Malt vinegar, use enough to almost cover vegetables

Mix chopped vegetables with salt and leave overnight in fridge, or for at least 8 hours.

Drain off brine. Put vegetables, sugar, allspice and pepper in saucepan. Pour in enough vinegar to almost cover. Boil for 30 minutes.

Mix turmeric, mustard, cornflour and cayenne pepper to a paste with a little water and stir into mixture to thicken. Boil another 5 minutes. Bottle in hot sterilised jars.

Preheat oven to 200C. Position oven rack in top third of oven. Prepare oven tray by either lightly greasing or dusting with flour.

Sift flour, baking powder and salt into a bowl and stir in sugar.

Put butter in a measuring cup and melt in microwave. Add milk to make up to the 1 cup measure.

Tip into dry ingredients and quickly stir to combine to get a soft, slightly tacky dough. It may be necessary to add a little more milk.

Turn onto a lightly floured surface and draw together to form an even block. Pat out to about 2-2 ½ cm thick piece. Flour the knife and cut into even-sized scones.

Place close together on prepared tray. Bake about 12 minutes until risen and golden. Remove from tray onto a wire rack or into a cloth.

Brown Butter Banana Bread Recipe

unsalted butter

all-purpose flour

baking soda

cinnamon

brown sugar

eggs

bananas (about 3 large ripe bananas)

vanilla extract

Preheat the oven to 350 F and grease a 9x5-inch loaf pan with nonstick spray.

Melt the butter in a frying pan on medium-low, then continue to cook, stirring occasionally, for about 5 minutes, or until the butter becomes brown in color and smells nutty. Remove it from heat at that point.

Combine the flour, baking soda, salt, cinnamon, and nutmeg in a bowl.

Beat the eggs, sour cream, bananas, and vanilla into the butter/sugar mixture.

Beat the wet ingredients together with the dry ones until just combined.

Pour the batter into the prepared loaf pan and bake for 55 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

Let the banana bread cool before slicing.

Simple Mac And Cheese (With Crunchy Topping) Recipe

elbow macaroni

sharp cheddar cheese, grated (about 4½ cups)

butter crackers, crushed

unsalted butter, melted

Heat the oven to 350 F. Grease a casserole pan and set it aside.

Cook 1 pound elbow macaroni in a large pot of salted water until al dente. Drain and set aside.

Melt 3 tablespoons unsalted butter in a large saucepan over medium heat. Stir in ¼ cup flour and mix constantly for 3 minutes

Add 3 cups milk and bring it to a simmer. Simmer for about 5 minutes, until thickened. Add 1 teaspoon salt, 1 teaspoon black pepper, and ¾ of the cheese. Add the cooked macaroni and mix well.

Transfer the mac and cheese to a casserole dish. Top with the remaining cheese.

Combine 2 cups butter crackers and 2 tablespoons unsalted, melted butter. Top the mac and cheese with the crackers.

Easily make pillowy soft naan bread with this plain, butter, and garlic naan recipe.

Plain, Butter and Garlic naan recipe

dry yeast

Warm 1/4 cup water for about 15 seconds in a microwave. The water temperature should be between 105o F and 110o F for proofing.

Add water to the yeast along with 1 teaspoon sugar to the bowl of a stand mixer.

Wait for the yeast to double in volume and become frothy (took around 10-15 minutes).

Proof the yeast

Add flour, yogurt, salt, sugar, and milk to the proofed yeast.

Using the dough attachment, combine the ingredients at low speed till it forms a dough. This step takes around 6-8 minutes. If you are not using a stand mixer, knead it by hand for a good 8-10 minutes.

 The texture of the dough should be softer than the dough you make for chapati or roti atta. Make sure it is not very sticky. 

Add a tablespoon of oil and knead it for a minute or two.

Grease a deep bowl and place the dough in it.

Lift the dough and place it back again the other way round so that both sides are oiled.

Cover the mixing bowl with plastic wrap and let the dough rise and let it rest for an hour. It might take up to 2 hours depending on the weather. The dough should double in size by then. If it has not, give it 30 more minutes. [For best results - Use Instant Pot - see notes]

Making the dough

Once the dough is ready, knead it for 2-3 minutes and then divide the dough into 12 pieces ( I eye-balled it).

Shape them into a ball. Flatten the ball and roll it out using a rolling pin to an oblong shape using as little flour as possible.

Making naan

If making garlic naan, heat butter till it is fully melted. Add minced garlic to the butter and mix well.

Using a pastry brush, spread this garlic butter mixture on the naan. Sprinkle kalonji along with finely chopped cilantro.

Using your fingers gently press on the garlic and kalonji till it gets embedded in the rolled naan.

To make garlic naan

Heat a cast-iron pan over high heat. Place the rolled out naan in the hot pan.

Cook the naan till small bumps start to form on the surface (approximately 1-2 minutes).

Flip the naan to the other side and cook for 10 seconds or so until you see bumps. Your plain naan is ready.

To make butter naan, brush the naan with butter and for garlic naan, slather the naan with the garlic + butter mixture.

Set it aside. Repeat the process for the rest of the dough.

Serve it warm with vegetable or chicken curry.

I have tried 4 other Naan recipes and this is the keeper!!!!  Thank you so much for the recipe.
Note - I was out of plain yogurt, I used cottage cheese (small curd) as a substitute and it turned out great!!
