The Ultimate Mug Cake

Dutch process /dark cocoa powder (or standard cocoa powder)

In a 12 ounce* microwave-safe mug, mix the flour, cocoa powder, sugar, baking soda and salt. Stir in the milk and oil. Add the chocolate chips and stir once.

Microwave

Place a paper towel under the mug in the microwave, then cook on High 60 seconds. Check for doneness: if it&#8217;s still gooey and wet on top, microwave another 20 seconds, then another 10 seconds. It done when the top looks cooked and springs back when you touch it (it will still appear moist but will be springy). The exact timing depends on the microwave: ours works well with 60 seconds, then another 30 seconds. 

Cool

Important: wait for 2 to 3 minutes for the cake to cool down from piping hot to warm. Don&#8217;t taste right away: it doesn&#8217;t taste right. But cooling a few minutes does the trick! Top with whipped cream or ice cream and serve warm. 

I made this for my husband and mixed peanut butter into it and he loved it! 
I made mine with gf all purpose flour, coconut milk, and coconut sugar and def satisfied my chocolate craving! Super easy!

This is really good but when I was cooking it the oil kept rising to the top and it just made the cake boil kind of so I had to keep pouring the oil out.

Super easy and delicious recipe! The cake was nice and fudgy, and the melted chocolate from the chips was nice. I also added a few frozen raspberries in.

Butter the largest mug you have (to stop it overflowing in the microwave). Add the butter, peanut butter and milk into the mug and warm in the microwave for 10 seconds. Stir to combine.

Add the egg and stir to combine. Add the ground almonds, cacao and xylitol and mix until combined.

Centre the mug in the middle of the microwave and cook. Start on a high temp (for a 750W microwave) and cook for three 30 second intervals.The cake will look a bit gooey when it comes out, but allow it to rest for 2mins and it will firm up nicely. Top with Greek yogurt, nut butter or desiccated coconut if you like.

Combine the butter, cream, and egg in a 12-ounce microwave-safe mug until well combined.

Add the flour, sugar, and cocoa and stir until just combined. Be sure to scrape the sides and bottom of the mug so all of the dry ingredients are incorporated. Stir in the chocolate chips.

This cake usually takes two minutes to cook in the microwave, but I recommend starting at one minute and checking it every 30 seconds until it&#8217;s fully cooked. The cake is done when the top is cooked, and the cake has started to pull away from the sides of the mug. The cake should spring back when you lightly press on the top.

SOOOOOO GOOOOOOODDDDD!!!!! I really loved this recipe. But I think I microwaved it too long because it was spongey, not gooey.

I’m not sure what I did wrong but this did not turn out good for me. The butter was in chunks and I think I microwaved it too long. But I will try again! I am determined to get this right!

Tried this over the weekend and WOW! So good and so easy to make. I will definitely make this again ... probably sooner than later.

Delicious! I made it as is the first time. Second time I used 3 stevia packets instead of sugar and slightly under a tablespoon of coconut flour in place of the all purpose, everything else the same. Cook time was about the same, wasn't quite as sweet and just a bit different consistency but overall turned out tasty that way too! Just in case anyone else is looking for a slightly healthier option!

Lightly grease a normal sized drinking mug (11 to 12 oz) and set aside. Straight sided mugs work best for this recipe. 

Make the frosting. In a small bowl mix the powdered sugar with either water, milk, or lemon juice. Add it a teeny tiny bit at a time. You won&#39;t need more than about ¾ teaspoon. Stir well until smooth, thick, and drizzle-able then set aside.

In a small bowl add the flour, baking powder, 1 tablespoon of the sugar, and salt. Add enough water gradually, stirring between each addition, to form a slightly tacky dough. Use your hand to knead it a couple of times to bring it together.

Sprinkle a clean surface lightly with flour. Turn out the dough and sprinkle the top with a little flour. Roll the dough out into a long strip about 4 inches wide and ⅛ inch (2 to 3 millimetres) thick. 

Sprinkle the strawberry pieces all along the dough leaving a clear margin of about an inch all around the edges. Then sprinkle the strawberries with the remaining sugar. 

Fold the edges on the longest sides inwards so they meet each other in the middle. This helps to seal the strawberries and sugar in and stop them dropping out when you lift it after rolling. See my video below for a full tutorial. You will be left with a long narrow strip. 

Roll the strip up then gently lift it and put it into the mug. Pour over ½ a teaspoon of water (important for steam) then place in the microwave uncovered and cook on full power for around 1 min 10 seconds. If it needs longer cook in 5 second increments to avoid overcooking. My microwave is 1200 watts. You will need to adjust the time a bit up or down depending on the wattage of your own microwave. The first time you make this it will be a bit of a case of trial and error. All microwaves are different so be careful not to overcook it as it will become tough.

When you open the door it should have puffed up a lot and nearly reached the top of the mug. It will still look pale and a little damp as it&#39;s microwaved not baked, so don&#39;t think it&#39;s underdone and cook longer than you need to or it will overcook. You can check doneness with a toothpick or skewer. Stick into the roll and it should come out clean.

Turn out of the mug onto a plate. You might need to give it a little hand with a knife up the side of the mug. 

Pour over the frosting and serve immediately. Do not leave it to cool. It needs to be eaten freshly cooked, and be careful (especially when serving it to children) because the strawberries will be very hot.
