I made these for our Christmas party amongst other treats, and these were the biggest hit. Super simple and super good. They taste like Reese Peanut Butter cups :)

This was a huge hit at our Thanksgiving get together. I did substitute the maple syrup with vanilla because that was what I had on hand. And I did dip them in dark chocolate. I've made several batches since then, they are in the freezer and ready to go for our work potluck and for Christmas.

Just made these over the weekend - they were SO good. The inside was a bit crumbly though - any tips on what to do to fix that?

Let It Snow Peanut Butter Snowballs!

These simple peanut butter snowballs combine graham crackers, peanut butter and powdered sugar in a delicious treat that’s dipped in white chocolate for the ultimate holiday goodie. 

sugar

unsalted butter (melted)

graham cracker crumbs

tsp vanilla extract

white chocolate melting wafers

sprinkles (optional)

Melt your butter then combine it with the peanut butter and vanilla in a large bowl.

Add the powdered sugar and graham cracker crumbs then beat again until they are well mixed into the peanut butter mix.

Cover the entire bowl with saran wrap and place it in the refrigerator to chill for at least 30 minutes.

Once chilled, remove from the fridge and scoop out portions using a small cookie scoop or a tablespoon and roll into balls. Continue rolling until all of the dough has been formed into balls.

Place the balls on a parchment lined baking sheet, cover with saran wrap, and place in the freezer for at least an hour, ideally overnight.

Place a cooling rack on a cookie sheet or line it with wax or parchment paper.

Melt the white chocolate melting wafers either in the microwave in a microwave safe bowl at 30 second increments or on the stove using a double boiler. Melt until chocolate is completely smooth.

Use a fork and carefully dip the peanut butter balls into the melted chocolate – make sure to work quickly so the balls don’t get too soft!

Place the dipped balls onto parchment paper then immediately sprinkle with sprinkles if you’re using them so the chocolate doesn’t harden before you can add them.

Spruce up your Christmas dessert tray with these adorable and festive Peanut Butter Snowballs! These no-bake truffles are made with creamy peanut butter and graham cracker crumbs in white candy coating and holiday sprinkles for wonderful treat this holiday season!

In a large mixing bowl, mix together the peanut butter,  butter, and vanilla extract until combined well. (you an also use the bowl of a stand mixer fitted with the paddle attachment).

Then add the powdered sugar and graham cracker crumbs and stir until blended well.

Line a baking sheet with parchment paper. Scoop out 1 tablespoon scoops and roll them into smooth balls.

Place them on the baking sheet and place them in the refrigerator for 30 minutes to chill.

Place the white chocolate bark in a microwave safe bowl and heat for 30 seconds. Then stir and repeat again. If needed, repeat one more time then remove at stir until melted completely.

Dip the chilled peanut butter balls into the melted white chocolate one at a time use a fork or toothpick. Lift the truffle out of the white chocolate and tap on the side of the bowl to allow excess white chocolate to drip off.

Place the ball back onto the baking sheet and repeat with the remaining truffles.

To decorate the snowballs, place the remaining white chocolate into a plastic baggie or piping bag and cut off the corner. Drizzle over the truffles and then top with festive sprinkles.

Place back in the refrigerator for at least 15 minutes to set.

Peanut Butter Snowballs are a no-bake peanut butter candy with crunchy graham crackers and covered in decadent white chocolate coating that is decorated with Christmas-colored sprinkles. These make a wonderful holiday sweet treat!

Cup Ghirardelli's white chocolate melting wafers

Sprinkles (for garnish)

Combine the peanut butter, butter, and vanilla extract in a large mixing bowl. Using a hand mixer, beat until well combined.

Beat in the powdered sugar and graham cracker crumbs.

Cover with saran wrap and place in the refrigerator for 30 minutes.

Remove from the refrigerator and scoop small Tablespoon size portions and roll into balls.

Repeat until all the dough has been made into balls.

Cover with seran wrap and place into the freezer for 1 hour or overnight.

Place the melting chocolate in a microwave safe bowl and place in the microwave for 30 seconds, remove and stir if needed, repeat until the chocolate is melted and smooth.

Place a cooling rack on a cookie sheet, or line wax paper.

Use a fork and carefully dip each peanut butter ball into the melted chocolate, working quickly so the balls don't get too soft. Place onto parchment paper.

Sprinkle with the sprinkles as you go along so the chocolate doesn't harden.

Let harden before serving.
