Pasta Salad with Pepperoni

oz Tri Colored Rotini Pasta

Cups Water

oz Mini Pepperoni

oz Sliced Olives

Cup Cherry Tomatoes ~ Sliced

Cup Mozzarella Pearls

Cup Parmesan Cheese

Italian Dressing

Instant Pot Directions:

Place water and Tri Colored Rotini in Instant Pot.  Set to Manual (Pressure Cook) High for 3 mins with a 3 minute natural release

Rinse Pasta under cold water and place in the refrigerator for 30-45 mins

In a separate large bowl Combine cooked cooled pasta, Pepperoni,  sliced Tomatoes, Olives, Mozzarella Pearls, and grated Parmesan Cheese.  Toss to combine

Pour Italian Dressing over top just before serving, and toss so everything is coated.

Store in Refrigerator until ready to eat.  Leftovers can be kept in a sealed container in the refrigerator.

mozzarella cheese (, cubed)

cherry tomatoes (, quartered)

green bell pepper (, seeded, chopped)

can Sliced olives (, drained)

red onion (, diced)

peppers

parmesan cheese

olive oil

red wine vinegar

oregano leaves

garlic (, minced)

salt and black pepper (, to taste)

Cook pasta in a large pot of boiling water, according to package instructions, until tender.&nbsp;Drain pasta and rinse well with cold water.

Mix dressing ingredients together and pour half of the dressing over the pasta. Toss to coat.&nbsp;

Add remaining ingredients and toss to combine. Add a little more dressing, to your liking (you may not want to use it all).&nbsp;

Refrigerate until ready to serve. Stir again before serving.

mozzarella cheese (, diced)

Parmesan cheese

pepperoni (, chopped)

Roma tomatoes (, diced (or equivalent cherry tomatoes, halved))

red bell pepper

black olives (, drained)

parsley

red onions

green onions (, chopped)

pickled pepperoncini ((optional))

jalapenos ((optional,

For the Italian Dressing:

extra virgin olive oil

water

garlic (, smashed and finely minced)

salt

sugar

black pepper

onion powder

garlic powder

oregano ((or 3/4 teaspoon dried))

rosemary ((or 3/4 teaspoon dried))

thyme ((or 3/4 teaspoon dried))

basil ((or 3/4 teaspoon dried))

Placed the pasta in a large mixing bowl. Add all the remaining pasta salad ingredients.Prepare the Italian dressing by placing all the ingredients in a bowl or shaker and whisking/shaking until emulsified. Pour the vinaigrette over the pasta salad and stir everything until combined and the pasta salad is coated with the vinaigrette.Cover and refrigerate for at least 3 hours or overnight before serving and then stir it again.
