Moo Ping Thai grilled pork skewers are a popular street food in Thailand. It has amazing flavors from grilled pork marinated in aromatic herbs, spices, and Thai sauces. The sweet, umami, and salty flavor make it a summer favorite appetizer! Be ready to get addicted to this famous street food!

Thai Grilled Pork (Moo Ping)

pork shoulder,

garlic

cilantro

coriander seeds

white peppercorn or black pepper

sugar,

salt

oyster sauce

sweet soy sauce

soy sauce. (Regular soy sauce is fine)

soy sauce

coconut milk

vegetable oil

tapioca starch

Any leftover marinading liquid

chili flakes

fish sauce

lime juice

sugar

water

garlic cloves, finely minced

Always soak the skewers in water for at least 30 minutes before use to prevent them from getting burnt on the grill. You can do this while preparing the ingredients.

Combine the garlic, cilantro stems, coriander seeds, palm sugar, coconut milk, and all the sauces in a food processor. (Not the dipping sauce ingredients.) Taste the mixture and adjust with more sweet dark soy sauce or fish sauce. You want your sauce to taste stronger, as some will evaporate in grilling.

You should have a thick brown velvety sauce for your Moo Ping! Slice the marinated pork into thin small pieces around 11/2 inch by 3 inches, then pour the sauce into a ziplock bag with the sliced meat. Marinate the meat for a minimum of 30 minutes and up to 5 hours in the refrigerator. A large bowl is great, too, for marinating.

Remove the meat from the refrigerator and thread the pieces of pork through the skewers. Slightly bunch up the meat together to help hold the meat together tighter for the grill. Do not throw away the marinating sauce! This is your secret liquid gold for the extra tender and flavorful Moo Ping!

 Turn the grill to medium heat to warm up. Brush each side of the meat skewers with the leftover marinading sauce and some oil before placing the skewers on the hot grill. I left my cover open the entire time to make sure the meat didn't burn. Cook the meat on the grill on medium heat for 3-4 minutes on each side.

Use a cooking brush to alternate brushing the coconut milk and the marinating sauce on each side of the skewers as you flip them on the grill.  Repeat a couple of times if the pork pieces look dry. Adjust the heat if necessary, especially towards the end of the grilling, as the meat will cook and char easily.

These Moo Ping skewers are so tasty and versatile.  I think they would be great to take to a bbq as an appetizer too as well as an entree.  The pork really takes on the flavors in the marinade and so tender and moist.  Loved the use of the white peppercorn.

Moo Ping Recipe

Pork Shoulder Butt

Salt

Garlic Cloves ((peeled))

Cilantro Stems ((stems only and rough chopped))

Palm Sugar ((or 6 tablespoons coconut or brown sugar))

Club Soda

Golden Mountain Soy Sauce

Dark Sweet Soy Sauce

Black Pepper

White Pepper

Coconut Milk ((shake it to prevent any clumps))

Slice the pork into long strips with the grain, then short 1 inch pieces against the grain.  The thickness should be about ¼ inch.

Place all the sliced pork in a large bowl. Add oil, salt, and combine.

In a mortar or molcajete add peeled garlic cloves and chopped cilantro stems. Pound until a paste forms. If using a knife, chop the garlic and cilantro very finely and use the side of the knife to press down and make a paste.

Shave down the palm sugar with a knife and add it to the mortar with the cilantro garlic paste. Add a splash of the club soda and continue pounding until the sugar dissolves. Alternatively, you can use ground coconut sugar.

Transfer the mixture to a small bowl. Add the ground black and white pepper, and both soy sauces. Mix with a whisk or fork to combine.

Using gloves, add the marinade mixture to the sliced pork. Then add the remaining amount of club soda and mix it in with your hands. Now add the coconut milk and combine.

Cover the bowl with a lid or plastic wrap and place it in the refrigerator overnight for best results. Otherwise, you can marinate it for a few hours if you are short on time.

Start by soaking bamboo skewers in water for 20 minutes. If using a charcoal or pellet grill, get it ready now.

Thread each piece of pork with the grain running horizontally to the skewer. Make sure the pork pieces are close together. I was able to get about 5 pieces on each skewer.

Once all the pork is skewered reserve the remaining marinade in a cup to baste the moo ping during grilling.

Direct Flame Method- This is for both charcoal and gas grills. Place the pork skewer over the direct flame. The cooking time for this method is about 15-20 minutes but requires you to keep an eye on the skewers. Baste the skewers after flipping and continue after a few minutes on the other side. Once both sides are cooked, remove the skewers from the grill.

Indirect Heat Method- This method is a little more hands-off, and the total cooking time is about 30-40 minutes. After 10 minutes, flip the skewers and baste, then repeat after 10 minutes.

Serve the Moo Ping warm, or wrap in foil to keep warm until ready to serve.
