Preheat oven to 350 degrees F.  Using parchment paper-lined an 8&quot; cast iron skillet or a 6&quot; cake pan.

Add all ingredients to a mixing bowl, and using an electric mixer, mix for several minutes in well mixed. You can also mix in a bowl with a wooden spoon or spatula if desired.&nbsp; If you go this route, you should probably whisk the almond flour to get out all the lumps and then add the remaining ingredients.

Pour batter into prepared cast iron skillet and smooth batter.

Bake for 25-27 minutes until a toothpick comes out clean.  Cool completely before icing/frosting.  Two frosting options:  dairy-free ganache and vegan chocolate frosting.

Preheat oven to 400° Fahrenheit and line a 8x8 inch dish with parchment paper.

In a large mixing bowl, combine cassava flour, baking powder and sea salt with a fork.

Using the fork, &quot;cut&quot; coconut butter and oil into dry ingredients until small bits form.

Add coconut milk, maple syrup, apple sauce and apple cider vinegar and mix with fork until combined.

Transfer cake mixture into prepared baking dish and spread out with your hands into an even layer.

Make the topping by combining all the topping ingredients in the bowl you just used and mix until clumps form. Don&#x27;t overmix - you want it crumbly.

Sprinkle topping over cake, and transfer to the oven. Bake for about 20 minutes. When a knife comes out clean, remove from the oven and let cool before slicing.

Serve and enjoy. You can drizzle some extra coconut butter if you want, too! We love it best served a little warm, so we usually re-heat it for about 10-12 seconds in the microwave.

This creamy and silky smooth 5-ingredient coconut jelly is my paleo copycat version of the popular Melo Melo coconut pudding dessert, but made without dairy and refined sugar!

Coconut Jelly Dessert (Dairy-Free Melo Melo Copycat)

coconut water (divided (I like Taste Nirvana brand in the glass bottle))

gelatin powder

full-fat coconut milk (I like Aroy-D brand

honey (light colored (or use ⅓ cup liquid allulose to make it keto))

vanilla extract

Pour ¼ cup of the coconut water into a small bowl. Add the gelatin and whisk until well-incorporated. Set aside to let the gelatin bloom and rehydrate.

In a small saucepan, combine the remaining coconut water, coconut milk, and honey. Heat the coconut mixture over medium heat, stirring frequently until the honey is dissolved and the coconut milk is hot but not boiling.

Remove the pan from the heat and whisk in the reserved hydrated gelatin and vanilla, making sure there are no lumps.

Pour the mixture through a fine mesh sieve into a liquid measuring cup to catch any unmelted lumps of gelatin or honey. Skim off any bubbles on the surface with a fine mesh strainer.

Then, evenly divide the coconut milk mixture into 6 small (6-ounce) glass jars.

Chill the jars in the fridge for 1 hour uncovered and then add the lids and chill until solid, about 4 hours. When you are ready to serve, top with fresh fruit if desired!

Store the coconut jelly in sealed containers in the fridge for up to 3 days.

Coconut Jelly (Dairy-Free Melo Melo Copycat)

Delicious moist and fudgy Sweet Potato Brownie recipe that is made with all wholesome ingredients! These delicious brownies are flourless, dairy-free, and refined sugar-free, so you can feel great about this guilt-free treat!

Healthy Sweet Potato Brownies

potato

almond butter

eggs

tsp pure vanilla extract

cocoa powder

½ tsp baking soda

½ tsp ground cinnamon (optional)

chocolate chips

Cook the sweet potato according to your preferred method. I chop mine into large chunks and boil it in water for 15 to 20 minutes, or until the chunks of potato are very tender. Allow the potato to cool (I transfer it to a sealable container and refrigerate it). Once cool, remove and discard the peel. Note: you can cook the potato and refrigerate it up to 5 days in advance.

Preheat the oven to 350 degrees F and line a 9-inch square baking pan with parchment paper.

Mash the sweet potato into a bowl or measuring cup and measure out 1 cup of mashed potato.

Add the mashed sweet potato to a large mixing bowl along with the almond butter, eggs, pure maple syrup and vanilla extract and stir well until everything is well-combined (wet ingredients).

Stir in the cocoa powder, baking soda, sea salt, and ground cinnamon until a thick creamy batter forms (no need for a separate bowl here).

Add in the chocolate chips and stir until they are well-incorporated into the batter.

Pour the brownie batter into the prepared baking pan and spread it into an even layer. If desired, sprinkle with extra chocolate chips.

Bake on the center rack of the preheated oven for 23 to 28 minutes, or until the brownies reach desired level of doneness. For fudgy, gooey brownies, bake for 23 minutes. Brownies are best when baked to an internal temperature of 180 degrees Fahrenheit. Insert a digital thermometer into the center of the brownies and wait until the numbers stop moving to get an accurate read on their temperature.

Allow the brownies to cool completely (at least one hour) before slicing and serving. You can slice the brownies before they have finished cooling if you’d like, but the slices won’t hold together quite as well. If you’re fine with that, proceed!

Serve with a scoop of ice cream for an even more decadent dessert.

These are so yummy! I even cut the maple sugar by half and added cacao instead of cocoa powder and they were still sweet and tasty. This recipe is so functional that you can take liberties with it as it suits your own personal dietary needs. Thank you for sharing!

SO delicious. I do recommend boiling the potato beforehand. Also, using a nutribullet or vitamix to help mix up the batter (by hand it was waayy too thick and lumpy) was a game changer.

I think it might be important to boil the sweet potatoes as opposed to baking (which I did) or microwaving them.  My dough was so so thick, I almost couldn't spread it (certainly not "pour it"). I also think almond butter varies across brand names.  Could you tell me what brand you use?  I order mine from Vitacost and it is called "Once Again".  In the video, it looks so easy to spread the batter, but mine was NOT like that.

I LOVE this recipe...I did have to change it tho as I am allergic to chocolate (substituted with Carob powder) and the Maple Syrup (substituted with Monkfruit Sweetener) as my husband is diabetic. This was the second low sugar/low calorie brownie recipe I tried and my family said "this is the better one of the 2" the first recipe was Black Bean Brownies. This is now my Go-To recipe for brownies and I cannot wait to make these for my friends. I just made a batch and I added PB2 on tops and swirled it in. Thank you SO much for this recipe
