desiree potatoes, peeled,

(150 grams) plain flour

300 g pappardelle pasta

burrata cheese ball

pistachios (for garnish)

Bring a large pot of salted water to a boil. Cook the pappardelle according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.

In a blender or food processor, combine basil, pistachios, garlic, Parmesan, olive oil, lemon juice, salt, and pepper. Blend until smooth and creamy.

Toss the hot pasta with the pistachio pesto. Add a little reserved pasta water to loosen the sauce.

Twirl the pesto-coated pappardelle into a serving bowl or plate.

Place a fresh burrata ball right in the center so it slowly melts into the warm pasta.

Sprinkle chopped pistachios on top, drizzle olive oil, and add a pinch of lemon zest for a bright finish.
