Paleo Banana Bread (Super Moist!)

bananas (ripe, approx 1 1/4 cups mashed)

banana (fresh)

almond flour

tapioca flour

tsp baking soda

cinnamon

tsp salt

eggs (large)

butter (or coconut oil, melted)

honey

tsp vanilla extract

Preheat the oven to 350 degrees fahrenheit.

Use butter or coconut oil to grease the inside of a loaf pan (8.5 x 4.5 inch) and set aside.

Mash the bananas with a fork in a mixing bowl. Add the remaining ingredients, then use a hand mixer to blend everything together for 30 seconds. Pour the batter into the loaf pan

Peel and slice the fresh banana in half lengthwise, then place it on top of the batter.

Cook the banana bread for 50-60 minutes. If the top gets too golden, you can cover with a piece of aluminum foil. Use a toothpick to test that the banana bread is cooked through.

Remove the banana bread and let it cool for 5 minutes in the loaf pan. Then slice it up and enjoy.

PALEO BANANA BREAD | super moist banana bread

Incredible double chocolate paleo banana bread bars made with almond and coconut flour. This no sugar added treat only takes 30 minutes from start to finish and tastes AMAZING!

Double Chocolate Paleo Banana Bread Bars

overripe bananas (1 1/4 cup mashed banana

eggs

vanilla extract

coconut flour

cocoa powder (see recipe notes below)

baking soda

baking powder

salt

chocolate chips, dairy free if desired

For topping:

chocolate chips (dairy free, if desired)

coconut oil

Preheat oven to 350 degrees Spray an 8x8 inch baking pan with nonstick cooking spray and set aside.

Add bananas, eggs and vanilla to a blender and blend until smooth.

In a large bowl, whisk together almond flour, coconut flour, cocoa powder, baking soda, baking powder and salt.

Gently fold in wet mixture and stir until well combined. Next stir in chocolate chunks, reserving a few tablespoons.

Spread batter evenly into prepared pan and sprinkle remaining chocolate chunks on top. Bake for 18-25 minutes or until toothpick comes out clean. Once done baking, transfer pan to a wire rack to cool for 20 minutes before cutting into 12 bars.

Preheat oven to 350F and grease a loaf pan with either coconut oil or butter.

Add in eggs, almond butter, coconut flour, vanilla, cinnamon, sea salt, baking soda, and paleo baking powder. Mix thoroughly.

If using chocolate chips, fold in chocolate chips here.

Pour batter into greased loaf pan and add banana coins on top if desired for decoration. 

Place in oven and bake for 40 minutes or until toothpick comes out clean.

Remove from oven and let cool before slicing.

The title speaks the truth! Delicious!! I used Justin's Cinnamon Almond Butter that my husband accidentally picked up instead of regular and omitted the cinnamon. Quick, easy, healthy &amp; delicious-thank you!!!

I just tried to bake these banana bread using 1/2 of the portion sizes. 
The first attempt was a fail which I think was due to my baking powder being stale. The bread was mushy and gooey in the center even after almost an hour in the oven :( 
But the 2nd attempt was much better after replacing the baking powder! I must say the bread was not the usual texture that I am used to, it was quite soft and easily crumbled. But the taste was great! Love that I didn’t need to add any sugar/maple syrup to make the bread sweet. Great recipe!

How would I go about adding a bit of honey?

This recipe came together easily and instead of chocolate chips, I folded in fresh blueberries. It came out well and tastes good.

This was good!  I used almond flour in place of coconut and increased the amount, as you suggested.  Used Santa Cruz organic dark roasted peanut butter for my nut butter.  It's very good!  Would be great with chocolate chips, too.  Thanks.

(The last paleo banana bread recipe I tried used tapioca flour.  The crumb looked nice but the loaf was really insubstantial.  This one is heavier, more bread-like.)

Nourishing Almond Flour Banana Bread

almond milk

(60 grams) flaxseed meal

Prep your pan: Preheat oven to 350 degrees F. Line an 8 ½ x 4 ½ inch loaf pan with parchment paper. Spray the pan with nonstick cooking spray to prevent sticking. Set aside.

Make the batter: In a large bowl, whisk together the mashed bananas, eggs, almond milk and vanilla extract until well combined. Add in the almond flour, flaxseed meal, cinnamon, baking soda and salt. Use a wooden spoon to combine. Fold in the chocolate chips.

Bake: Pour batter into prepared loaf pan, smoothing the top with a spatula. Sprinkle 2 tablespoons chocolate chips on top. Bake for 50 minutes-1 hour or until tester comes out clean in the middle of the bread. Cool bread for 10 minutes in the pan, then remove and transfer to a wire rack to finish cooling completely. Once cool, cut into 12 slices. The bread is best the next day (as are all banana breads!) To serve: top with almond butter or butter and sprinkle with a little sea salt. Enjoy!
