Chocolate Peanut Butter Nice Cream

tbsp dutch cocoa or chocolate protein powder

Make sure the bananas are at least partially brown before chopping and freezing them. Combine all ingredients in a blender, food processor, or Vitamix. Process until completely smooth, adding a little milk of choice if your blender isn’t strong enough to handle the frozen banana. (If you’re not using a high-speed blender like a Vitamix and don’t want to add any liquid, simply thaw the bananas a bit before blending.) Either serve immediately as soft serve, or freeze for up to an hour before scooping out with an ice cream scoop for the classic ice-cream look. The easiest one-ingredient ice cream recipe! Banana ice cream is one of my favorite desserts. I like adding a bit of protein powder and nut butter for a more balanced treat but there are endless flavor variations you can try. How about peanut butter, mint chocolate chip, strawberry or matcha? YUM.

Banana Ice Cream

bananas, peeled, chopped and frozen until solid

Place the frozen banana in a food processor and pulse a few times to start breaking it down.

Once it&#8217;s fairly well broken down, slowly start blending stopping to scrape down the sides as needed. It will seem a little dry and icy at first but continue blending until it forms a smooth, creamy, soft serve ice cream-like texture. Depending on your blender or food processor you may need a little splash of dairy-free milk but for best results, try to use just the banana.

Scoop the ice cream into a bowl and enjoy right away or place back in the freezer for 30-60 minutes for firmer ice cream.

I added almond butter, cocoa powder and banana and made it in my food processor. Worked great!! Kids and even husband loved it. So happy to have a healthy, easy dessert option. We'll try a bunch of fun toppings next time to make sundays!

Flavor: Optionally add ingredients to make your chosen flavor (see ideas above).

Serve: Serve as is from the blender for a soft serve consistency. For a firmer texture, transfer to a deep dish and freeze for 30 minutes, until firm.

Caramel Almond Crunch Ice Cream

Medjool pitted dates, (about 6 dates)

tsp sea salt

Peel and slice bananas. Spread out in a single layer on a baking sheet and freeze until very firm, at least 6 hours or preferably overnight.

First, prepare the crunchy almond topping. Preheat oven to 325F. Toss the chopped almonds with maple syrup, cinnamon and sea salt in a small bowl. Spread out on a lined baking sheet and toast until caramelized, about 10 minutes. Remove from oven and set aside to cool.

Next, prepare the caramel sauce. Put the dates in a food processor and pulse until chopped. With machine running, add the vanilla and sea salt. Pour in the almond milk and maple syrup and process until smooth. Transfer to a jar and refrigerate.

Just before serving, blend the frozen banana slices in a high-speed blender, just until they are smooth and creamy. Be careful not to over process, as the friction from the blender will melt the ice cream.

Layer the banana ice, caramel sauce and crunchy cinnamon almonds in shot glass or parfait glasses and serve immediately.

For a sweet and refreshing plant-based treat, simply combine espresso powder, cacao and frozen bananas. Blend and enjoy!

Mocha Nice Cream

bananas, frozen

T cacao nibs (optional)

Add frozen bananas, espresso powder, cacao power and 1/3 cup almond milk to food processor. Process until smooth, adding almond milk 1 T at a time, if needed.

Watch the video in the post for visual instructions.Chop the bananas into 1-inch (2.5 cm) large slices and add them to a freezer-safe container. Freeze them until solid, at least 1 hour. If you freeze them overnight, let them thaw for about 20 minutes before using.

Add the frozen banana pieces to a high-speed blender together with the peanut butter and maple syrup (if using). Blend until the mixture is super creamy and lump-free. If your blender has problems blending the mixture, simply wait some minutes and try it again. It also helps pushing the ingredients with a tamper into the blades of the blender.

Transfer the ice cream back to the freezer-safe container and freeze again until the ice cream can be scooped with an ice cream scoop. Enjoy with vegan caramel sauce!
