Easy creamy mushroom toast is perfect for breakfast, lunch and dinner and can be made in no time at all for a delicious, easy vegetarian meal.

Easy creamy mushroom toast

500 g (+- 1lb) mushrooms

garlic

tsp chilli/red pepper flakes

tsp dried oregano/thyme

tbsp butter

lemon

salt and pepper

parsley (for serving)

bread

cream cheese ((optional))

Heat a large frying pan over high heat then add a tablespoon or two of olive oil.&nbsp;

Fry the mushrooms in batches, until well-browned all over.&nbsp;

Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs and chilli flakes. Cook for 1-2 minutes.&nbsp;

Add the butter and lemon juice and stir well while the butter is melting to create a creamy sauce then take off the heat. Season to taste.&nbsp;

Serve the creamy mushrooms on toast smeared with cream cheese (optional).

These creamy mushrooms on toast are a divine starter. It&#039;s a decadent, earthy and deliciously smooth sauce, flavoured with marsala wine and served on crisp white toast.

ml marsala wine

olive oil

120 g chestnut mushrooms (sliced)

120 ml chicken stock

235 ml double cream (heavy cream)

mustard

salt and pepper (to taste)

parsley (chopped for garnish)

Warm the olive oil to a medium sized pan, over medium heat.

Add the mushrooms and sauté for 1 - 2 minutes.

Add the Just A Splash culinary Marsala and bring to a boil over medium-high heat for 1 - 2 minutes, allowing the alcohol to cook off a little.

Add the chicken stock, cream, ground mustard, garlic granules and a pinch of salt and pepper.

Bring to a boil, then reduce heat to a simmer for about 10-15 minutes until thick.

Meanwhile, slice and toast your bread until golden.

Add a little parsley into the sauce and stir through.

Arrange the toast on a plate and spoon the sauce on top.

Finish with a sprinkling of parsley.

Who knew that mushrooms and cavolo nero were best friends with ricotta? This recipe comes together in half an hour and will brighten up any lunchtime blues.

Mushrooms & Cavolo Nero On Toast With Ricotta

Thyme

Ricotta

Lemon

Begin by adding the ricotta to a bowl with the juice of half a lemon and a good pinch of salt and pepper. Whisk to combine.

Rub the slices of bread with a little olive oil on both sides and then grill in a griddle pan until golden brown.

Roughly chop the mushrooms but not too small.

Strip the leaves of the cavolo nero and then roughly chop it up. Mince the garlic.

Set a large pan over a medium-high heat and add 2 tbsp of olive oil. When hot, add the mushrooms and season the salt and pepper.

Cook the mushrooms for 4 mins until they have lightly browned all over. Add the butter, allow it to melt and then add the garlic and thyme. Cook for a minute before adding the cavolo nero and seasoning with salt and pepper.

Add the juice of half a lemon and cook for 4 mins or until the cavolo nero has wilted. Spread the ricotta mix over each slice of bread and top with the mushrooms and cavolo nero.

Fry up your eggs and top off your toasts.
