Okra and Tomatoes Recipe

Add olive oil to a saute pan over medium-low heat. Add in onions and saute until tender. Add garlic.

Pour in diced tomatoes and toss in okra. Stir to combine.

Allow to simmer over medium-low heat for about 20 minutes until the okra has become tender.

Toss in salt and freshly ground pepper to taste.

Okra &amp; Tomatoes with Chicken

sweet onion, (diced)

Salt & pepper

Cook the bacon &amp; set aside.

Season the chicken generously with salt &amp; pepper. Add the chicken to the slow cooker with the diced tomatoes, broth, onion, salt, sugar (if using), paprika, pepper, and hot sauce if using. Stir to mix well.

Cover &amp; cook HIGH 2-3 hours or LOW 4-6.

Stir in okra. Cook an additional 15 minutes or until okra is heated through. Garnish with cooked bacon before serving.

Slow Cooker

Turn on the Instant Pot to the sauté setting. When hot and the bacon. Cook 3-5 minutes or until bacon is cooked to your liking. Remove the bacon and set aside.

Add the onion and cook 3-5 minutes or until soft. Add the garlic and cook an additional minute.

Pour in the broth &amp; deglaze the bottom by using a wooden spoon scrape  the bottom of the Instant Pot to remove any bits that stuck to it.  Make sure you scrape it well to avoid burning during cooking.

Season the chicken generously with salt &amp; pepper. Add the chicken, tomatoes, hot sauce, salt, paprika, sugar (if using), and pepper to the pressure cooker. Stir to mix well.

Close lid and seal valve. Set high pressure and cook for 9 minutes. If using boneless thighs: Cook on high for 9 minutes.If using bone-in thighs: Cook on high for 10 minutes.When cook time is done, quick release the pressure.

Open the lid and stir the food. Turn the Instant Pot to the sauté setting. Stir in the okra. Cook 5 minutes, stirring frequently.  Garnish with bacon before serving.

Cook the bacon in a skillet on medium-high heat. Cook the bacon until crisp and remove the bacon and set aside.

You can drain the fat from the bacon if you wish or leave it. I reserve at least a teaspoon of fat. Add the onions to the pan and saute for 3-4 minutes until fragrant.

Add in the okra, diced tomatoes, and all of the seasonings. Stir.

Reduce the heat to medium-low and cover the pot. Simmer for 15-20 minutes until the okra is soft.

Open the pot and add the cooked bacon. Stir.

Bhindi masala is a very popular Indian okra recipe that&#39;s made by cooking okra with tomato, onion, and a few basic Indian spices. It&#39;s easy to make and is delicious. This simple home-style bhindi fry recipe is vegan and gluten-free.

Bhindi Masala

red onion (thinly sliced)

tomato (finely chopped)

green chili peppers (finely chopped)

cumin seeds

turmeric powder

red chilli powder

coriander powder

¼ teaspoon garam masala

Wash okra and pat dry. Leave on a kitchen towel for a few hours to ensure that it&#39;s completely dry.

When okra gets dry, chop off the head and pointed tip and then cut them into medium size pieces.

Heat oil in a cooking pot and add cumin seeds.

When the cumin seeds start spluttering, add sliced onion and cook until it starts turning brown.

Add turmeric powder, red chili powder, and coriander powder. Saute for a few seconds.

Add chopped tomatoes and green chilies. Cook for 4-5 minutes on medium flame or until the tomatoes turn mushy and are nicely cooked.

Next, add chopped okra. Cook on a medium flame for around 15 minutes or until okra gets nicely cooked and becomes slime free. Gently stir occasionally after every 5-6 minutes to avoid burning.

Once okra is cooked, add salt and mix. Cook for another minute.

Finally, add garam masala. Mix and switch off the stove.
