This easy keto dough recipe is the best low carb dough I've ever made. Super versatile, this keto dough can be used in both sweet and savory recipes.

Easy Keto Dough - Low Carb

mozzarella cheese

cream cheese

almond flour

teaspoon psyllium husk powder

Place the shredded mozzarella cheese and cream cheese in a microwave safe bowl.

Microwave, uncovered, on high, for 1 – 2 minutes, or until the cheese is completely melted.

Remove from the microwave and stir with a spatula until the cheeses are combined.

Add the almond flour, psyllium husk powder (sprinkle don&#8217;t dump), and egg to the cheese mixture.

Stir well with the spatula or a fork, until a stiff dough is formed.

Knead the dough by hand for 2 – 3 minutes, to ensure all of the ingredients are fully mixed and the dough has a smooth consistency.

Cover with a cloth or plastic until ready to use.

Fat Head Dough Recipe (almond flour or coconut flour)

Mix the shredded/grated cheese and almond flour/meal in a microwaveable bowl. Add the cream cheese. Microwave on HIGH for 1 minute.

Heat

Stir then microwave on HIGH for another 30 seconds.

If you don&#39;t have a microwave, you can heat the shredded cheese and cream cheese in a medium saucepan over a low-medium heat. Make sure to mix and stir continuously to prevent the cheese from burning and sticking to the saucepan. Remove from the heat and add the almond flour or coconut flour.

Season

Add the egg, salt, rosemary and any other flavourings, mix gently.

Roll

Place in between 2 pieces of baking parchment/paper and roll into a circular pizza shape (see photos above). Remove the top baking paper/parchment. If the mixture hardens and becomes difficult to work with, pop it back in the microwave for 10-20 seconds to soften again but not too long or you will cook the egg.

Make fork holes all over the pizza base to ensure it cooks evenly.

Bake

Slide the baking paper/parchment with the keto pizza base, on a baking tray (cookie tray) or pizza stone, and bake at 220C/425F for 12-15 minutes, or until brown.

Turn

To make the base really crispy and sturdy, flip the pizza over (onto baking paper/parchment) once the top has browned.

Serve

Once cooked, remove from the oven and add all the toppings you like. Make sure any meat is already cooked as this time it goes back into the oven just to heat up the toppings and melt the cheese. Bake again at 220C/425F for 5 minutes.

I left out the egg (really I forgot it haha) but it was still dang delicious and one of the better keto pizza crusts I’ve had! Super simple too!

I found fathead dough well before I was aware of keto food blogs, and the place I got my original recipe from was very wordy and confusing.  Your explanations are clear and concise.  I definitely plan to use your recipe next time I want a fathead pizza.  I especially liked seeing the note about flipping the crust over halfway through baking.  Also, putting the almond flour in with the cheese at the start.  I think that will solve some of the issues I've had with baking (one side coming out darker than the other, for example).  One thing I would like to point out is that everyone's microwave is different, and as i recall, with my microwave I only need to nuke my dough for 60 seconds.  That gets it to where it needs to be, but it's not uncomfortably hot to handle and makes it easier to add the egg and work the dough.
