Basic Shortcrust Pastry

Basic shortcrust pastry

<a href="https://www.bbcgoodfood.com/content/test-best-flour-shakers">Sift</a> 225g plain flour into a large <a href="https://www.bbcgoodfood.com/content/test-best-rolling-pins">bowl</a>, add 100g diced butter and rub in with your fingertips until the mixture resembles fine breadcrumbs.

Stir in a pinch of salt, then add 2-3 tbsp water and <a href="https://www.bbcgoodfood.com/content/top-five-food-mixers">mix</a> to a firm dough.

Knead the dough briefly and gently on a floured surface.

Wrap in cling film and chill while preparing the filling.

300 grams/10½oz plain flour, plus extra for dusting

225 grams/8 ounces plain flour,

Chicken & ham pie

boneless skinless chicken breasts, cubed

carrots, chopped

potatoes,

celery stalks, chopped

thyme

chicken stock

onions, chopped

lemon

parsley

pack shortcrust pastry

egg, beaten

Put the chicken in a large pan with the carrots, potatoes, celery, half the thyme and seasoning. Add stock and bring to the boil. Reduce heat, cover and cook gently for 15 minutes. Set a colander over a large bowl, pour in the pan contents and remove thyme. Reserve 600ml/1 pint stock (rest can be frozen).

Rinse the pan, return to heat and melt the butter. Cook the onions until soft, about 5 minutes. Stir in the flour, then the reserved stock a little at a time, to make a smooth thick sauce. Add the milk and simmer for 2 minutes. Off the heat, stir in the remaining thyme, lemon juice and parsley. Season.

Mix together the chicken, vegetables and ham in a deep 2.2litre/4 pint ovenproof dish, preferably with a rim or lip. Pour over the sauce and leave to cool slightly. Preheat the oven to 200C/gas 6/fan 180C.

Roll out the pastry to about 5cm/2in larger than the top of the dish. Cut a 2.5cm/1in strip from all round the pastry. Brush the rim of the dish with egg and press the strip all round. Brush with egg and lift the pastry on to it, pressing the edges to seal thoroughly. Trim off excess, then mark the pastry edge all round with a fork. Make 4 small slits in the centre. Brush with egg and bake for 25–30 minutes until crisp and golden.

Nearly every region of the world has its own form of pastry-wrapped meat and vegetables. We have empanadas, calzones, samosas - even old school Aussie sausage rolls! The pasty is England’s contribution. Chopped meat and hearty root vegetables are contained in a semi-circle of crisp pastry. While the traditional recipe uses a homemade pastry made of flour, salt and two types of fat – butter and lard, this pasties recipe uses store-bought puff pastry, making it simpler to prepare and adding layers of buttery goodness.

This simple chicken Cornish pasty will be a new family favorite. It takes only minutes to assemble and will come out deliciously every time!

Simple Chicken Cornish Pasty Recipe

puff pastry

300 g chicken, raw, diced finely

sweet onion (finely chopped)

rutabaga

potato

garlic (minced)

sea salt

black pepper

Preheat the oven to 350 degrees f.

Cut the pastry to 4 - 6 inch rounds that are about 1/4 inch thick. You should get about 4 pastry rounds from a pre-packaged puff pastry.

Mix the chicken, onion, rutabaga, potato and garlic together in a medium bowl. Add the spices and mix.

Evenly divide the filling among half of each of the pastry rounds. Leave a small space around the edges.

Fold over the uncovered pastry to create a semi-circle and roll up the edges. Slice a few slits in the middle of the pasty to allow steam to escape.

Lightly whisk the egg with a tablespoon of water in a small bowl. Brush the tops and edges of the pasties with the egg wash.

Bake in the oven for 20 - 25 minutes, or until the pasties are a beautiful golden brown.

These simple pies are fried in a little oil rather than being baked, which makes them deliciously crisp and golden. Serve warm with a green salad.

Cornish Pasty Recipe - Made with a golden pastry crust filled with a delicious filling made from tender bits of skirt steak, rutabaga, onion, potatoes, and plenty of herbs and spices.

In a small bowl whisk together sour cream and egg.

Into the food processor add flour and salt and pulse until combined, about 3 seconds.

Add butter then pulse until butter is pea-size, about 10 pulses.

Next add half of the sour cream mixture and do 5 pulses. After add the rest of the sour cream and pulse 15 times or until the dough starts to from.

After transfer the dough onto a floured surface, knead until the dough is formed about 30 seconds. Form a a flat circle and wrap it in plastic wrap then refrigerate for 30 minutes.

How to Make Pasty Crust

Add butter into the skillet and melt it over medium/low heat. Once the butter melts add onion and cook for 5 minutes, stirring few times.  After add thyme and garlic and saute for 30 seconds.  Remove from the heat and let it cool for 5 minutes.

Into a mixing big bowl add onion mixture, steak potatoes, rutabaga, Montreal steak spice and salt. Mix everything up. Then add flour and mix with a spoon until combined.

Cornish Pasty Filling

Preheat the oven to 375F and line baking sheet with parchment paper.  Divide the dough into 6 equal pieces (when working with one piece of dough cover the rest with plastic wrap).  Take one piece of the dough and place it onto a floured surface, sprinkle a little flour over the top and roll it into a big oval or circle shape, about 1/8 thick. ADD 1 CUP OF FILLING.

Fold the side of the dough over the filling forming a half-moon shape, using a fork press the edges to seal.  Using a knife, make a cut over the top about 1 inch long. Then place pasty onto a baking sheet. Repeat with the rest of the dough pieces.

Now, mix 2 teaspoon of water with 1 egg yolk and brush it over each pasty.

Bake for 25 minutes, after divide 2 tablespoons of butter between 6 pasties and add it to the hole on top. Return back into the oven for 20 more minutes, or until pasties are golden color. Let cool on a wire rack for 5-10 minutes. Enjoy while warm.
