This pineapple sunshine cake couldn&#039;t be easier to make. It&#039;s essentially just a yellow cake mix that&#039;s infused with crushed pineapple and its juices. Perfect for potlucks and summer parties!

Pineapple Sunshine Cake

eggs

pineapple (with juice, 1 can)

vegetable oil

yellow cake mix

pineapple (1 can)

whipped cream (like Cool whip

vanilla

Preheat the oven to 350F. Spray the inside of a 9 by 13-inch baking dish with nonstick spray.

Add the eggs, pineapple with juice, and oil to a large bowl, and whisk to combine. Then whisk in the yellow cake mix.

Pour the batter into the prepared dish and spread it out evenly.

Bake until the cake is golden and a toothpick inserted in the center comes out clean, about 25 to 35 minutes.

Let the cake cool completely before frosting, about 1 hour.

Once the cake is cooled, make the frosting.

Strain the crushed pineapple. Reserve the juice for the frosting and the crushed pineapple for topping.

Add the pineapple juice, whipped cream, and dry vanilla pudding mix to a large bowl. Whisk or beat to combine.

Immediately spread the frosting evenly on the cooled cake. Sprinkle the crushed pineapple on top.

Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.

In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.

Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.

In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice. Spread over the top of cooled cake. Enjoy!

(16-ounce) container frozen whipped topping, (thawed)

(15-ounce can) pineapple tidbits (drained)

Preheat oven to 350 degrees. Spray a 9X13 inch baking dish with nonstick cooking spray and set aside.

In a medium mixing bowl, mix together the cake mix, canned crushed pineapple with the juice of ONE can, eggs, sugar, vegetable oil, and vanilla and mix with a hand-held electric mixer for 2 minutes.

Pour the batter into prepared baking dish and bake in preheated oven until a toothpick inserted in the center comes out clean, about 40 minutes.

Cool, the cake in the pan, set on a wire baking rack, until completely cooled.

Cake:

In a medium bowl combine the well-drained crushed pineapple and the pudding mix until the pineapple is evenly coated with the mix. Let mixture sit for 2 minutes 

Fold in the thawed whip topping until evenly combined. Spread frosting even over top of the cake and garnish, if desired, with well-drained pineapple tidbits and Maraschino cherries.
