A simple, healthy Strawberry Blueberry Smoothie made with almond milk, frozen berries and yogurt. Delicious, low calorie, and so fast and easy! Kids love it too.

Strawberry Blueberry Smoothie

almond milk

strawberries (about 10 medium/large berries)

blueberries

vanilla Greek yogurt

cinnamon

Place all of the ingredients in a high powered blender in the order listed: almond milk, strawberries, blueberries, yogurt, and cinnamon. Blend until smooth.

If you’d like a thinner smoothie, splash in a bit more milk. For a thicker smoothie, add a few handfuls of ice. Enjoy immediately, or place in an airtight jar and refrigerate for a few hours.

A banana-free smoothie made with lots of juicy blueberries, sweet vanilla bean, and creamy cashew butter. Purple and perfectly delicious!

Blueberry Vanilla Cashew Smoothie

milk of choice ((I used cashew))

chia seeds

cashew butter ((or any nut/seed butter))

vanilla bean powder

Combine the milk, chia seeds, cashew butter, and vanilla bean powder in a blender.

Blend on high until the chia seeds are fully broken down and the mixture begins to thicken.

Add the frozen blueberries. Blend until thick and ice cream like. Add more milk/frozen blueberries to desired consistency.

Top with blueberries and hemp seeds. Enjoy!

Banana Free Smoothie Bowls 3 Ways! {vegan}

These fluffy oatmeal pancakes are melt-in-your-mouth tender and use healthy ingredients! The easy batter comes together in the blender for quick clean up.

Oatmeal Pancakes

If you’d like to keep the pancakes warm between batches, place a rack in the center of your oven and preheat the oven to 200 degrees F.

Place

Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.

Blend

Blend until the batter is smooth, stopping to scrape down the sides of the blender as needed. Continue blending until you don’t see any remaining bits of oats.

Stir

Stop the blender, then stir in the remaining 3/4 cup oats and any desired mix-ins. Do not blend again. Let the batter sit for 10 minutes while you heat the skillet/griddle and prep any toppings.

Heat

Heat a large nonstick skillet or griddle over medium-low heat. Lightly butter or oil the pan if needed (some nonstick pans do not need this).

Cook

Once the skillet is hot, drop the batter by 1/4 cupfuls into the pan. Let cook gently for 3 to 4 minutes on the first side, until the pancakes look dry at the edges and small bubbles form on top.

Gently flip, then cook on the other side for 1 to 2 minutes. They should look golden on both sides. If desired, transfer the pancakes to a baking sheet and keep warm in the oven between batches. Repeat with the remaining batter.

Three Delicious No-Banana Vanilla Protein Smoothies

almond milk (or plant-based milk of choice)

vanilla protein powder

peanut butter

espresso powder

Blend all the ingredients together. If your blender isn&#39;t able to process all of the frozen fruit, try defrosting it in room temperature water for a minute, or adding a little more milk, and try again.

These healthy waffles are a breakfast treat! They&#39;re easy to make from scratch, and have juicy blueberries in every bite with fresh lemon &amp; poppy seeds.

Blueberry Waffles (Vegan, Gluten-Free!)

dairy-free milk

Tbsp. ground flaxseed

Tbsp. maple syrup

lemon

lemon juice

almond extract

gluten-free all-purpose flour*

In a large bowl, combine all wet ingredients. Whisk and set aside.

In a separate bowl, combine all dry ingredients. Stir.

Add dry ingredients to wet, and whisk until just combined. Then gently fold in blueberries. Set batter aside to rest for a few minutes while you warm your waffle iron.

Preheat your waffle iron to desired setting. (I set mine medium to medium-high.)

Once iron is hot, use a 1/2-cup measuring cup to scoop out batter and place in the middle of the hot waffle iron. (No need to overfill it - I find it cooks better when I don&#39;t push the batter all the way to the edge.)

Close lid and cook waffle 6-8 minutes or until steam has completely stopped. (Try not to open the lid during cooking.)

Then carefully remove waffle and continue process with the remaining batter.

Top with fresh blueberries, lemon zest, maple syrup, or other desired toppings.

So good!  I have made these twice now, once with fresh blueberries and once with frozen organic wild blueberries. We actually preferred the frozen blueberry version best because the berries are more similar in size and tend to be on the smaller side.  The fresh version was great, too, there was just more variance in berry size.  We thought the flavour combinations in the batter were spot on!  We will definitely be adding this to our weekend breakfast rotation!  Delicious!  Thanks for sharing another amazing waffle recipe - we love them all!

Refreshing strawberry popsicles made right at home with simple, healthy ingredients. The perfect blend of sweet &amp; creamy!

Strawberry Cream Popsicles (Vegan!)

can coconut milk, full-fat

strawberries (I use frozen)

pure vanilla extract

Add all ingredients to a high-speed blender. Blend for about 20-30 seconds until smooth.

Pour mixture into popsicle molds (leaving a little space to allow for expansion). Add popsicle sticks, then place in freezer for about 5-6 hours, or until completely solid.

To remove from the molds, leave them on the counter for several minutes, or run under warm water for a few seconds to help them slide out.

Absolutely delicious!  I'm a sucker for popsicles and was thrilled to find a healthy replacement for the not-so-healthy varieties available in stores.
