A quick and easy appetizer using store-bought naan or flatbread, topped with ricotta and cranberry pomegranate salsa.

Ricotta Flatbread with Pomegranate Salsa

pomegranate seeds

cranberries (roughly chopped)

shallot (finely chopped)

olive oil

balsamic vinegar

honey

parsley

orange

salt

oval prebaked flatbread (such as naan or pocketless pita)

Bel Gioioso Ricotta con Latte or whole milk ricotta cheese

baby arugula

Combine pomegranate seeds, cranberries, shallot, oil, vinegar, honey, parsley, orange zest and salt in a bowl.

Place flatbread on a preheated grill rack or baking stone in a 450 (230C) degree oven. Toast until warm and edges are lightly brown, 5-10 minutes.

Spoon ricotta over warm flatbread and spread lightly. Arrange arugula over ricotta and cut the naan into serving pieces. Top each slice with salsa.

This maple-glazed salmon with pomegranate salsa is the perfect midweek meal. The salmon is coated in a sticky spiced glaze and the pomegranate salsa adds a punchy tang and sweetness to the dish.

This bright, fresh and festive pomegranate salsa makes a wonderful holiday appetizer or seasonal addition to cooked meat, fish or tacos!

Pomegranate Salsa

pomegranate arils (from about 2 pomegranates)

cucumber

red onion

jalapeño,

cilantro and mint leaves, minced

juice of 1/2 a lime

extra virgin olive oil

raw honey

salt and pepper

Combine the pomegranate, cucumber, red onion, jalapeño, cilantro...

Combine the pomegranate, cucumber, red onion, jalapeño, cilantro and mint in a large bowl.

Whisk the lime juice, olive oil and honey...

Whisk the lime juice, olive oil and honey together in a separate small bowl.

Pour the honey lime dressing over the salsa...

Pour the honey lime dressing over the salsa and gently toss until well combined.

Season with salt and pepper to taste and...

Season with salt and pepper to taste and serve.

This pomegranate salsa recipe is bursting with sweet-and-spicy flavor. It's a fun holiday appetizer or special wintertime snack. Serve it on its own with tortilla chips, or with whipped goat cheese for a creamy base that goes well with crostini or toasted pita. Recipe yields 8 appetizer servings.

small-to-medium garlic clove

To prepare the salsa, combine all of the ingredients in a bowl and gently stir until combined. Taste, and add a little more salt if desired. 

To prepare the optional whipped goat cheese, combine all of the ingredients in the bowl of a food processor. Process until the mixture is absolutely smooth and creamy, which could take a couple of minutes, pausing to scrape down the sides of the bowl as necessary. 

To serve, use the salsa as-is, or spread the whipped goat cheese into the base of a wide, shallow bowl. Spoon all of the salsa around the perimeter of the bowl. Serve promptly. Leftovers will keep for up to 5 days (the whipped goat cheese will need to warm back to room temperature to spread easily).
