mixer or stand mixer, cream together room temperature butter and sugar until pale yellow in color.

Batter should be creamy, pale yellow and not gritty (sugar fully dissolved)

With mixer running at low add 2 eggs (one at a time), blending well after adding each egg. Also add coconut extract, coconut milk, oil, and 1/2 cup mango while mixing. Mix on medium for good 4 minutes or until mixture has good volume, and is creamy.

In a bowl, add flour, salt, baking powder, and baking soda and sift together. Add 2 batch flour to wet mixture, 1/3 at a time, and fold with rubber spatula after every addition. Then add remaining 1/4 cup mango puree, last batch of flour and fold in.

Don't over mix. Just use gentle strokes until dry flour is moistened.

Transfer batter to baking pan and bake for 65-70 minutes or until cake is golden brown and tooth pick inserted in the center comes out clean.

Leave the cake on kitchen counter for 5 minutes.

Then loosen the edges with knife and flip the cake on cooling rack. Cool the cake completely before slicing.

This buttery vanilla pound cake is rich, moist, and packed with flavor. Perfect for slicing, topping with fruit and cream, or enjoying all on its own!

Vanilla Pound Cake

salted butter (room temperature)

tbsp neutral oil

white sugar

eggs (room temperature)

vanilla bean paste (or extract)

baking powder

fine sea salt

sour cream (room temperature)

Preheat

Preheat oven to 325°F (163°C). Generously grease and flour a 10–12 cup Bundt pan, or use a baking spray that contains flour.

Cream

In a stand mixer or with a hand mixer, cream the butter, oil, and sugar together on medium speed for 5–7 minutes, until the mixture is very pale, fluffy, and voluminous.

Add eggs one at a time, beating well and scraping the bowl after each. Then mix in the vanilla bean paste.

Whisk

In a separate bowl, whisk together the flour, baking powder, and salt.

On low speed, add the dry ingredients in 3 additions, alternating with the sour cream in 2 additions:⅓ dry → mix.  ½ sour cream → mix. Repeat, ending with flour

Mix just until combined — don’t overmix.

Pour

Pour the batter evenly into the prepared Bundt pan and smooth the top with a spatula. Gently tap the pan on the counter to remove air bubbles.

Bake

Bake for 65–75 minutes, or until a skewer inserted into the center comes out with just a few moist crumbs. If it starts to brown too quickly, loosely tent with foil around the 50-minute mark.

Cool

Let the cake cool in the pan for 20–25 minutes, then carefully invert onto a wire rack to cool completely.

This pound cake was phenomenal.   I have been baking for over 50 years.  Served it for Family Friday dinner and everyone raved about it.  Topped it with strawberries and whipped cream.  I should have used the bunt pan, it was way too much batter for my 9x5inch loaf pan.  Will definitely be making this again and again.  Lots of ideas on how to serve it. In a small saucepan or the microwave, melt butter and maple syrup together over medium heat until smooth.

Remove

Remove from heat; whisk in powdered sugar, vanilla, and salt until smooth and glossy.

If too thick, add milk or cream 1 teaspoon at a time until pourable.

Pour warm glaze over cooled cake and let it drip naturally down the sides. Enjoy!

Texture and flavors of the cake were wonderful - I did not believe I could make a cake so soft and moist - thank you for a wonderful recipe. I did feel that this cake was overly sweet though - the glaze + cake. I would adjust the sweetness next time.
