You don&#039;t want to miss out on these blueberry banana oatmeal muffins! They&#039;re so quick and easy to make (you can make them in one bowl!), they&#039;re naturally gluten-free, vegan, fat-free, nut-free and refined sugar-free!

Easy + Healthy Blueberry Banana Oatmeal Muffins

Medium Ripe Bananas (around 200 grams)

g Yoghurt (1/2 cup)

tbsp Maple Syrup, Agave or Coconut Nectar

Lemon juice and zest (or vinegar)

200 g Oatmeal, blended (2 ½ cups before blending)

tsp Baking Soda

g Blueberries

Preheat your oven to 180°C / 350°F / 160°C fan and lightly grease your muffin tray.

Start by mashing your bananas in a mixing bowl.

Add in your yoghurt, maple syrup, lemon juice and lemon zest and whisk to combine.

Add in your blended oats and baking soda and fold until just combined.

Gently fold in your blueberries.

Evenly distribute your muffin batter into your muffin tray filling them to the top then add some oats or sugar to the top.

Fill any empty holes in your tray halfway with water - this will allow for even baking.

Bake for 15-18 minutes. Insert a skewer after 15 minutes, it should come out with a bit of batter on but not an excessive amount.

Carefully remove from your muffin tray and place on a wired cooling rack to cool.

Blueberry Banana Oatmeal Muffins

Made with simple ingredients, these Banana Oatmeal Muffins are the perfect breakfast or snack! These muffins are filling, tasty, and so easy to make.

Banana Oatmeal Muffins

all-purpose flour ((180 grams))

old fashioned rolled oats (plus more for topping (150 grams))

sugar ((133 grams))

baking powder

baking soda

ground cinnamon (plus more for topping)

salt

milk ((120 milliliters))

vegetable oil ((60 milliliters))

eggs

vanilla extract

banana ((about 2 bananas/250 grams))

chocolate chips (optional (90 grams))

Preheat the oven to 375F. Line a 12-cup muffin pan with paper liners.

In a large bowl, whisk together the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.

In a medium bowl, whisk together the milk, oil, eggs, and vanilla until well combined. Stir in the mashed banana. Pour the milk mixture into the oat mixture and stir together until well combined. Stir in the chocolate chips, if using. Divide the batter among the paper liners. (They will be very full.) Sprinkle with extra oats and cinnamon, if desired.

Bake for 18 to 22 minutes or until golden brown and the centers feel firm. Let the muffins cool in the pan for a few minutes, then remove and continue cooling on a wire rack.

Amazing Oatmeal Banana Muffins Recipe | SO Easy!!!

Banana bread in a compact muffin made with old fashioned oats and a crumb topping.

Oatmeal Banana Muffins Recipe

½ Cups oats (old fashioned oats

¼ Cups flour

sugar

cinnamon

nutmeg

vanilla

½ cups ripe bananas, mashed (about 3-4 bananas)

oats (old fashioned oats)

Tablespoons brown sugar

Tablespoons butter

Preheat oven to 375°F.

In a large bowl mix oatmeal, flour, baking powder, baking soda, cinnamon, nutmeg, salt and sugar together.

In a smaller bowl mix egg, oil and vanilla. Add to dry ingredients and stir. The mixture will be very dry at this time.

Fold in bananas. Keep folding until all the dry ingredients are mixed in.

Divide into muffin tin that has been either lightly sprayed with a nonstick spray or lined with paper liners.

In another bowl combine topping ingredients. Sprinkle over muffin batter.

Bake at 375°F for 18-20 minutes.

This is the best banana oatmeal muffin recipe! Very moist! We used half sugar/half honey, a touch of almond extract, and cinnamon chips!  I think with just a tablespoon or so of flour, this recipe is perfect to exchange sugar for honey, white flour for wheat.  Thanks for posting this!

I've been making this recipe monthly for years now! I don't add the topping, but instead put 2 handfuls of chocolate chips in the batter. Great snack!

I used old fashioned oats for a double batch and it seemed so dry that I added 1.5 cups of butter milk and baked for 30 minutes since I made jumbo muffins. They turned out fabulous, moist and delicious.

I make this recipe every other week.  I add raising and chopped walnuts and whole wheat flour instead of white.  I also scrape the banana peels for more nutrition.  I also make the large size, 6 to a tray which works so well for breakfast.  Thanks for this recipe.

I made these with rolled oats and added a cup of chopped walnuts. I worried they would turn out a little dry or dense, but they didn't. The muffin was light and the topping had a great texture. These are excellent as is, but next time I might try a little bit of light maple frosting instead of the topping just for fun.

Great recipe! My bananas weren’t fully ripe so I stuck them in the oven with the peels on until they turned black and they were perfectly ripe. This was super easy and turned out great. I skipped the topping out of laziness but I’m going to try it next time!

A very tasty and easy recipe! I personally went somewhat rogue with adding 2x green apples, walnuts and almonds, however it was perfect and truly enjoyed.
